Ingredients
Pani (Spicy Water):
1 cup mint leaves (Pudina)
2 to 4 green chilies (adjust to taste)
3 tablespoons tamarind paste (Imli)
3 tablespoons lemon juice
1 teaspoon black salt
1 teaspoon salt (adjust to taste)
1/4 teaspoon ginger powder
1/8 teaspoon asafetida (Hing)

3 large tomatoes

2 tbsp butter
2 tbsp vegetable oil
Salt as required

1/2 tbsp turmeric powder
1 tbsp pav bhaji masala
Handful coriander leaves
6 large eggs
Method
- Chop onions finely
- Add oil, butter and onions and allow the onions to sweat
- Chop chillies and ginger and add it to the pan
- chop tomatoes and add into the pan
- Add salt, turmeric, red chilli powder and pav bhaji masala
- Mix everything
- Beat the eggs add salt and put the eggs into the pan
- Egg Bhurji is ready to be served.

Their encouragement, particularly from an adaptive services Librarian from the DC Govt Library inspired him to solve a real life problem using code. He created a 3D code board game called Storibot. His game has tactile code pieces that the visually challenged community can use to learn programming. Kedar’s efforts won him the Young Inventor Challenge, in the junior category, at Chicago Toy and Game Fair in Nov 2015. Masala Khichdi is a spicy variation of simple khichdi. This is healthy but ultimate comfort food.
Ingredients
1/2 cup moong dal washed and split
1/2 cup rice
1/2 cup green beans cut into about 1/2 inch pieces
1 potato medium size washed peeled and small cubed this will make about 1/2 cup of cubed potatoes
1 teaspoon salt
1/4 teaspoon turmeric (haldi)
1 tablespoon clarified butter (ghe)
3 cups water for cooking
For spice mix
2 tablespoons clarified butter (ghe)
1/2 teaspoon cumin seeds (jeera)
1/2 teaspoon mustard seeds (rai)
1/8 teaspoon asafetida (hing)
1-1/2 cups tomatoes finely chopped
1 green chili finely chopped adjust to taste
1/4 teaspoon red chili powder (lal mirch)
1/2 teaspoon salt
2 teaspoon ginger finely shredded
2 tablespoon cilantro finely chopped
¼ teaspoon garam masala

INGREDIENTS
✿ Potatoes peeled – 4 large
✿ onions – 4 large or 8 small
✿ Oil for frying
✿ Salt – 1 tsp
✿ For gravy
✿ Oil – 4 tbsp
✿ Cumin seeds – 1 tsp
✿ Bay leaf -1
✿ Onion paste – 3/4 cup
✿ Ginger-garlic paste – 2 tbsp
✿ Tomato puree – 3/4 cup
✿ Green chillies chopped – 2
✿ Salt to taste
✿ Kitchen king masala – 1 tsp
✿ Coriander powder – 1/2 tbsp
✿ Kashmiri red chili powder – 1/2 tbsp
✿ Turmeric powder – 1/2 tsp
✿ Garam masala powder – 1/2
✿ Butter – 1 tbsp
✿ Greek yogurt or any thick yogurt – 2 tbsp
✿ Fresh cream – 4 tbsp
✿ Kasuri methi – 1 tbsp
✿ Water – 1/2 cup or as required
✿ Chopped coriander for garnish
Prep time Cook time Total time
15 Minutes 25 Minutes 40 Minutes
INSTRUCTIONS:
1.Cut potatoes into 4 pieces and prick them with the fork.
2.Cut onions into 4 pieces. Boil water in a pot and add salt to it.
3.Add potatoes and cook covered for 5-7 mins.
4.Drain potatoes on an absorbent paper and set aside.
5.Add onions to the same water and boil covered for 5-7 mins.
6.Drain onions on an absorbent paper and set aside.
7.Heat enough oil in a pan and fry potatoes and onions. Drain on an absorbent paper
and set aside.
8.Heat oil in another pan. Add cumin seeds and bay leaf. When the seeds start to
splutter add onion paste.
9.Mix well and sauté for 4-5 mins.
10.Add ginger-garlic paste and green chilies. Cook for 2 mins.
11.Add kitchen king masala, coriander powder, Kashmiri red chili powder, turmeric
powder and garam masala Mix well and cook for 2-3 mins.
12.Add tomato puree and salt. Mix well and cook covered for 5 mins.
13.Add Kasuri methi along with yogurt and cream. Mix well and cook for a minute.
14.Add water and mix well. Now add fried potatoes and fried onions.
15.Coat well and add butter.
16.Mix again and cook covered for 3-4 mins.
17.Add chopped coriander and mix well. Remove from heat.
18.Garnish with Kasuri methi, coriander and drizzle with some cream.
19.Serve with hot naan or any other flat bread. Enjoy!
NOTES:
1. This recipe is for a spicy curry, but feel free to adjust spices according to your taste.
2. Add vegan cream and vegan yogurt to make it vegan.

Chole Bhature (छोले भटूरे) - Mouthwatering Chickpeas and Deep Fried Bread at Sita Ram Diwan Chand
Chole Bhature (छोले भटूरे) is one of the most popular street foods in Delhi, India. Check out my Delhi travel guide -
As soon as I arrived to Delhi, India, I immediately noticed Chole Bhature (छोले भटूरे also called chana bhatura), and after having my very first bite and meal of the dish, I knew that I was in love. Chole (छोले) is the name used for a spicy chick peas stew or curry. It's slow simmers so the chick peas are soft, yet still retain some of their texture, mixed with plenty of ghee, and then the perfect amount of masala spices are added to make it extremely flavorful. A bhature (भटूरे) is the other part of chole bhature, it's the deep fried bread, or a poori (puri) to be exact that the spicy chick peas are eaten with. So when I was in Delhi, India, I enjoyed this dish at many different locations, but on one of my last few days in the city I decided to check out a famous establishment known as Sita Ram Diwan Chand. Located in Paharganj, near the New Delhi railway station and the popular backpacker budget accommodation section of the city, it wasn't hard to locate. Also, the sign is bright red on the outside so it's quite easy to spot when you're walking through Delhi.
As soon as I stepped foot into Sita Ram Diwan Chand, I was immediately overwhelmed by the glorious aroma coming from their Chole Bhature (छोले भटूरे). It was incredible and I honestly couldn't wait to eat. They are massively popular with local Delhi residents. Many customers come to Sita Ram Diwan Chand with huge takeaway order and they restaurants also packaged their food up to deliver to offices during the lunchtime hours. Luckily we arrived before it was too busy and crowded and I ordered just the classic. Now one thing that is different at this restaurant is that the bhature is not puffy like a pillow like it is on most of the street food stalls in Delhi. Instead it's more flat like a chapati, but the poori is stuffed with bits of paneer cheese and spice to make it even more mouthwatering delicious!
My plate of Chole Bhature (छोले भटूरे) took just a few seconds to whip up. The vendor grabbed a fresh scoop of the spicy slow stewed chickpeas from the center of the pan. The thick gravy like chickpeas were oozing with flavor. The other cook heated up a could of bhatures to complete my dish. After receiving and paying you then find a table which are all standing tables and dig in. The great thing was that there were garnished like pickles and chilies on every table that went extremely well with the dish. I had Chole Bhature (छोले भटूरे) a number of times when I was in Delhi, and this was by far the best and tastiest version I had. It was actually luscious, so creamy and rich that it melted in my mouth and the deep fried bread was so flavorful from the spices, coriander, and paneer cheese. The combination was spectacular. This was a completely vegetarian meal, but it sure was packed with calories!

What to eat: There's really only one thing to eat here: chole bhature (they also call it chana bhatura) which costs an affordable 30 INR ($0.56) and you'll LOVE it!
How to get there: The restaurant is located in Paharganj (Main Baazar, the budget backpacker area) which is just west of New Delhi Railroad station and Metro Station. From the Main Bazar road (Baba Namdev Marg), walk to Rajguru Marg T-intersection. Head north, and walk straight for about 200 meters or so. You'll see the red sign for Sita Ram Diwan Chand on your left hand side.

10g butter/ghee
Water - to make dough
Filling -
Potatoes - 6 boiled
Onion - 1 chopped finely
Coriander Pepper - 1 tsp crushed
Green Chili - 1 large
Ginger - 1 inch
Coriander Leaves - 2 tbsp chopped
Kasoori Methi - ½ tsp
Black Salt - ½ tsp
Ginger chopped - 1 tsp
Cumin Powder - ½ tsp
Salt - 1 tsp
Amchoor Powder - ½ tsp
Dry Maida - 2-3 tbsp
To Make Kulcha -
Dry Flour
Butter
To Serve: Chole & Pudina Imli Pyaaz Chutney
