5 Espartanos salieron de Playa del Carmen a una paradisiaca isla del caribe, sin saber lo que se iban a encontrar en su camino se aventuraron en lo que fue una autentica lokura.......jajajajjajaja que viva Holbox !!!!!

Destinos con Sabor: Chef Federico López en Holbox.

En esta ocasión, visitamos la bella isla de Holbox al norte de Quintana Roo, México con el Chef Federico López y su esposa Aída Iturburu.

Al arribar a la isla, el staff del hotel Las Nubes nos dio una calurosa bienvenida entre margaritas de tamarindo y el arrullo de las olas caribeñas; un lugar de ensueño.

Posteriormente, nos alistamos para vivir la aventura de la pesca con el tour VIP Holbox, donde Willi Torfer y el capitán Gerardo nos ofrecieron un recorrido sin igual observando paisajes encantadores como Isla Pasión. Realizamos pesca de fondo, una de las técnicas más antiguas de este oficio y, tras varios intentos, conseguimos atrapar un jurel, tratándose de un pescado que no es comúnmente comerciado pero que ofrece un exquisito sabor.

Tras la exitosa pesca, nos dirigimos de vuelta al hotel Las Nubes donde el Chef Federico nos deleitó con un delicioso risotto con trozos de jurel y mero a base de ingredientes de la región: naranja agria, recado blanco, yuca y calabaza local. El platillo fue acompañado con una salsa tatemada de chile habanero, cebolla, tomate y naranja agria.

Al caer la noche, visitamos el centro de Holbox para ir a probar la famosa pizza de langosta, un clásico de la isla que pese a no ser un platillo perteneciente a la cocina mexicana, es un icono de la región y ciertamente un manjar imperdible.

Al día siguiente, regresamos al pueblo de Chiquilá, donde conocimos a Wiliam Aguiñaga, Presidente de la Cooperativa Pesquera de dicha locación, quien habló de pesca sustentable con el Chef Federico López.

Holbox es un lugar que te permite desconectarte del ajetreo cotidiano, una locación de descanso y tranquilidad, pero también con mucha oferta de actividades si quieres vivir una aventura en el Caribe, convirtiendo a esta isla en un auténtico Destino con Sabor.

This time we visited the beautiful island of Holbox located at the north of Quintana Roo, Mexico with Chef Federico López and his wife Aída Iturburu.

When we arrived to the island, hotel Las Nubes' staff welcomed us warmly between tamarindo margaritas and the soft murmur of the Caribbean waves; a dream-like place.

Later, we prepared ourselves for living a fishing adventure with VIP Holbox tour, where Willi Torfer and captain Gerardo offered us an unparalleled journey, observing enchanting landscapes like Isla Pasión. We practiced bottom fishing, one of the oldest techniques in this craft in which, after many attempts, we catched a yellow jack fish, which isn't commonly traded but that offers an exquisite flavor.

After the successful fishing, we went back to hotel Las Nubes where Chef Federico delighted us with a delicious risotto with yellow jack fish and grouper chunks, based in local ingredients: sour orange, white recado, yucca and zucchini. The dish was accompanied by a roasted sauce with habanero chili pepper, onion, tomato and sour orange.

When the night arrived, we visited Holbox's downtown to taste the famous lobster pizza, a classic of the island that may not be a dish from Mexican cuisine, but it's an icon of the region and certainly a delicacy you can't miss.

Next day we went back to Chiquilá, where we met Wiliam Aguiñaga President of the Fishing Cooperative in this town, who spoke about fishing sustainability with Chef Federico.

Holbox is a place that allows you to disconnect from the daily hustle, a location for resting and tranquility, but that offers many activities if you want to live an adventure at the Caribbean, turning this island into an authentic Destino con Sabor (Destination with Flavor).

By end of January, we travelled to Central America. We started in Yucatán, Mexico and discovered the Ruta Maya in Belize and the north of Guatemala. In this video, we show you our best footage of the amazing beaches, a snorkel trip in the Belize Barrier Reef and the wildlife.
