Food info:
1) Khad Lam (Slow Cooked Underground Lamb):
Khad lamb (means cooking lamb in a pit in the ground)
Earlier soldiers didn’t want to leave any trace of smoke so that they can hide hence discovered this way of cooking.
Earlier it was rabbit meat but now since it banned so we are cooking lamb.
Making of garam masala- Roast all the following ingredients and pound it together: green cardamom, black pepper, cloves, coriander seeds, black cardamom, turmeric, bay leaves and caramelized onion powder.
Basic marination- Make cuts on the leg of the lamb and put minced garlic with lots of freshly prepared garam masala.
Next for the paste-mix red chili powder, coriander powder, turmeric, salt and lots of ghee.
Add this paste to the basic marination with a base of rotis and banana leaves. Cover it with a wet jute sack so that it doesn’t burn as it needs to be in direct contact with the fire for 2 hours in the pit.
2) Junglee Mass (Wild meat)
Five Ingredients Recipe-
If hunting, you get stranded, these are easily available in any village
Red chilli powder, Ghee, Salt, Dal or lentil, Coriander seeds, Lamb pieces. In a wok, combine everything together till the meat is soft and tender.

This is from my visit to Delhi Highway in Mumbai. Delhi Highway is a restaurant that serves authentic Punjabi food in Mumbai. It is one of the best restaurants serving North Indian Food in Mumbai and also one of the best veg restaurants in Mumbai. Their USP is their Maharaja Punjabi Thali which consists of many items including Paneer subzi, mix veg sabzi, dal tadka, vegetarian biryani, raita, gulab jamun and lots more. They even have interesting starters which includes a vegetarian kebab platter and also tomato dhaniya shorba and gol gappa shots. You should definitely try out this Punjabi Thali in Mumbai. City Description:
Jodhpur is a city in the Thar Desert of the northwest Indian state of Rajasthan. Its 15th-century Mehrangarh Fort is a former palace that’s now a museum, displaying weapons, paintings and elaborate royal palanquins (sedan chairs). Set on on a rocky outcrop, the fort overlooks the walled city, where many buildings are painted the city’s iconic shade of blue. Northeast of the fort is the Jaswant Thada, a white marble mausoleum in a lakeside setting. On a hilltop to the southeast, the domed, marble Umaid Bhawan Palace is the residence of Jodhpur's maharaja. It has gardens, a public museum filled with furniture, weapons and china, a display of classic cars and a luxury hotel. The old city, the area around the iconic Ghanta Ghar clock tower, is home to a market where stallholders sell spices, food, clothing and jewelry. The city's well-known annual Gangaur Festival focuses on women's rituals.
Weather and Events:
Peak travel is Oct–May, the driest part of the year. Winters (Dec–Feb) are mild with cool evenings. The Desert Kite Festival (Jan) is one of several celebrated in Rajasthan, involving competitions and fireworks. Nagaur Fair (varies Jan/Feb) focuses on livestock trading, but there's also craft and spice markets, camel racing and folk theater. Temperatures become very hot Mar–Jun, ahead of monsoon season (Jul–Aug). The Marwar Festival (varies Sep/Oct) celebrates Rajasthan's history and heroes with traditional music and dance.

It was a fabulous luxury dining experience and among the best places to visit in Jaipur.
I absolutely loved to savour the traditional Jaipur famous food like kair sangri, besan gatta / gatte curry and rajasthani kadi pakoda.
