Wines and food of Istria in Croatia w Guido Schwengersbauer
*Come on a wine & food tour with BKWine!* --- Guido Schwengersbauer gives us an introduction to the wines and food of Istria in Croatia:
Istria is a region in northern Croatia on the border to Slovenia, not far from Italy. It is an area known for good food, good wine, olive oil, truffles and a beautiful landscape.
On the wine side, much has happened since 1990, when Yugoslavia disappeared. Earlier it was important to make large quantities of cheap wine. Now there is a new generation of winegrowers, called The Young Wild, with new ideas, new technology, and new skills in how to make quality wine. There has been a revolution in winemaking in Croatia.
There are two genuine, unique, autochthonous grape varieties in Istria: First, malvasia, or malvasia istriana (from Istria), a white grape variety making full-bodied and relatively aromatic white wines, but much more sophisticated than malvasia wines from many other wine regions. The typical red wine is made from a grape variety called teran (a relative to refosk or refosco). It used to give very tannic and heavy wines. Now there are many exciting new wineries making unique high quality wines from this grape with modern winemaking techniques. There are around 40 modern wineries in Istria and everyone is making a lot of experiments.
Gastronomy: Istrian food is based on the special climate and the special temperatures they have (in summer and in winter), and the wind, the Bora. The wind makes it possible to make a lot of dried (not smoked!) meat, sausages, and hams. The Istrian cuisine is a mix of Italian cooking, Austrian and Hungarian traditions, and food from the Balkans. There is also a very traditional Istrian kitchen but with a variety that makes it exciting and that lets you always discover new things.

This was a beautiful day that i spent tasting some fabulous wines at Kozlovic – one of the top wineries in Istria. Kozlovic is a family winery and one of the oldest and most renowned in the region. They are famous for consistently producing some great wines – especially their signature Malvazija.
I tasted five wines on this day, each one unique with their own individual personality. If you are a wine lover, go visit this winery, I promise you will love the journey.

Istrian Malvasia: A guide to the native variety from Istria, Croatia, with Dimitri Brečević
Dimitri Brečević discusses Istrian Malvasia with in this vineyard interview from Clai d.o.o. One of the most important native grapes in Croatia, the Malvasia from Istria is unique in form and flavour, and requires a certain style of maceration according to Dimitri. Transcript:
The terroir is very specific to our area here, which is white clay, on white stone. We get this very interesting minerality into Malvasia. It is 100% Malvasia in the vineyard, which is the main grape here in Istria.
And tell us about the Istrian Malvasia, because it's slightly different to...
So, Istrian Malvasia is an interesting grape but in the same way it is a tricky grape. You know? Because, it makes pretty aromatic wines, pretty powerful wine, like style wine you know, pretty high structure, but the only thing is that this kind of grape if you want to make it in a natural way - which is our kind of vinification, we make natural wines - it needs to be macerated. So, it's famous name is now what we call orange wine, so an orange wine is actually a white wine made with skin contact maceration. It's a traditional way to make this fermentation here in Istria, it was always done like that. It is a little bit lost now because people want to go in the modern way because they want to use enzymes and yeast and this and that, you know? To press it correctly and ferment it correctly... We don't use anything of that. That's why we need to make this old school fermentation with maceration. So this kind of vinification is really, really adapted to Malvasia. It makes very rich and very powerful wine.
And so, in terms of the properties of the grape, when you are doing a skin fermentation of Malvasia, how does it work? In the thickness of the skins, the aromatic properties?
It has very, very thick skin and it is very, very high viscosity (I don't know if you can say this word actually?) We can see, if we press the grape, you see that the main part of the juice stays in the meat of the grape (- I don't know - ) that's why the maceration is really important because the work of the enzymes, the natural enzymes which are on the skin of the grape, after the work of the yeast, will completely destroy the structure of the flesh and will deliver some of the juice. So that's why the maceration is very important with Malvasia, because if you just press it as a normal grape - let's say Chardonnay or Sauvignon, or whatever - just press it, you need to press for hours and hours and hours, if you want to get this normal 60-65% of juice, you know? So that's why the maceration is definitely adapted to this variety.

10 things to do in Rovinj, Croatia Travel Guide | Rovigno Day Trip from Pula Transcript:
Today we are heading on a day trip. How exciting. Yes. So we've been based in Pula for a little while. Yep. And today we are going to Rovinj (Rovigno). It is only like 30 or 40 minutes away by bus. Yeah. So it is going to make for an awesome day trip. We've basically scheduled the whole day in Rovinj. We are leaving in the morning and we're probably going to come back after sunset.
After eating breakfast, we decided to do a little bit of exploring along the waterfront. We walked the full length of the marina stopping to take photos of the brightly painted buildings with matching window shutters, plus rows and rows of boats. Then once we reached the end, we were treated to these postcard-perfect shots of Rovinj from a distance.
A fun fact about Rovinj: though it’s now connected to the mainland, this once used to be an island. It was connected in 1763 as part of a land reclamation project under the Venetian Empire, which also explains why certain parts of the city may remind you of Venice.
After wandering around for a few hours, it was finally time for lunch, so we returned to the waterfront looking for a seaside restaurant.
Audrey had the shrimp risotto, I had shrimp pizza, and yes, we both shared with the cats, who had learned to swat if you approached empty-handed.
Atop the hill, we reached St. Euphemia’s Church. If you’re feeling particularly brave, you can even try climbing the bell tower’s infamous creaking wooden steps. Such are the steps’ reputation, that there’s even a bulletin board inside the church with photos of what to expect. We didn’t make it to the top, thought I was happy to settle for terrace views.
Later that afternoon, the skies finally cleared, so we enjoyed another walk along the harbour as well as a gelato stop along the way.
So what’s the verdict on Rovinj? You can definitely explore the town in one day, but if you have a few days to spare, this would make an even better base to explore the rest of Istria.
