Cette semaine, Yvan se rend dans le XIIe arrondissement autour de la Cour Saint-Emilion. Entre école de boulangerie, arts forains, caves et jardins: Yvan découvre un quartier réhabilité qui réserve de nombreuses surprises.
Résumé de l’épisode :
Dans le XIIe arrondissement et sous un soleil estival, Yvan découvre les alentours de la Cour Saint-Emilion et notamment le bucolique Parc de Bercy dont Frédéric, un guide amoureux de ces allées, est passionné. Devant un ancien chai, Frédéric Gersal fait revivre à Yvan l’agitation du quartier quand il était dédié au négoce de vins. Aujourd’hui ces anciens chais de la Cours Saint-Emilion accueillent des commerces qui ne désemplissent pas. Yvan se rend au Chai 33, un restaurant qui a conservé la cave historique et où les vins sont rangés non pas par origine géographique mais par spécificités gustatives. Requinqué par cette dégustation, Yvan retrouve son âme d’enfant en se rendant au Musée des Arts forains. Après s’être extasié devant les merveilleuses collections d’attractions foraines et après quelques tours de manège, Yvan traverse l’ancienne cour intérieure des ateliers viticoles du Cour Saint-Emilion pour se rendre à l’Ecole de Boulangerie de Paris. Dans les odorants laboratoires, il fait la connaissance des futurs grands boulangers-pâtissiers et déguste quelques productions tout juste sorties des fours.

Résumé : Lorsqu’Yvan se rend dans un lieu emblématique de l’histoire viticole parisienne, il se doit de faire un détour par Chai 33. Installée au Cour Saint-Emilion et dans les chais historiques de Bercy, il s’agit d’un lieu incontournable de tout amateur de vin. Avec plus de 300 références de vins Yvan est prêt pour une dégustation sans précédant.

Tropical Fruit, Southern Style, Fine Spiciness
White wine with a light golden colour. Still appearing rather youthful, there is a slight green tinge in there. Pure and intense nose. Quite tropical at first. It is really displaying ripeness here, lush almost like tropical fruit. I pick up some floral notes as well. It is fairly aromatic. Reminiscent of, let's say, quite a Southern style in terms of nice, juicy, ripe fruit; like pineapple, mango, citrus, some floral notes. Almost in this veneer direction. There is a slight hint of oak. Not super present, but I get a slight hint of smokiness, something toasted there. It is pretty attractive. The palate confirms the nose. It is quite lush and broad style. Again, I would talk about the quite Southern style, with quite mild acidity. However, the wine is classically bone dry. So it still retains a good freshness on the palate. I do get some oak on the taste as well but finely underlined. This is first and foremost that great mouthfeel with that lush tropical fruit. There is good extract as well, extract without bitterness. Which I think gives a good lift to the palate. Fine spiciness and then again those tropical yellow fruit, some floral undertones. A really good bite on the finish. I think this a wine that combines that quite opulent fruit with a slight mineral sensation, particularly on the finish. So lush, broad, with a good length and good character.
