Best Izakaya in Matsumoto Japan
There is a special place in my heart for Bun. Its a very unique place to eat in Matsumoto. Now in my opinion its the best so far of all the places I have eaten so that's a big statement for a gaijin but its the best I have had so far. I have been going here since first visiting Matsumoto ten years ago. Usually its a lively place and the master and his chefs dance behind the counter cooking a vast menu of traditional and modern cuisine both Japanese and western style dishes with a handcrafted homemade touch. All the ingredients are fresh and nothing is sacrificed for the sake of quality. A good selection of sake and a one of a kind setting. The building with its iron shutters and wood work used to be a kimono shop in the early days and reflects the architecture of early modern Matsumoto. The station area has been renovated and many old buildings have been removed but surrounding that area many old structures still survive. Wow I never get tired of the menu as it changes and evolves. Its a must see when visiting Matsumoto. Featured foods listed here are just a fraction of the menu items: Yakitori, whole pieces of breast nankotsu, yakidon, homemade tofu, Japanese omelet, hand made renkon chips and fried avocados. I am truly amazed as to how they can have a fresh daily menu with so many items to choose from. That very night the menu boasted of free range vegetarian fed pork... that's some good tasting yakidon!
Dinner for two.....2 liters of beer, a cup of sake and all you see were just under 6000 yen. We were full when we left.

RICHIE HAWTIN announces plans to launch his boutique Japanese Sake collection ENTER.Sake in Europe and the USA, beginning with an exclusive launch at New York’s celebrated restaurant TAO Downtown.
Hawtin first launched ENTER.Sake in 2012 at ENTER. in Ibiza. What started as a wish to share his passion for Sake and Japanese culture with friends after twenty years of travelling, working, and tasting sake in Japan, led to the launch of Ibiza’s first true sake bar experience, the creation of Hawtin’s own boutique ENTER.Sake collection and one of the most-anticipated pre-parties on the island.
This summer ENTER.Sake makes its US debut, with an exclusive launch at New York restaurant TAO Downtown, the first time ever that Hawtin’s Sake and Shochu brand, created with the Matsumoto Sake Brewery in Kyoto, will be available outside of Ibiza.

These ENTER.Sake options have been personally selected by Hawtin for TAO Downtown, following his extensive trips to breweries throughout Japan. They mark the first in a whole line of sake and shochu that ENTER.Sake plans to release in USA and Europe, with the hope of introducing people around the world to the taste, culture and history of Japanese Sake.
Hawtin, himself a trained Sake professional, will host an exclusive invite-only evening at the restaurant on Friday 26 September, to celebrate the launch of ENTER.Sake at TAO Downtown.

As usual the mundane is more fun in Japan with the extra quality and hospitality added. I also found a great Udon place in Bubaigawara as well so watch and enjoy!

History
Suntory was started by Torii Shinjiro, who first opened his store Torii Shoten in Osaka on February 1, 1899, to sell imported wines. In 1907, the store began selling a sweet tasting red wine called Akadama Port Wine. The store became Kotobukiya company in 1921 to further expand its business. In December 1924, Yamazaki Distillery, the first Japanese whisky distillery, began its production of malt whisky. Five years later Suntory Whisky Sirofuda (White Label), the first single malt whisky made in Japan, was sold.
Due to wartime shortage of World War II, Kotobukiya was briefly forced to halt its development of new products. In 1961, Kotobukiya launched the famous Drink Tory's (Whisky) and Go to Hawaii campaign. At the time, a trip abroad was considered a once-in-a-lifetime opportunity. In 1963, Kotobukiya changed its name to Suntory, taken from the name of the famous whisky it produces. In the same year, Musashino Beer Factory began its production of the Suntory Beer. In 1997, the company became Japan's sole bottler, distributor, and licensee of Pepsi products.
Kisaburo udon shop is located about ten minutes from Bubaigarwara station and there is signage at the station to guide you there. Its well known locally so just ask!

Onsen Hot Spring Bath in Japan
Natural hot springs or onsen are almost everywhere and very popular across Japan. Every region of the country has its share of hot springs and resort towns. Some of the resorts are large and you may find a busy locker room and large shower area without privacy, however getting into the actual tub, after the washing and such, is a very nice experience. A sauna and cooling tub with bubbles may also come with the package. I usually go later at night and get some time to myself in the bath. The whole experience reminds me of Roman times described in text books but with the Japanese way as a model.
There are many types of hot springs, distinguished by the minerals dissolved in the water. Different minerals provide different health benefits, and all hot springs are supposed to have a relaxing effect on your body and mind. Some of these springs are so popular that coffee tea and other foods are made with the exotic tasting water.
Hot spring baths come in many varieties, indoors and outdoors, gender separated and mixed although mixed sex onsen or baths are more uncommon these days. Many hot spring baths belong to a ryokan (traditional Japanese inn), while others are public bath houses. An overnight stay at a hot spring ryokan is a highly recommended experience to any visitor of Japan. At the onsen though you may find geothermally heated spring water, artificially heated but authentic mineral water or a mixture of the two treated for safety. Just to be careful here, some Japanese people make a very strong distinction between the word bath house (sento) and the onsen. Sento are traditionally places to bath as in the old days there were no bathing facilities in Japanese houses or apartments and the price to bath is usually a few hundred yen at most (a couple bucks). The onsen however is a more exotic and recreational event. Some bath houses do have spring water but its not as common. Usually its just tap water with some chlorine in it.

Disrobe and put your stuff in a basket if you have valuables and there are no lockers you may ask for the staff to hold them for you or avoid bringing them. Lockers will have wrist straps for you to carry in the onsen. Most places have soap and shampoo but some will charge if you do not bring your own.
Go to the shower area and bring your small towel not the big one for drying.

Wash your self at a stall. They are usually open areas with several faucets and a stool and they are part of or separated from the actual bathing area.

Rinse yourself and the soap from the towel and get in the tub.

If you get confused just wait and watch what the other Japanese people do it works for me.
Tattoos are usually tolerated if small but if you are covered to any degree you may want to ask first. I have one arm band and never had trouble at either a bath house or onsen. not yet!
Bathing suits are usually not allowed and of course playing splashing or idiotic behavior would horrify patrons. The Japanese onsen is almost a ritual at times so be respectful and calm. If you are nervous you will not enjoy yourself as much. Its all about relaxing. Ahhhhhhhhhhhhhh!

New Years 2013 First Kiki Series
The Kiki series from famous Japanese comedy show Gaki no Tsukai Downtown is a taste test challenge we wanted to try out for ourselfs. In in Japan show they had about 30 different beers from all over the world. We have 11 from America and 1 from the UK.
