Taste Master: Eat Perth
Rich Keam, Taste Master Western Australia ( is taken on a roving food tour of the city by Perth local, Laura Moseley. Right in the heart of Perth's summer festival season this is the right time to be exploring food in the city.
#EATPERTH
In recent years Perth has seen fresh spark enter it's streets. Historic buildings, spaces, corners, and laneways are being reactivated by passionate and creative entrepreneurs. Small bars, cosy bistros and restaurants, late night dining, pop up shops, street food and farmers markets are at the very heart of this change. It has never been a better time to taste what the city has on offer. Better still, many of these new haunts are showcasing Western Australia's best fresh, local and seasonal produce.
Established festivals like Perth International Arts Festival have held strong, but many new ones have popped up including Fringe World Festival and a multitude of hyper-local street festivals.
Together Laura and Rich explore where old meets new in the city. From Perth's King Street and Barrack Street, to Northbridge's William Street and Cultural Centre; it's a busy day of eating, drinking and relaxing in the sun. Along the way they meet some of the people at the heart of Perth's vibrant food scene.
Stop One: Uncle Joes Mess Hall.
A repurposed space, fitted out with reused and recycled materials is one of the best places to get a coffee in the city. It also happens to be a Barbers shop as well. A trim and a coffee - what more do you need? Whilst there, Laura and Rich meet up with Dan Ash of Micrology Coffee Roasters, one of the city's many micro roastaries. He provides all of Uncle Joe's coffee and is also behind their latest offering: cold drip coffee.
Stop Two: Toastface Grillah.
Mike O'Hanlon is part of the team behind Toastface Grillah. On a laneway between Wellington Street and Barrack Street they are serving up grilled cheese that will change the way you look at the humble toatie.
Stop Three: Delish Ice
Katie Earl is the owner of Delish Ice. From a batch of homemade ice pops sold from a vintage caravan she's now opened a Pop-Up shop on William Street. She also has two vintage vans, carts and a growing range of artisan ice pops - Salted Malted Caramel using brewing wort (the sweet mixture that goes into creating beer) as well as Basil and Elderflower (in which she uses botanicals found in Gin). From kids to adults to grannies, this summer she's had people lining up to get a taste of her ice pops.
Stop Four: Kakulus Bros.
Evan Kakulas is the owner of one of Perth's food and cultural icons. Evan's grandfather started Kakulas Bros. back in 1929. They started off importing olives from Alexandria and now sell all manner of spices, coffees, flours, nuts, dried fruits, teas, cheeses, meets, sweets. The shelves contain a mix of local and international ingredients, with an emphasis on the family's Greek heritage. A visit to Northbridge isn't complete without picking something up here.
Stop Five: Mechanics Institute
Cocktails (Beach Bums) on the rooftop terrace overlooking the city. Famed for its mixology, hip bartenders and daily changing drinks menu, it is a key a player in the small bar scene. Order a burger from the downstairs Flipside and your night is complete.
Stop Six: Bivouac Canteen & Bar
In setting up Bivouac with his wife, Anthony Princi was at the start of a new movement of small restaurants on William Street. Much of the produce on the menu comes from their family farm. Top tip here is the gnocchi and the Gingin goat chops.
Stop Seven: Urban Orchard
An orchard right in the middle of the city, in front of the West Australian Art Gallery and on top of a car park. Aside from picking some vegetables you can also grab a beer and watch the sun go down. Perfect before catching a show or performance in the cultural centre.
Rich Keam is originally from Portsmouth, UK. He was one of 1000s of entrants to Tourism Australia's Best Jobs in the World campaign. He arrived in Perth in August 2013 to take up his prize job as Taste Master of Western Australia. Eating and drinking his way around the state... Hard job right? You can follow Rich's adventures on tastewesternaustralia.com on Twitter @richkeam or Instagram @tastemaster_wa
By day Laura Moseley works at Thermomix Australia, where she is kept busy in the creative marketing team. By night she moonlights as Food Curator for various street fairs, including Perth's biggest ... The Beaufort Street Festival. Laura is well known as the go to girl for all things food. You can follow Laura on Twitter and Instagram @lauramoseley82

Australia: A Nuclear Future?
Australia: A Nuclear Future?
(Barry Brook, Gus Nathan, Kim Talus)
With the obvious urgent need to reduce our reliance on fossil fuels and the global demand for energy rising exponentially, nuclear energy may be the only non-carbon-emitting technology capable of meeting the world's requirements.
The nuclear industry's image has been compromised by the threat of weapons proliferation, reactor malfunctions and the storage of radioactive waste. However, today's proponents argue that improvements in reactor design have made them safer, as well as more fuel-efficient and cost-competitive to build, compared with coal plants.
With renewable energy sources currently unable to provide enough baseload power, is nuclear energy our best option for reducing carbon emissions? Will the next generation of reactors make nuclear the clean, green option?
Participants in the panel discussion include energy technology entrepreneur Gus Nathan, environmental scientist Barry Brook, and international energy law expert Kim Talus.
Talus is especially critical of the absence of balanced and objective discussion about nuclear energy in Australia, the polarised positions akin to a religious issue.
He also opines the lack of public education and industry expertise. Brook is convinced a very fast reactor is something Australia should be strongly considering.
Thinking Critically About Sustainable Energy: A Nuclear Future is the fourth of a series of public forums hosted by RiAus aimed at providing a comprehensive examination of sustainable energy technologies and a critical evaluation of their potential for reducing carbon emissions.
The event is in association with the Centre for Energy Technology, the University of Adelaide's Environment Institute and the Institute for Mineral and Energy Resources.
-------------------------------------
Gus Nathan is Director of the Centre for Energy Technology. His research career has been aimed at developing sustainable energy technologies, spanning combustion and emissions control, bio-fuels, the mechanics of single and two-phase flows, and geothermal, solar and wind energies. Within these fields he has authored or co-authored some 60 papers in international journals and 110 for peer-reviewed conferences, delivered keynote lectures at international conferences, and applied for seven patents which have been filed or granted internationally. Professor Nathan led the design team for the award-winning fuel and combustion system for the Sydney Olympic Relay Torch.
Barry Brook is an environmental scientist known for his lively blog at bravenewclimate.com. He is currently Sir Hubert Wilkins Chair of Climate Change at the University of Adelaide's Environment Institute. Brook completed his PhD at Macquarie University on the subject of population viability analysis in 1999. He has a background in biodiversity management and conservation ecology. Brook's work focuses on global environmental change, and the impact that climate change and global warming are having on traditional risks to natural systems. In recent years he has become a respected commentator on energy policy, and has conducted considerable research on systems modeling for sustainable energy. He recently co-authored with Ian Lowe the book Why vs. Why: Nuclear Power.
Kim Talus is a lecturer in International Energy and Resources Law at the UCL School of Energy and Resources, Australia. Previously, Kim worked as a researcher at the Institute of International Economic Law at the University of Helsinki where his research focused on European Union energy law. He has also worked in private practice and at the Finnish Ministry for Foreign Affairs. Talus has received several international awards for his work, including the 2008 Scholarship Award of the International Bar Association.

Victoria Vesna and James Gimzewski - Zero@wavefunction, Responsive Environment/ Nano Art, 2001
Zero@wavefunction allows visitors to experiment with a large-scale projection of buckyball molecules programmed to respond to the touch of their shadow. Subtle action affects the buckyballs, replicating atomic behavior.
Albert Einsteins greatest contribution to humanity is the discovery that matter and energy are inter-convertible. Matter appears, changes and disappears. Nothing is solid, not even a rock. The atoms and electrons in a rock are subtle and alive just as the ocean is. These particles are described in quantum mechanics by a complex function known as a wavefunction. A wavefunction contains all the probabilities and energetic possibilities of particles: (space, energy and sometimes time). These wavefunctions are basically connected and when two come close, they are both changed. In fact they have a probability to create nothing: zero.
Zero@wavefunction installation and interactivity is based on the way a nanoscientist manipulates an individual molecule (billions of times smaller than common human experience) projected on a monumental scale. When a person passes by, they cast a larger than life shadow on the molecule and activate responsive buckyballs. The visualizations are of buckyballs that respond via sensors to the movement of the persons shadow and the possibility of manipulating the molecule emerges.
Zero@wavefunction is one of a few collaborative art and science projects of Victoria Vesna, a media artist, and James Gimzewski, a nanoscientist. Both are professors at UCLA, home to the recently formed California Nano Systems Institute (CNSI). They first started their dialogue during a conference entitled from Networks to Nanosystems in November 2001. Soon thereafter, Gimzewski opened his lab to Victoria Vesna and together they initiated a number of projects whose goal is to make nanoscience more accessible and understandable to the broader public. At the same time they are interested engaging the audience in probing larger philosophical questions about the impact of this emerging science on the culture at large.
For the past six months they have worked together on developing projects such as: the official CNSI web site; a streaming video project, Windows to Nanotechnology and a major installation, Zero@Wavefunction that it has been premiered at the Biennial of Electronic Arts in Perth, Australia, August, 2002. There is no lead person in this collaboration it is a true back and forth exchange of wavefunction energy. There is no contract it is a collaboration based on their true interest in each others worlds.
Nanotechnology is a brave new world and within it there are dangers and immense opportunities to change not only world economy, but the entire structure of society and the environment of the planet. It has no clearly articulated vision or direction and is generally not understood but greeted by wonderment, curiosity, fear and distrust by the public.
