Gourmet & Co. and Anson Mills
We are committed to celebrating Southern foodways. In addition to local produce we utilize grains historically unique to the South. Anson Mills has been instrumental in rescuing varietals nearly lost to history. While there are more cost effective ingredients available to us, our commitment to Southern heritage and authenticity doesn't allow substitutes.
Farro
The Farro Chef John is using in his vegetarian Jilton is associated with now extinct ancient Italian varieties. The first Charleston rice farmers were Italian, and it was these Italian rice farmers who brought farro—tough, persistent, and barely removed from its wild counterpart—to Charleston for winter cover cropping in the new rice fields.
Carolina Gold
Currently utilized in Chef John’s Korean BBQ Dry-Aged Beef Kabobs, Carolina Gold rice first surfaced in South Carolina just after the Revolution. Clean, sweet, and non-aromatic, it prospered in coastal Carolina.
The Civil War brought the culture and cuisine of Charleston to its knees, and though Carolina Gold continued to set quality standards for American rice into the 20th century, it ultimately lost ground to new varieties and became, virtually extinct after the Great Depression. In the mid-1980s, a plantation owner from Savannah collected stores of Carolina Gold from a United States Department of Agriculture (USDA) seed bank and repatriated the rice to its former home along the coastal wetlands south of Charleston. Anson Mills began growing heirloom Carolina Gold for research in 1998 and today has organic rice fields in Georgia, North and South Carolina, and Texas.
Jimmy Red Corn
Chef John is currently using Jimmy Red Cornmeal to make his Sweet Corn Johnnycakes served with his Wood Grilled Double Cut Heritage Breed Pork Chop. Jimmy Red was at one time popular among farmers and moonshiners, but it was nearly lost to history. If it wasn’t for the quick thinking of South Carolina farmer and seed saver Ted Chewning, the heritage corn wouldn’t exist today. Chewning saved two ears of Jimmy Red from the last bootlegger who was known for growing it. This amazing corn is thankfully enjoying a renaissance in Southern cuisine.
