This is a short reel of some of my favorite places from our week in Iceland in April, 2016.

Icelandic East fjords propose you mesmerising mix of mountains, fjords, waterfalls and wildlife, the East Fjords are scattered with idyllic fishing villages, while routes north and south connect you easily to Icelandic icons like the glacial lagoon and Myvatn's volcanic wonders. Perfect for 'slow travel', the East Fjords offer an authentic Icelandic experience, a chance to meet the locals and discover a less-visited side of the country.
During the road trip we also met Icelandic horses that made us laugh.The Icelandic horse is a breed of horse developed in Iceland. Although the horses are small, at times pony-sized, most registries for the Icelandic refer to it as a horse. Icelandic horses are long-lived and hardy.
The trip ends in Hofn, blooming city close to the biggest glacier in Europe, Vatnajökull in the south eastern part of Iceland.n this region you are located at the base of Vatnajökull, and the scenery is breathtaking. Vatnajökull National Park, the largest national park in Europe, is situated in the community. In the last few decades tourism has grown enormously and has, in fact, become a major economic sector in the community. Höfn's growth in the 20th century from a small village to today's town was a result of the development of a relatively diverse fishing industry. The landed catch is now more varied than in other fishing towns, including high-value species such as the Norway lobster (Nephrops norvegicus), but a good part of the Icelandic lobster catch is landed at Höfn.

Höfn in Hornafjörður is often called The lobster capital of Iceland. Here you can be sure of delicious courses with lobster and langustine. And Jón Sölvi, one of the chefs from Höfn has produced fish stock from the excellent lobster and other fish from Höfn, which you can now buy in stores around the country. So now you can make a gourmet soup yourself whether at home or on a trip in the country side.

Winter '16 // Iceland PART 3: Finding Stokksness
Vatnajokull National Park is home to Iceland's biggest glacier, forming glaciers caves in the process.
Most glacier caves are started by water running through or under the glacier. This water often originates on the glacier’s surface through melting, entering the ice at a moulin and exiting at the glacier’s snout at base level.
With some advice from our guide, we managed to find a perfect spot to catch the aurora borealis for the night - Stokksness. Just about a 15 minutes drive from our Hofn Hostel.

Hey guys! i hope you enjoyed this MOMENTS in ICELAND video! Vik is located about 2 hours southeast of Reykjavik (the capital of iceland). This was one of my favorite places in iceland! Theres tons of puffins to see and places to eat them as well! haha but also theres the famous black sand beach (which isn't really sand, its actually rocks) and the balsalt columns which can be seen in other places in iceland but still very very cool.

Matís - Höfn in Hornafjörður in Southeast Iceland
Matis ltd. - a dynamic Icelandic Food and Biotech R&D Company
Matís is an independent research institute which strives toward innovation in the food industry, biotechnology and food security. Matís provides consultancy and services to companies in fisheries and agriculture as well as governmental agencies. As an example, Matís develops new products and processes for businesses and plays an important role regarding the quality and safety of the Icelandic food supply.
The Matís Food Innovation Centre (Matarsmiðjan) in Hornafjörður was established 2008 on the south-east coast of Iceland closely connected to the fishing industry. The aim of the center is divided in two main aspects 1) access to know-how and 2) access to equipment. Such food innovation centers are build up so innovators can start production without facing high startup cost in machines and complicated laws and regulation. This ensures more streamlined R&D process reducing the cost and risk. Using such center entrepreneurs can also initiated small scale pilot products to test response of the market.
After product development in the innovation center the entrepreneur can either start his own production line or use the food innovation center for production based on co-packing agreement. That could be ideal for small startup companies that may even only produce food items over a short period every year. Based on the concept described above Matis operates a small scale food innovation center in a Hornafjordur.
The facility was designed to allow entrepreneurs and small food companies to go through the R&D process for new food products. The center has equipment and technical expertise for developing and initiating production and distribution for small scale producers. The center gives our clients the chance to develop the widest range of food products as it is well equipped. It e.g. has a freeze drier, smoke oven and climate controlled drying room.

This resipe is from a well known chef in Höfn in Hornafjörður Halldór has written a cookbook and he is famous for many of his courses, mainly made with langustines which Höfn in Hornafjörður is famous for. Here is a very easy recipe from Halldór from his cookbook. A delicious pesto sauce made with wild sorrell picked from the mountains around Höfn. Very easy to make and very good both on bread and pasta and chicken.
