Benjamin, can you give us an overview of Lavaux as a wine region? The terroir, the climate?
So, we are here in Epesses. Epesses is an appellation. You have behind me the Dézaley. The terroir here is more calcareous. Where we are right now is really limey, but you can see that most of the vineyards are yellow and this is Chasselas. Chasselas is our grape in the region.
Excellent. And what are the main influences here? How does the lake impact the grape growing? The lake will impact in two ways, or three ways. It will do temperature... how do you say that?
Moderation?
Moderator. And also it will bring that reflection of the sun to the vineyards. So that will heat up more. And also with the moderation we will avoid frosts until now.
Excellent. And you told me that there are three types of sun here in the Lavaux.
Yeah!
What are the three sunshines?
So, the direct one, the walls (which bring a lot of heat during the night), and also the lake - the reflection. And if you want to add a fourth one, it will be the heart of the winemaker!
Ahhhh - wooo! (laugh)
And can you tell us why this is a UNESCO heritage site? And a little bit about that?
So UNESCO is all the region of Lavaux, as you can see maybe behind me it's absolutely stunning. And it was decided to be UNESCO because of the monks here, they started to work in 1100, 1200AD (that's 300 less than Machu Pichu) and people thought that's maybe something and so we started on that.
Excellent, and the retaining walls, they are not just for the erosion but also the heat.
Yeah. They will bring heat, because these are the stones really heating up with the sun during the day will bring heat in the night from the stones mostly all night long.
Excellent. And tell me about the slopes, which way are we facing? And the aspect, the gradient.
So, we are now on the 30 - 35 gradient slope, we are facing south - so the lake, or France, just after the lake. And they can go until 40 - 45% in Dezaley in steepness.
Excellent, and why is Chasselas the main grape here? It was born here you said? And why does it thrive here, why does it do so well?
I think it's a little bit of everything but first as you just said it was really born here, and for us it's just the perfection here because we like to

The Lavaux vineyards
The Lavaux vineyards have been part of the Unesco World Heritage Programme since 2007. It's a tribute to the unique interaction here between man and nature, and is designed to protect the region from creeping urbanisation. The designation has helped to boost visitor numbers by about 30 per cent, but the vineyards the Unesco label is supposed to protect are struggling to survive. (Julie Hunt, swissinfo.ch)

Swiss wine enjoys a renaissance

I'd say we use helicopters quite a lot here, mostly for spraying the vineyard and transporting the harvest, and also for carrying organic matters. If we all rally round then we can get away with costs that are really not that high, and it makes the job a whole lot easier, considering how steep the land is.

Why aren't our wines well-known outside Switzerland? Well, it needs to be said that Swiss wines used to be sold mainly locally, that is to say in Switzerland. For a few years though, the frontiers have been opening up to foreign wines, which means that the quality of Swiss wines has risen. We now have many specialties, new wine stocks, as well as a new and important competition in the Swiss market. It is true that we are now trying to export our production. Between 1% and 2 % of Swiss wines are now exported.

The main function of the stone walls is to support the vineyards because they're located on a sloping land. But the best thing about them is that they also store the heat during the day and thus they keep the vineyards warm at night. That's why we always talk about the three suns here: the first source of heat is the sun, then there's the heat which is stored by the stone walls, and finally there's the heat which is reflected on the vineyards by the lake.

17. SOUNDBITE: (French) Stephane Bossy, worker
The particularity of our job is that we're lucky enough to enjoy a beautiful landscape as well as a fantastic view over the lake and the mountains. There isn't anything like it in Europe or even in the whole world. It's a very special place indeed. Not to mention how pleasant it is to work with people from all walks of life.

You have to move on and have strong calves to do this job, but that's the charm of it really. We know it's a fundamentally trying job.

LEAD IN:
Swiss wine makers are raising a glass to their new-found popularity.
Thanks to the industry enjoying a renaissance, some of the more back-breaking harvesting methods have been replaced by helicopter.
STORYLINE:
Swiss wines have never attracted as much attention as their French or Italian counterparts, but now things seem set for a change.
On the shores of Lake Geneva, firmly in the heart of French speaking Switzerland, Swiss wine making is being carried out.
The small Lavaux wine-growing region, which stretches for about eight miles (12 Kilometres) along the shores of the lake, enjoys a temperate climate that brings a Mediterranean touch to the place.
The region is located between two urban centres, Lausanne (the capital of the canton) and Vevey-Montreux (dubbed the local Riviera).
Here on the steep slopes workers tend to the yearly harvest.
However, this is where traditional harvesting methods end.
In recent times the local wineries have been employing the use of a helicopter to transport grape laden drums to the village.
Bertrand Duflon woks for the local winery.

Domaine Louis Bovard - Dézaley Médinette Grand Cru 2007 - Cully
Domaine Louis Bovard - Dézaley Médinette Grand Cru 2007 - Cully tasted by the Best Sommelier in the World Andreas Larsson.
Lemon Zest, Yellow Fruit, Almond
Bright, with a light golden colour. Pure nose, with a medium-high intensity. It’s offering some creamy notes almost like fresh butter, patisserie; sweet yellow fruit and vanilla. Palate has a good bite, it’s rather medium weight. It has a rounded acidity, a slight hint of evolution as well. Balanced bitterness almost like grape skin, phenols, bitter lemon giving that lift on the palate. Well-balanced, with juicy fresh fruit. Ripe lemon and grapefruit on the finish. Quite long, persistent and pure.

Winemakers of Switzerland's Lavaux Region
As part of their grand Switzerland tour, Jetset Extra's Jason and Mary Anne took a tour of the terraced vineyards in the Lavaux wine region with winemaker François Grognuz of Cave des Rois. They were also introduced to winemaker Christophe Chappuis of Domaine Chappuis and sommelier Jerôme Aké Béda of the restaurant Auberge de l'Onde, who shared stories about the region's winemaking history and, of course, samples of its wine.
