Franciacorta is marked by a long and deep sense of place. It references both a place of origin in name (Franciacorta is Italy’s first sparkling DOCG) and a method of production, metodo classico, where second fermentation occurs in bottle. The hills surrounding Lake Iseo form a glacial amphitheater, and it is here where the bubbly wines of Franciacorta were widely prized and consumed as early as the 13th century. Since 1870, Barone Pizzini has captured the area’s long cultural significance to help shape both Franciacorta’s legacy and contemporary character. The winery is a keen observer of their land, developing thoughtful farming models that have propelled the estate at the vanguard of their region.

Diego Muñoz Head Chef of Astrid y Gastón, Lima Peru, recently voted #14 Best Restaurant in the World* (up four places from 2014), cooks at Rockpool Est 1989 with Neil Perry AM and Head Chef Phil Wood at a special one-off event.
The dinner on Sunday, 2 August 2015, supported by the Rockpool Foundation will feature a stunning six-course menu with matching wines donated by TarraWarra Estate. Muñoz and Wood will take ingredients which represent the most frequently rescued produce by OzHarvest, such as potatoes, lettuce and apples and turn them into mouth-watering dishes.

Born in Reims, France in 1972, Chef Sylvain was raised by his father, a Charcuterie chef. At an early age, he developed the passion for gastronomy and followed his dream by completing an apprenticeship at “La Garrene” Restaurant with National Diploma as a qualified cook.
With a vast amount of culinary experience in Europe, the Middle East and Asia, Chef Royer understands the modern day expectations for gastronomy internationally and serves it with excellence. He is well-known for his Farm to Table concept; only choosing the best and fresh products for his cuisine. Ingredients used are often organically and locally grown, with the exception of French items like cheese, cold cuts and oysters, in which case he then uses only the finest of imported products. He does this by regularly inviting cheese masters and suppliers of cold cuts and oysters to display and explain their specialities and qualities at his restaurants.
