Understanding Loire Valley Vouvray with Noel Pinguet
Ready for a course in Applied Biodynamics from the Rudolph Steiner School? Noel Pinguet of Domaine Huet introduces us to the quasi-mystical philosophy that led him to experiment with a scientific mode of culture—a field where he is a real pioneer.
In the land of Chenin Blanc, through sparkling Vouvray we find the concept of verticality and minerality in wine, learn the meaning of the words ‘Sec’, ‘Demi-Sec’ and ‘Moelleux’ or ‘Sweet’.
We also hear some strong opinions: « chaptalization is cheating! » « Aging wine is not making wine! » « A Vouvray ‘moelleux’ from raisining is more elegant than botrytised Sauternes! »
Noel Pinget is truly ‘not-be-missed’... the creator of a wine that has made Robert Parker cry ...
Topics covered in this episode:
- Biodynamic treatment of the Rudolph Steiner School is complicated!
- Wine tasting courses
- Sparkling wine—not Champagne—but what flavor!
- Explanation of the terms 'dry', 'semi-dry' and 'moelleux'.
- Chenin blanc in Vouvray and Chenin blanc from South Africa—any differences?
- Definition of verticality in wine.
- Is chaptalization cheating?
- Wine that has make Robert Parker cry…
- Raisinging: more elegant than Botrytis?
- Difference between a ‘Moelleux’ Vouvray and a Sauternes.

Domaine Huet is the globally acknowledged master of age-worthy Chenin Blanc. An ancient bottle of Vouvray Clos du Bourg could be as fresh as a summer meadow and autumn rolled into one.
The great Gaston Huet, who passed away in 2002, inherited this estate from his father Victor and mother Anna-Constance, who bought it in 1929.
Until recently the estate was run by Gaston's son-in-law Noel Pinguet and with the security of substantial investment it looks set to cruise into the next generation, with winemaking controlled by local lad Benjamin Joliveau and long time cellar-master Jean-Bernard Berthome.
The 35ha estate includes a set of stunning 'lieu dits' and these make a bewildering array of styles of wines. Sparkling wines, Sec (dry), Demi-Sec and also Moelleux (sweet) styles can come from any of the three exceptional vineyards, Le Haut-Lieu, Clos du Bourg and Le Mont depending on the quality of the vintage. Le Constance, a botryised cuvee named after Gaston's mother, is also made in exceptional vintages.

Organic wine behind the scenes in Vouvray, France
Organic wine has become increasingly popular in recent years but do you know how it's made? What makes wine organic, what's the process like, and why is it worth your while? I wanted to know more so I spent the day in the Vouvray appellation with Peter Hahn of Le Clos de la Meslerie and learned all about his unique approach to winemaking... which includes working the vines with a horse instead of a tractor!
A huge thanks goes out to Peter and Philippe for being generous with their time and to Cathy of Le Tasting Room for helping me organize the day.

The domain Chateau Gaudrelle
Château Gaudrelle is located in the heart of the Loire Valley between Tours and historic
Amboise, overlooking the beautiful Loire river.
The domain was established by my grandfather in 1931 and its reputation increased over the years due to its rich terroir of limestone and silica and the attention we pay to the making of our Vouvray wines.
We would really enjoy to explain our passion for our wines and we will be delighted to show
you how they are made, as well as our troglodyte caves in which we store them.

Rosé Wine from Chinon In The Loire Valley In France.Producer Philippe Pain
Rosé Wine from Chinon In The Loire Valley In France.Producer Philippe Pain
Chinon wine comes from the vineyards around the town of Chinon in Touraine. Unusually for the Loire Valley, it is mostly red wine, with 2-5% rosé and a little white wine.
The reds and rosés are made from Cabernet Franc (known locally as Cabernet Breton), with an allowance of 10% Cabernet Sauvignon. They are typically dry and light to medium bodied and go well with food. In good vintages the red wines can be cellared for 10 years or more. Cabernet Franc grown on the stony terraces of the area tends to be a young wine with dominant notes of blackcurrant and anise. The wines from the steeper rockier areas along the hills that separate the Loire from the Vienne tend to produce wines that are more tannic and express the more austere terroir in a range of alkaloid flavors that give the wines a mineral, gamey complexity and a strong tannic backbone. These wines also tend to develop a velvety depth of spice flavors as they age. Though typically thought of as lighter wines, reds from good producers and strong vintages can be full bodied and well structured for aging. Their whites are composed primarily of Chenin Blanc. They are typically described as dry, soft, light, and clean.
The town of Chinon is situated on the banks of the river Vienne in Indre-et-Loire. The vinyards of the Chinon AOC cover the relatively steep banks of the Vienne as well as the less steep slopes running northward from the hills above Chinon to the Loire. The vineyards consist almost entirely of erosional scree and gravels on top of rather hard Turonian limestones. Toward the Loire itself the Turonian limestones give way to the Jurassic rock of the Loire.
Chinon is a commune in the Indre-et-Loire department in central France.
In the Middle Ages, Chinon developed especially during the reign of Henry II (Henry Plantagenêt, Count of Anjou, crowned King of England in 1154). The castle was rebuilt and extended, becoming one of his favorite residences.
Chinon was included in the French royal estates in 1205. It was during the Hundred Years' War that the town took on a new lease of life, as the heir apparent, the future Charles VII of France, had sought refuge in 1418 in the province. The town remained faithful to him and he made lengthy stays at his court in Chinon. In 1429, Joan of Arc came here to acknowledge him.
From the sixteenth century, Chinon was no longer a royal residence.

SUMMARY
=======
Chenin blanc (known also as Pineau de la Loire among other names) is a White wine grape variety from the Loire Valley of France. Its high acidity means it can be used to make everything from sparkling wines to well-balanced dessert wines, although it can produce very bland, neutral wines if the vine's natural vigor is not controlled. Outside the Loire it is found in most of the New World wine regions; it is the most widely planted variety in South Africa, where it is also known as Steen. The grape may have been one of the first to be grown in South Africa by Jan van Riebeeck in 1655, or it may have come to that country with Huguenots fleeing France after the revocation of the Edict of Nantes in 1685. Chenin blanc was often misidentified in Australia as well, so tracing its early history in the country is not easy. It may have been introduced in James Busby's collection of 1832, but C. Waterhouse was growing Steen at Highercombe in Houghton, South Australia, by 1862.It provides a fairly neutral palate for the expression of terroir, vintage variation and the winemaker's treatment. In cool areas the juice is sweet but high in acid with a full-bodied fruity palate. In the unreliable summers of northern France, the acidity of under ripened grapes was often masked with chaptalization with unsatisfactory results, whereas now the less ripe grapes are made into popular sparkling wines such as Crémant de Loire. The white wines of the Anjou AOC are a popular expression of Chenin as a dry wine, with flavors of quince and apples. In nearby Vouvray AOC they aim for an off-dry style, developing honey and floral characteristics with age. In the best vintages the grapes can be left on the vines to develop noble rot, producing an intense, viscous dessert wine which may improve considerably with age.

The Loire Valley wine region includes the French wine regions situated along the Loire River from the Muscadet region near the city of Nantes on the Atlantic coast to the region of Sancerre and Pouilly-Fume just southeast of the city of Orléans in north central France. In between are the regions of Anjou, Saumur, Bourgueil, Chinon, and Vouvray.
The Loire Valley itself follows the river through the Loire province to the river's origins in the Cevennes but the majority of the wine production takes place in the regions noted above. The area includes 87 appellations under the Appellation d'origine contrôlée (AOC), Vin Délimité de Qualité Superieure (VDQS) and Vin de pays systems. While the majority of production is white wine from the Chenin blanc, Sauvignon blanc and Melon de Bourgogne grapes, there are red wines made (especially around the Chinon region) from Cabernet franc. In addition to still wines, rosé, sparkling and dessert wines are also produced. With Crémant production throughout the Loire, it is the second largest sparkling wine producer in France after Champagne. Among these different wine styles, Loire wines tend to exhibit characteristic fruitiness with fresh, crisp flavours-especially in their youth. The Loire Valley has a long history of winemaking dating back to the 1st century. In the High Middle Ages, the wines of the Loire Valley were the most esteemed wines in England and France, even more prized than those from Bordeaux.

I've been here at Le Clos de Meslerie for about 2 weeks now. Since then so much has happened it's felt like I've lived here for 6 months. There's so much beauty all around and it's all so new and interesting that it seems less like life and more like a float down a river.
The first week I was here we set to work bottling last years wine that had been in barrels for a year. This was very special in many ways, because it was actually the first bottling of the wine under the new owner of Le Clos de Meslerie, Mr Peter Hahn. It was really fantastic to be a part of this, because it was a new experience for mostly everyone involved, so excitement filled the air.
Since then we've had one weekend were some harvesters have come from a local university to help harvest this years grapes, and lots of cleaning and preparation for the big push to come.
The winery here is a pretty incredible thing. Everything is done organicly, and the newest piece of technology we have in the wine making process is a Kocher water pressure washer. We've been hard at work recently using the 80 year old hydraulic press to squeeze the juice from the newly picked grapes. It's a slow and difficult process, but fabulously rewarding and it has been an experience I wouldn't trade for the world.
I'll post some pictures of the house and the area I'm in on this post, but I'm going to try to take more pictures and some of better quality for later. These will have to do for now.
