Lynfred Winery
One More Bottle of Wine: Lynfred Winery 2004 Reserve Cabernet/Merlot Lynfred Winery in Roselle is celebrating its 30th anniversary. Since its 1979 inception, Lynfred has grown to become the largest winery in the state and is a major force in trying to keep Illinois a full reciprocity state in accordance with the Supreme Court's decision in Granholm v. Heald, although distributors aren't making it easy.
In Chilean-born Andres Basso, Lynfred also has a talented winemaker on staff. Basso's resume includes tours of duty at Concha y Toro, Washignton State's Gordon Brothers Family Vineyards, and Napa Valley's Merryvale Vineyards. Basso's wines tend to coat the palate with bright fruit and clean finishes, making them compatible as either a great food wine or for just wanting a glass around the house. That's how we came to the revelation of Lynfred's 2004 Reserve Cabernet/Merlot.

The barrels get a bath!
Winery tours at Lynfred often include questions like 'How do you clean your barrels?' and 'How do you move the barrels?' and this video answers both questions!
Wine is moved around the winery cellar via a large collection of hoses and is transferred using mechanical pumps. After wine has been 'racked' or moved from a barrel the barrel needs to be cleaned. Seen in this video is our newest barrel washer. All the barrels are being moved by Rene, one of our dedicated cellar employees.

Transcript:
I’m always thinking, wine is not a product that you can make and stays there you have to think about what you are going to do with the wine. I mean the wine is different, every single one is different so you have to take your product and then you go different ways depending on what you are trying to acquire for that particular vintage.
My name is Andres Basso and I was born and raised in Chile. Chilean culture is absolutely a culture, a wine culture. I grew up in a family that gets together on Sunday's and they all share a bottle of wine.
I actually married a person from Chicago a long time ago. So we had the opportunity to move to Chicago and I ran into Lynfred winery, the Fred Kohler was making the wines at the time, the owner, and he was looking for a winemaker.
Its a small little boutique type of winery where you can make wines, a variety of wines for different pallets.
It's a long process because you start you know talking to your growers all the way throughout the season and when you receive the grapes, and you are seeing this bin or wood crate coming with half a ton each you're wondering, you know, is this the product that I really want to see. Then so you start by tasting the grapes, processing, removing any material that you, unwanted material, enjoying the taste of the seeds, the pulp, you know the flesh, the skins analyzing the colors, checking the sugar levels I mean there is a whole lot of different things that we do, its a fascinating time. I am anxious because I want to see that finish, I'm excited about what we can do with this new product. Every event is a new challenge. I am wondering if this is going to be as good as the previous year or maybe better or if I can do something, some process, that can create even a bigger and better wine.
So it is a wide range of feelings and sensations in the life of the winemaker.
Last night I had a dream with what we're gonna do with a peach wine that is fermenting in the tank number 12. I was dreaming about the alcohol content that I measuring the alcohol content that is approaching to the level that the wine needs to be transferred from one container into a new container. So that's almost finishing the wine fermentation part.
I think the satisfaction of any winemaker is when someone is able to taste your product and you see these people enjoying he wines, you know, then you, you feel absolutely wonderful. Mission accomplish. You did all this carryover, this process for 2, 3 years of aging and winemaking and finally to be able to enjoy with someone is just a fantastic experience

Lynfred Winery BizGen Profile
Fred E. Koehler, founder of Lynfred Winery, also considered the father of the Illinois wine industry, was a business savvy man and self-taught winemaker whose aspiration to produce wines of excellence earned him the title of a legend. Robert Mondavi once told him You're wasting your time in Illinois. You ought to come to California, but Koehler replied that his roots are in Illinois. In the 1920's Fred's grandfather and father made wine for the family and local politicians. Then in 1975 Fred, along with his late wife Lynn, made his first batch of wine in the basement of their home. We had so much wine we outgrew our house and had to go commercial. What began as a hobby that got out of hand led to the opening of the first winery in Illinois in 1979 with 7 varieties and 5,000 gallons of wine.

The Wine Down - A Taste of Santa Barbara Wine Country with Brandon Sparks-Gillis of Dragonette Cellars
Having learned about wine while working as a clerk at Wally's Wine and Spirits, Brandon Sparks-Gillis took his taster's apprenticeship to co-found Dragonette Cellars with John and Steve Dragonette. Years of cultivation and experience helped them create a truly outstanding label that Brandon shares with the Wine Down.
We discuss growing in the central coast, working with luminary winemakers, and taste several excellent bottles from Dragonette.
GUEST BIO:
John and Steve Dragonette and close friend Brandon Sparks-Gillis formed Dragonette Cellars in order to pursue a long-held dream to produce wines of the utmost quality and purity from the finest vineyards in Santa Barbara County and the Central Coast. Every bottle that leaves our winery is 100% produced by family members.
We have poured our experience into producing cool-climate expressions of Pinot Noir and Syrah from vineyards in the Santa Ynez Valley, Sta. Rita Hills, and York Mountain, and Sauvignon Blanc from the uniquely suitable area of Happy Canyon.

How much do we love Chicago? Let us count the ways! The food, the people, the nightlife, the culture ... we could go on and on. But don't take our word for it. Our lifestyle blogger Sharzad Kiadeh of Luxlyfe lets you in on the best the Windy City has to offer.

Show Me State Wines - Missouri Wine Tasting
A few months back, we took the opportunity of a longer weekend to knock off two birds with one stone. Our son Munchkin has been agitating (for some unknown reason) to visit St Louis, and, since we hadn't been there as a family, we decided the time was nigh. At the same time, we could continue our 50 states project, visiting a winery in each state - this would be our 6th!
