In one of my trips to the Gambia, I had the privilege of meeting an incredible woman; Ida Cham Njie, - She is a terrific cook who cook with serious love and passion.
Ida is like the face of tourism in the Gambia and runs a cooking excursion known, as Yabouy Home cooking. This motherly host opens her home and heart to tourists interested in having a real authentic Gambian experience by way of learning how to cook traditional Gambian food in a traditional way; shares her culture and its culinary traditions with them through her cooking class, while exchanging cultural values.
I was invited to participate in one her cooking classes at her home and it was a wonderful and a delicious experience for me. We cooked fish yassa…
Upon arriving, you are made to choose and change into a traditional Gambian dress.. (Made by her sister)
Followed by a Visit to tanji market where you'll find everything from fresh farm produce, to seafood;( just anything you want) to buy ingredients for your class. Though I couldn't make it to the market with her as I had an early morning engagement but Robin, (another participant) did and she told me it was quite an exciting experience.
I arrived just few minutes after they had returned from the market.
After I had change, we chopped, sliced, pounded and diced, played games, converse, got acquainted with Gambian flavors and fragrances, and used a traditional metal oven to prepare a meal better than we could have imagined possible and eat together from one plate with her family; very intimate.
It’s one thing to learn about the Gambian culinary culture on YouTube but it's another thing to experience it firsthand.
If you are planning a vacation to the Gambia, this experience is a must have. I highly recommend it and I guarantee it's going to be the best vacation activity you'll have on this tiny west African country.
Named after her mother, Yabouy (Mum) home cooking is like a cooking holiday that will take you to the heart and soul of the Gambian gastronomy and agriculture.

Cooking with Ida and a visit to Tanji fishing village, The Gambia
A visit to Tanji fish market to watch the boats unload and then select the freshest fish. We also pick up all the other ingredients we'll need. Back at Ida's we get busy preparing the vegetables and while lunch is cooking Ida shows Tom how to play wuri. Ida wins!
Lunch is served in a communal bowl and we all tuck in. Delicious flavours melt in the mouth with just the right amount of spiciness. So good!

He are the highlights of the Black and White Safari Gambia Home Cooking Tour - April 16, 2018. We took this tour when the ms Amsterdam moored in Banjul.

This is a unique experience to Black & White Safari, you cannot do this anywhere else!
The day is completely given over to give you the best cooking lesson, enabling you to confidently cook some of our local food when you return home to your own country. The menu varies from meat and fish dishes like Yassa, to Benachin rice. We also make local juices like Baobab and Wonjo juice, which is a dark cranberry-coloured juice, made from boiling the dark red flower from the sorrel plant.
We will take you to a local market, dress in a traditional Gambian outfit and help you shop for food items or you to take home. We will then give you the guidelines on how to cook Gambian cuisine. You will then do the cooking including all the preparation of meats, vegetables, fish and rice. Finally, we sit as a family and friends and devour the meal before returning to the hotel.

Eco-friendly smoke-free Ovens in Jahaly/The Gambia
The Project Aid The Gambia based in Hattingen/Germany is just testing different prototypes of eco-friendly smoke-free ovens made out of mud bricks in the village of Jahaly/The Gambia. Such ovens have many advantages: the use of firewood and the constant eye irritation due to smoke will be drastically reduced, the ovens retain much more heat than the open fires the women traditionally use. The enclosed fire of the ovens will furthermore decrease the number of children who are severly burned each year because they fell into the open cooking fire. Once the prototype has been perfected, Project Aid The Gambia intends to introduce the concept throughout the nation. The total costs for one oven will be less than 10 Euros. - Now (2015) we only use concrete blocks for the ovens. In the meantime we built 150 ovens.

THE GAMBIA: The fascinating FISHING VILLAGE of TANJI (AFRICA) ????????
SUBSCRIBE: - Let's visit Tanji Fishing Village (also spelt Tanjeh or Tanje) which is close to the Atlantic Ocean beach, in the northern section of the Kombo South District, West Coast Region of The Gambia, in West Africa. The settlement is 30km by road from the capital of Banjul, and approximately 12km southwest of Kololi resort, and adjacent to the Kombo Coastal Road. We are going to visit the area directly in front of the fishing village and which is a fish landing site, so it is definitely not suitable for swimming. Because it's a very active, working beach, you'll find it scattered with old, shredded gillnets, sea snail shells, plastic bags and bottles, and other things floating on the water or resting on the shore. The air is filled with the odour of smoked fish; an unimaginable number of seagulls hover overhead looking for scraps, fishermen land their afternoon catch from long African pirogues, passing buckets of catch onto the heads of local women, who then ferry it to the shore. Activity is frenzied and messy, but surprisingly efficient.
The Gambia is a small West African country, bounded by Senegal, with a narrow Atlantic coastline. It's known for its diverse ecosystems around the central Gambia River. Abundant wildlife in its Kiang West National Park and Bao Bolong Wetland Reserve includes monkeys, leopards, hippos, hyenas and rare birds. The capital, Banjul, and nearby Serrekunda offer access to beaches.
