8. SOUNDBITE (English) Neil du Plessis, Tasting Room Manager, Fairview Wine Estate:
Our Fairview shiraz is made to be drunk a little bit younger so it will definitely be nice and fruit-forward. It would have a firm mouth feel to it. It does have the typical shiraz characteristics of, kind of, cloves, nutmeg, a little bit of spiciness and a nice dry finish. We make our Fairview shiraz quite young so it's nice and juicy. And with ageing potential of about 3 to 5 years, I would say.

Now I'm producing what is considered one of the best olive oils in the world - absolutely the best in South Africa. And also a very good - one of the best - the best wine in South Africa. French style the wine, Italian style the olive oil.

30. SOUNDBITE (English) Guilio Bertrand, owner of Morgenster wine estate:
I like to produce a Bordeaux blend, but it's not Bordeaux, because it's produced in South Africa. Like I was saying before for the trees - the olive trees - it is the same for the wine. I have French varieties, produced here, but it's a South African wine.

39. SOUNDBITE (English) Milton Makhaza, Sommelier:
What makes South African wines special, firstly, they are made in South Africa. But our climate is one influence that is very good for our wines. We've got, for example, like Stellenbosch, quite very warmer. We tend to produce wines that are a little bit more fruitier, and a little bit more sweeter. If you compare to a country like German, at least 75 percent of their wines produced is white wines. They cannot produce more of red wines because of their low sunshine levels that they get. So what makes ours very special, that we've got a very good climate, especially when it comes to Cape Town, which is very good for grape varieties to make fantastic wines.
