Homebrew MEAD Part 2: brewing the Mead
A COMPLETE, STEP BY STEP GUIDE FOR “MEAD” MAKING (HYDROMEL, HONEY WINE). The Homebrew Series.
MATERIALS/TOOLS:
2 fermenting buckets 30 litres with tap
(or carboys, demijohns)
2 airlocks
Plastic stirring paddle 40 cm
Auto siphon with hose
Bottle filler
Bottle brush
Hydrometer (3 scales)
Measuring cylinder
Corker machine
Wine corks
Wine Bottles
PH measuring strips (scale 1 to 12)
Spray bottle
PRODUCTS/INGREDIENTS: for 26 liters Wort
About 24 liters of Mead (potential alcohol degree15%)
Always refer to the product notice
Cleaning agent
Sanitizer (no-rinse)
18 liters Source water
9.5 to 10 kilo of honey
26 gram medium toast oak chips
13 gram mead yeast
(or white wine, champagne, lager yeast)
26 gram yeast nutrient
2.2 to 2.5 gram Camden (potassium metabisulfite)
52 gram of citric and tartaric acid mix
THE HYDROMETER: how it works
3 scales: density, sugar content and potential alcohol degree.
Range:
Density: 0.990 - 1.170 S.G.
Sugar content: 0 - 360 go/l sugar.
Potential alcohol content: 0 - 20 % vol.
The uses:
• To measure the specific gravity (SG) of must and wort of wine, mead, beer.
• To determine progress of fermentation.
• To estimate potential alcohol percentage at time of yeast pitching.
• To calculate percentage of alcohol (using before and after reading
To measure potential alcohol of your mead or wine, two readings will be required. The first will be before fermentation commences, the second when fermentation stops.
The second figure is to be subtracted from the first; the result is your alcohol percentage by volume.
Example:
1st. Reading 14%
2nd. Reading -1%
Alcohol Content 13%
Write down your measurements and amount of ingredients in a little notebook; it’s the best way to progress.
HONEY:
Raw honey is honey (nectar from flowers) that is pure, unheated, unpasteurized and unprocessed. This is perhaps one of the most important characteristics and health benefits of the final product, as it preserves all the natural vitamins, enzymes, phytonutrients and other nutritional elements
The vitamins present in honey are B6, thiamin, niacin, riboflavin, pantothenic acid and certain amino acids. The minerals found in honey include calcium, copper, iron, magnesium, manganese, phosphorus, potassium, sodium and zinc.
