頂呱呱採用CAS台灣產的生鮮雞肉，嚴守新鮮雞肉黃金72小時，屠宰後約72小時的黃金賞味期內，送至消費者手中。撕開雞肉，肉質纖維較細緻，口感柔嫩多汁，並帶有一點清甜的香氣，搭配獨門配方單層裹粉不添加厚重麵衣，恆溫烹炸釋放多餘油脂，鎖住雞肉原汁鮮甜。地瓜由台南新化鎮農會食用甘藷產銷班提供，有生產履歷驗證通過。
呱呱包是頂呱呱的明星商品，雞皮包裹油飯再油炸，雞皮脆、油飯香，油飯裏有香菇，還用油蔥炒過，很好吃！地瓜薯條有地瓜自然的甘甜，現點現炸、香熱鬆軟，如果能再附上一包梅子粉就會更加美味！不論是原味雞塊、小雞腿，醬色外皮看起來老，但雞肉是嫩的，雞味很足！
頂呱呱創辦人史桂丁先生最早是一名公務員，某日與太太前往老師家中做客，並參觀了老師家裡養雞的後院，與老師聊天起才知道原來養雞有這麼多小秘訣，老師的隨口一問：「你們想試試看嗎？」，夫人心想：「好啊！不然就試試看！養雞嘛，有這麼難嗎？」事實上，的確不簡單…剛開始養的時候，確實很順利，但在當時的雞種多來自日本，這種雞隻多為民間後院飼養，未經基因改良生產加上近親配種衰退，雖然可以適應台灣風土環境，卻喪失生產效率且容易生病。看著辛苦養的雞陸續生病，史桂丁先生心想「要做就要做到位，做對的事情比把事情做對更重要」，因此辭去公務員的工作，專心養雞。為此還與幾位友人一同前往法國尋找雞種回來配對(即法國雞種『黑全』)，希望能改良台灣雞基因，爾後台灣也出現了第一批有色雞。飼養雞隻期間，當然有遇到重大挫折！在民國 50 年期間台北城大淹水造成了不小損失，養雞設備與心血付之一炬，於是史桂丁先生決定將養雞場遷徙至雲林一帶，除了可以給雞隻更好的環境外，在養雞盛行的當時，也藉此機會擴大雞廠設備與條件。在民國 52 年期間，因為飼養白肉雞利潤很高，許多農家也轉型改養雞。隨著飼養規模擴大，加上農民們追求利潤也急於吸收新知改進飼養技術，因此沒過多久台灣雞隻市場開始出現供過於求的壓力。1971年因台灣雞隻供過於求，創辦人開始思考如何更妥善利用這些雞隻，不要浪費了上天給予的禮物。當時美國正流行炸雞，於是創辦人特地派人前往美國學習最新的炸雞技術，利用壓力鍋恆溫烹煮炸雞，可釋放出多餘油脂，又能鎖住雞肉原汁的鮮甜。1974 年 7 月 20 日創辦人於當時台北市最熱鬧的西門町開立了全台第一家頂呱呱門市，在當時也引起了一陣風潮，以西方炸雞技術搭配頂呱呱獨家配方醃製雞肉，成為台灣第一家本土連鎖速食業者，最在地的台灣味炸雞由此而生，並訂立每年7月20為頂呱呱品牌日，舉辦活動回饋顧客。(摘錄自頂呱呱官網)。
比起市售美式或義式炸雞，號稱台式炸雞的頂呱呱，只有薄薄一層酥炸皮、外觀顏色偏深，口味上多了一股胡椒香氣，在同質產品中辨識度極高。本土連鎖速食店始祖頂呱呱國際公司總經理史洪法表示，同樣克數的雞肉，美式炸雞因裹上較厚的麵衣，看起來大塊又美觀，「我們不用那麼多麵粉，產品看起來比較扁，但我很驕傲的說，一樣的雞肉放在鍋裡去炸，我們的油是越炸越多，人家是越炸油越少，都吸進麵衣，哪個比較好？聰明的消費者自己去判斷。」早在1971年，父親史桂丁就赴美學習用壓力鍋恆溫炸雞技術，並在姐姐史佩玲的陪同下，前往芝加哥炸雞粉工廠，調配專屬炸雞粉。門市會依循雞肉部位採取不同操作方法，史洪法透露，胸肉為鎖住雞汁水份得蓋鍋炸，腿肉可開蓋炸，增加表皮酥脆度。基於要讓消費者品嘗雞肉原汁原味考量，頂呱呱炸雞43年來堅持只裹上薄薄一層麵衣，除此之外，因應台式口味偏好胡椒香氣，加入現磨黑胡椒粒醃漬，這也是造成頂呱呱炸雞顏色較深的關鍵原因，絕非謠傳使用回鍋油之故。
不少行家會沾黑胡椒提升炸雞香氣，網路上甚至有家庭主婦大讚頂呱呱的黑胡椒包，特別適合拿來炒青菜。對此，史洪法又好氣又笑，他說：「市售胡椒包很多摻鹽巴、摻白胡椒降低成本，我都買進口胡椒粒，自己磨自己包，不怕被人偷工減料，貨真價實當然好吃！」頂呱呱身為本土連鎖速食店始祖，除炸雞粉與可口可樂得靠進口外，其餘食材都取自本土，明星產品呱呱包的誕生，是因早期門市有賣炸雞脖子，因客人反應不愛雞皮，顧問建議將取下的雞皮包餡酥炸，史桂丁向南部粽子名店採購配方，再經口味改良，意外大受歡迎，地瓜薯條也由瓜瓜園代工。(摘錄自鏡周刊)。

We made our way via train to the city of Kaohsiung.
Background:
Located in southern-western Taiwan and facing the Taiwan Strait, it is by area the largest municipality, at 2,951.85 km2 (1,139.72 sq mi), and second most populous (by urban area) with a population of approximately 2.77 million. Since its start in the 17th century, Kaohsiung has grown from a small trading village, into the political, economic, transportation, manufacturing, refining, shipbuilding, and industrial center of southern Taiwan.

This is a musical tour of the city with pictures of some of the following sites----------
=Lotus Lake/Lotus Pond, the lake is surrounded by temples, some of which have been built out onto the lake. Of note are the Dragon-Tiger Pavilion and Spring Autumn Pavilion, as well as Taiwan's largest Confucius temple. During the day the lake is surrounded with stalls selling food, drinks and trinkets.
=The arts center was originally an abandoned warehouse site due to Kaohsiung's shift from industrial city to service city. The warehouses were built in 1973. Due to the persistence of local artists, the area was finally released and remade to be an arts center. On the weekend the rent kites to fly by the hour.
=The British Consulate at Takao is a former British consulate built in 1865.

Day 10! Kaohsiung lazy day ????
Spent the day exploring the city. Ate $4 hot pot (and it was FANTASTIC).
We went to the Banana Pier and walked along the Love River, eventually running into the Pier-2 Art Center. Lots of cool sculptures and Beautiful Macaws!
We walked doing that seeing all sorts of art. We also saw parts of the Hamasen Museum of Taiwan Railway and beautiful park.
Then we went to Riufeng Night Market and ate all sorts of amazing. Including Stinky Tofu!!
Another great fun day. :D
