Moroccan Cuisine: Traditional Mechoui in Marrakech
Traditional Moroccan Cooking at Morocco's #1 Cooking School
Mechoui is the great grilled meat of Morocco. Traditionally made in giant pits in the ground that are lined with terracotta, the whole carcass of the animal is splayed and spitted onto a cross and propped up against the wall, whilst a small pot is laid below to catch the drippings (thus preventing fires or off flavours developing) and a charcoal fire is tended with long paddles at a short distance from the meat. In Marrakech, there a few master grill men that preserve this centuries-old tradition.

MARRAKESH and MOROCCAN FOOD TOUR
MARRAKESH, MOROCCAN FOOD, JEMMAA EL FNA, ATALAS MOUNTAINS
Marrakesh is a major city in the kingdom of Morocco. It is the 4th largest city after Casablanca, Fes and Tangier. Located on the foothills of the Atlas mountains and surrounded by red walls that gave the nickname to the red city, this is Marrakesh.
This city has been on the list of many adventurous people and explores for decades but most recently has become a must visit city for foodies like me and I want to know why.
Moroccan cuisine is one of the greatest in the world and everyone knows that. Think olives, preserve lemons, plenty of fruits, herbs and spices. Influenced by Andalusian Spanish, Arabic and French cuisines, Morocco is a delicious combination of mouthwatering flavours that make it unique.
Marrakesh is home for some of the largest souks(traditional markets) in the country and like in many Moroccan cities the souks are packed with Berber artisan vendors and stalls full of handcrafted products.
Jemmaa el Fna is the busiest square in the whole Africa. During the day is predominantly occupied by orange juice stalls and snake charmers. As the day progresses, the entertainment on offer changes: the snake charmers depart, and late in the day the square becomes more crowded.
The Medina or Old town. Had laberinthine streets that goes on and on almost forever.. but it finishes at a more modern neighbourhood like Gueliz, tourism is growing tremendously so the real state and hotel development is doing so too. Many French celebrities have invested in proprieties here on the past 20 years or more..
The Berbers are the origins of Moroccan people, they are different between because of their clothes, their clays and music. We were delight to try the Tajine made with clay from the Atlas mountains.

Marrakesh, un tempo città imperiale del Marocco Occidentale, è oggi un importante centro economico ricco di moschee, palazzi e giardini. La medina è una cittadella medievale fortificata che risale ai tempi dell’Impero berbero; le sue stradine labirintiche molto affollate sono un susseguirsi di souk (mercati), che vendono stoffe, ceramiche e gioielli. Visibile anche a grande distanza, il minareto moresco della moschea della Kutubiyya del XII secolo è considerato uno dei simboli della città.

Marrakech Travel Doc Part 01
Marrakesh or Marrakech (Amazigh: Murakush, Arabic مراكش Murrakush), known as the Red City, is a city / wilaya with a population of 1,036,500 (as of 2006), the capital of the mid-southwestern Moroccan economic region of Marrakech-Tensift-Al Haouz (#11), near the foothills of the Atlas Mountains. Until a few decades ago, Morocco was known as Kingdom of Marrakesh by Arabs, Persians and Europeans. European names of Morocco, Marruecos, Maroc, Marokko..etc are directly derived from the Berber word Murakush.
Marrakesh city has the largest traditional market (souk) in Morocco and also has one of the busiest squares in Africa and the world, Djemaa el Fna. The square bustles with acrobats, story-tellers, water sellers, dancers, and musicians, as well as drug lords by day; By night, the square turns into food stalls, becoming a huge open-air restaurant with busy life that include the infamous Ladies of the Night (prostitutes).
Like many North African and Middle Eastern cities, Marrakech comprises both an old fortified city (the médina) and an adjacent modern city (called Gueliz). It is served by Ménara International Airport (RAK is the code for the airport) and a rail link to Casablanca and the north.
