This is the in-store welcome to Lark Distillery in Hobart Tasmania, video. Today the Lark Distillery is one of Australia's leading distilleries, producing high quality, premium spirits using traditional time honored methods.
The first Lark Distillery copper was found at an antiques auction, hidden away amongst the bentwood chairs and mahogany tables. Today the Distillery runs a 1800 litre copper pot still, along with a 500 litre spirit still, and produces ten to twelve 100 litre barrels per month.

The Lark Distillery is one of Australia's leading distilleries, producing high quality, premium spirits using traditional time honoured methods. The Distillery runs a 1800 litre copper pot still, along with a 500 litre spirit still, and produces ten to twelve 100 litre barrels per month.
Mark outlines how the Flavours of Tassie showcase gives local producers the opportunity to interact with passengers on board the Spirit of Tasmania, helping to educate passengers on the things to do and see in Tasmania, and also teach them about some of the great products and activities that can be consumed and experienced there.

Tasmanian whiskies are garnering worldwide attention, not least because Sullivan’s Cove whisky won ‘Worlds best single malt’ in 2014. Away from the awards spotlight there is a burgeoning whisky industry, one featuring many great characters and varying styles of whisky. This inspired us to travel to Tasmania in April 2015 on a journey of discovery which resulted in this feature. We visited each distillery (and one independent bottler) to video the response to 5 questions, which resulted in very different responses.
Lark Distillery: Forty Spotted Gin
Sullivans Cove Rare Tasmanian American Oak #144
Australia’s second-highest awarded whisky.
Before the French Oak came into its own, Sullivans Cove American Oak was the Australian champion whisky. Twice named the Best Whisky in the Rest of the World and the first Australian whisky to achieve Liquid Gold status in Jim Murray’s Whisky Bible, it is fitting that the only whisky to surpass it would be from the same stable. Single cask, non-chill filtered and matured in American oak ex-Bourbon barrels.
TASTING NOTES
NOSE: Malt, spice, subtle nutty characters and light cream.
PALATE: Rounded, full, creamy. Initially lots of sweet barley and fruit at front of palate, vanilla comes through and citrus notes in the middle palate.
FINISH: Honeyed, long, even finish with great balance.
