Kay Brothers Amery Vineyard is a true Australian original. Founded by Herbert and Frederick Kay in the late 19th century the winery has assumed a legendary status on account of an adherence to tradition and wines of remarkable complexity, structure and impressive longevity. The winery has the feel of a working museum as an original basket press and open-top fermenters continue to be used. Much of the fuss surrounds the scrum for a few bottles of Block 6 Shiraz. Many of the vines from this vineyard date from 1892 and are very lowyielding. After a moderately long-fermentation under a submerged cap the wine is aged for more than two years in a mix of new American and Eastern European oak. The wine shows a fabulous old vines complexity, quite unexpected elegance and purity and super intensity and length. Remarkably it can be drunk with just 5 or 6 years age but will keep for 20 or more. If you have to settle for the Hillside Shiraz you won’t be missing that much. Concentrated and powerful with very fine crushed blackberry fruit and mineral, licorice nuances, this wine actually needs 10 years or more before it is ready. Readily affordable are the excellent regular Basket Pressed Shiraz and Cabernet Merlot. These are a comparative disappointment after the top Shirazes but still pack a lot of intensity, density for relatively young vines and start to open up after 4 or 5 years’ ageing. A little fortified Muscat is also made.

It was such a pleasure to conduct a tasting at the oldest family owned winery in McLaren Vale. Part of the Kay family since 1890. This time I try their Basket Press Shiraz and a Liqueor Muscat.

Taltarni's chief winemaker, Loic Le Calvez, presents Taltarni's Reserve Shiraz Cabernet 2005 with Ian and Alison from the Avoca Hotel in the Pyrenees Victoria Australia. In this episode, Loic discusses the wine's flavour profile and his wine-making philosophy with Ian, the Avoca Hotel's resident wine expert.
We also get to see Alison prepare an amazing venison ragout for us. In fact, here is the recipe:
Recipe follows;
olive oil
1.5 diced venison
1 large onion chopped
4 garlic cloves crushed
1 carrot chopped
1 celery chopped
250ml red wine
1 litre veal stock
juice of 2 oranges
zest of 1 orange
2 springs of thyme
2 bay leaves
10 sage leaves chopped
400gm of potato gnocchi
drizzle of truffle oil
good aged pecorino shaved
1: Preheat oven to 150 C
2: Heat olive oil in a large fry pan and brown the venison, remove. Add onion, garlic, carrot and celery and sweat until light brown. Return the venison to the fry pan and deglaze with the red wine.
3: transfer to an ovenproof casserole dish and add the veal stock, orange juice and zest, thyme, rosemary, and bay leaves. Cover and place in oven for 3 hours . Remove and allow to cool.
4: Using your hands pick over the meat and shread alitlle putting aside in another bowl. Strain the vegetables from the stock . Combine the stock with the meat and sage.
5: Cook gnocchi in a large pot of boiling water. Transfer to a large warm bowl and drizzle with the truffle oil. Toss through the meat. Serve and garnish with the shaved pecorino.
