Highland Park Single Malt Scotch Whisky distilled in the Kirkwall Distillery, Orkney Islands, Scotland. Highland Park Distillery is a single malt whisky distillery located in Kirkwall, the largest town and capital of the Orkney Islands, situated north of mainland Scotland. The distillery was founded in 1788 by Magnus Eunson, a direct descendant of the Vikings, who set up an illicit still in a bothy at High Park, where the name Highland Park is derived, and became the site of today’s distillery. Uniquely, Highland Park uses 5 keystones in the production of its single malts: Aromatic Peat Hobbister Moor; Hand Turned Floor Maltings; Sherry Oak Casks; Cool Maturation; and Cask Harmonisation. The Highland Park range is extensive including: 10 Year Old; 12 Year Old; 18 Year Old; 25 Year Old; 30 Year Old; 40 Year Old; and 50 year old, the oldest and most prestigious release. Highland Park also produces special releases and limited editions in its Heroes range with whisky names recognising Orkney’s viking past such as: Magnus; Viking Tribe; Dragon Legend; Valkyrie; Valknut; Voyage of the Raven; Sigurd; Ragnvald; and Thorfinn. Highland Park connoisseurs will also be attracted to the Orcadian Vintage Series with editions dating from 1964 to 1976. What is the difference between Scotch and Whisky?
whiskey is a distilled spirit that is made from grain
Bourbon, Scotch, and rye are all types of whiskey
It must be produced in Scotland.
It is distilled from a mash of malted barley and other cereal grains.
It must be fermented only by adding yeast.
It must be 90 proof (94.8 percent ABV) or less, with a minimum ABV of 40 percent.
It must be matured in oak casks for at least three years.
The only permitted additives are water and caramel color.
Rules of Scotch Whisky
You may hear pour me a dram, or have a wee dram. What the fuck is that? A dram is actually a unit of measure not often used in the United States. Usually referred to a Small Amount, a US Fluid dram is an eight of a fluid ounce, which is no bigger than a teaspoon and actually smaller.
If you were to order a Dram in a bar, first they may look at you like your an idiot, but really they are the uneducated bartenders. You will probably get a full one ounce glass of whisky or shot. That would be the US though, bigger is better.
What is a dram?
Magnus Eunson (You ‘n son) was a direct descendant of the Vikings who settled on Orkney hundreds of years ago. He set up his illicit still in a bothy (a small stone hut) at High Park, Kirkwall that’s still the site of our distillery today. And, while we say Highland Park was founded in 1798, in truth that’s just the year that the authorities caught up with Magnus – he was certainly making whisky before that!
Another great fact about Magnus is he was a descendant of the vikings. He was a butcher by day, and worked at a church on Sundays, however that second job was REALLY to help him in his Third Job which was secretly making Scotch Delicousness. From what we know, he was not a religous man and only worked at the church for a hiding place for his whisky. This went on “for a long time” and brings us back to yeah, he was making whisky way before he was caught and then was forced to pay for the spirits he produced. I wonder if the whisky changed after that? What would you pay for an Original bottle of Magnus? I sure would like a bottle

A brief hello from the Kirbuster farmhouse on Orkney, the last un-restored example of a traditional ‘firehoose’ in Northern Europe. The house has a central hearth, complete with peat fire, and a stone neuk bed reminiscent of the Neolithic interiors that can be seen at sites such as Skara Brae, Orkney. Kirbuster was occupied up until the 1960s.
Review - Highland Park, Dark Origins Whisky
Today we review Highland Park’s Dark Origins
Dark Origins harks back to Highland Park's own 'dark origins' - I believe the hooded chap on the front of the bottle is Magnus ‘Mansie’ Eunson - Highland Park's founder. He was, amongst other things, a smuggler of whisky - not a monk, scally or that stabby guy from Assassin's Creed.
And no, there's no age statement on this one but it definitely tastes (and weighs in pricewise) like a nicely aged teenage whisky. ABV clocks in at 46.8% so it's got a bit more of a 'kick' than the regular, though tastewise, this is well disguised in the overall well designed balance of flavours.
Asides from the occult branding, the angle is that it uses double the amount of first fill sherry casks.
This means that the Dark Origins is the first whisky that goes into these casks after they've stopped being used for sherry. Such 'virgin' casks are rarer and impart more flavour, thus adding an element of exclusivity (and more pronounced taste) to this whisky.
Ergo: Using double the amount to normal should mean improved taste in the same amount of time spent aging. Should.

The pagodas that adorn the roofs of many whisky distilleries in Scotland aren't there just for show. Years ago, those pagodas reeked with smoke as distillers dried the malted barley they produced on their malting floors. Economics forced all but a handful of distilleries to shut down their maltings many years ago and source their malted barley from large commercial maltings. However, a handful of Scotland's distilleries still malt some of their own barley because they believe it makes a difference in their whisky. We'll visit the malting floors and smoky peat-fired kilns at Orkney's Highland Park Distillery, where they malt peated barley for use in their single malt Scotch whiskies.
