GET THE PISSALADIERE RECIPE:
Hello!
Pissaladiere is a traditional recipe from the South of France, sold in many bakeries as a starter or snack. It is a pizza base topped by Mediterranean caramelized onions, anchovies and olives.
GET THE WRITTEN RECIPE:
Ingredients Dough
250 ml water
1 tbsp olive oil
450 gr flour
1.5 tsp salt & pepper
1 tsp caster sugar
1 package bread Yeast
Topping
1 kg onions
200 gr anchovies stored in salt
100 gr black olives
3 cloves clove of garlic
olive oil
Instructions
1. Pour the ingredients into the machine and set the program for fresh dough, number 13 on the Kenwood. NB: when using the bread machine the ingredients should be placed in the exact order as listed above, liquids first.
2. For best result, let the dough rest in the fridge overnight, well floured and wrapped in a plastic bag, so it does not crawl all over the fridge.
3. Peal the onions and cut them very finely
4. Wash, clean and debone the anchovies filet. Leaves some anchovies aside for the topping decoration.
5. In a large frying pan fry the garlic cloves crushed and the anchovy’s filets. The anchovies will melt into a cream.
6. Put in the onion and stir-fry over medium heat until they become translucent.
7. Then lower the heat and simmer for a good 30 minutes. Add water if too dry.
8. Normally you should not need to add any salt as the anchovies are already very salty.
To make Pissaladiere pizzette
9. Roll the dough flat and cut it into small circles
10. Let them rest few minutes while the oven heats up at 200 C. If you have a pizza stone put it in the oven so they will be hot.
11. Put the circles on the pizza stone and put a spoon of the onion mix and half olive with a small piece of anchovies. I made some with only the onions to add some variety.
12. Cook for 10 minutes and continue with the rest of the batch. They can be served at room temperature but it is best to eat them the same day.
For the large pissaladiere
13. Roll the dough and lay it on the hot pizza stone
14. Top it with caramelized onions, anchovies filets and unpitted olives
15. Cook in a hot oven at 200C / 400 F for 10 minutes

Join me in this video as we travel back to the luxurious Côte d'Azur, visiting Beaulieu-sur-Mer and Cap d'Ail (Cape of Garlic in English). We will visit that splendid Greek Villa Kerylos with its old world Greek architecture and style, overlooking the turquoise waters of the Mediterranean Sea and a gorgeous pastel coloured villa belonging to that famous actor David Niven! For those of you who don't know who him - he acted in Casino Royale and the Pink Panther among many other successful films.
From here we walk to Cap d'Ail - another glorious and stunning seaside town with its exclusive Plage Mala that's the usual haunt of the rich and famous. This town has had various celebrity residents over the years including Greta Garbo and Winston Churchill.

St-Paul de Vence in the south of France
St-Paul de Vence in the South of France is one of the best preserved and prettiest medieval villages in all of Europe. We're going to take you on a walk straight through the middle of St-Paul on the main pedestrian lane from one end of town to the other and later working to show you all the little side streets. Located on the Cote d'Azur along the French Riviera in Provence, this village is one of the prettiest in Europe. The cobblestone lanes here are among the finest that you will ever see.
When you reach the far end of the main lane you exit through another gateway arch and then there's a staircase that leads your right up onto the wall with a lovely viewing platform where you can see across the distant landscape.
The walks round the walls are in part wider, and the small gardens of the houses sloping down to them, with the dark foliage and golden fruit of their orange groves, form a beautiful foreground to the lovely views that are visible off in the distance in every direction.
Saint-Paul de Vence's town wall dates from the 16th century as we see it today and it hugs the contours of the rocky spur on which the village stands, forming a 1 km perimeter that has undergone only slight modifications since the 16th century.
