My father brought me here when I was a little boy. I started to learn bit by bit and when he retired I took over. He taught me everything I know about nougat, even though there are no major secrets. Some instinctive knowledge regarding timing and ingredients, that's all. And treating nougat with tenderness, of course!

A Jijona tablet is what it is. Sugar, honey, almonds and that's it. The same goes for the harder Alicante variety. They're just Jijona and Alicante nougat, simple as that.

The Jijona and Alicante denominations of origin carry a big responsibility on their names, because this is the world's best nougat.
Jijona is the world's cradle of nougat. This means a great compromise for us, and we try to keep up day by day and year after year. It has been like that for ten generations.

We have inherited this legacy from the Arabs centuries ago. We have adapted that culinary culture to our region as a result of mere chance and popular inventions. Both honey and almonds are typical from this region. The Arabs brought the cane sugar and we have been able to elaborate a unique product with its own characteristics that enabled us to obtain the denomination of origin on a European scale.

We are a very traditional company and a lot of our production is hand made because that's what our clients demand. Some mixes cannot be obtained by means of automatic machines or any kind of modern process, so we have to maintain the traditional method.

The town of Jijona in southern Spain is the cradle of turr�n, a type of nougat candy made from almonds, honey and sugar.
This sweet introduced by the Arabs during the Moorish domination five centuries ago has become Spain's most famous Christmas export.
STORY LINE:
Turr�n (a type of nougat) appears to be of Arab origin.
It is known to have existed at least since the sixteenth century in the Spanish city of Jijona (Xixona in Valencian language) in the southern province of Alicante.

Toledo (Spanish: [toˈleðo]) is a city and municipality located in central Spain; it is the capital of the province of Toledo and the autonomous community of Castile–La Mancha. Toledo was declared a World Heritage Site by UNESCO in 1986 for its extensive monumental and cultural heritage.
Toledo is known as the Imperial City for having been the main venue of the court of Charles V, Holy Roman Emperor, and as the City of the Three Cultures for the cultural influences of Christians, Muslims and Jews reflected in its history. It was also the capital from 542 to 725 AD of the ancient Visigothic kingdom, which followed the fall of the Roman Empire, and the location of historic events such as the Visigothic Councils of Toledo. Toledo has a long history in the production of bladed weapons, which are now popular souvenirs of the city.
People who were born or have lived in Toledo include Brunhilda of Austrasia, Al-Zarqali, Garcilaso de la Vega, Eleanor of Toledo, Alfonso X, Israeli ben Joseph, Halevi and El Greco. As of 2015, the city had a population of 83,226. and an area of 232.1 km2 (89.6 sq mi).

Grenoble (; French pronunciation: [ɡʁənɔbl]; Arpitan: Grenoblo) is a city in southeastern France, at the foot of the French Alps where the river Drac joins the Isère. Located in the Auvergne-Rhône-Alpes region, Grenoble is the capital of the department of Isère and is an important European scientific centre. The city advertises itself as the Capital of the Alps, due to its size and its proximity to the mountains.
Grenoble's history goes back over 2,000 years, to a time when it was a small Gallic village. It gained somewhat in stature by becoming the capital of the Dauphiné in the 11th century, but Grenoble remained for most of its history a modest parliamentary and garrison city on the borders of the kingdom of France.
Industrial development increased the prominence of Grenoble through several periods of economic expansion over the last three centuries. This started with a booming glove industry in the 18th and 19th centuries, continued with the development of a strong hydropower industry in the late 19th to early 20th centuries, and ended with a post-World War II economic boom symbolized by the holding of the X Olympic Winter Games in 1968. The city has grown to be one of Europe's most important research, technology, and innovation centers, with each fifth inhabitant working directly in these domains.The population of the city (commune) of Grenoble was 160,215 at the 2013 census, while the population of the Grenoble metropolitan area (French: aire urbaine de Grenoble or agglomération grenobloise) was 664,832. The residents of the city are called Grenoblois.
The many suburb communes that make up the rest of the metropolitan area include three with populations exceeding 20,000: Saint-Martin-d'Hères, Échirolles, and Fontaine.

Grenoble (; French pronunciation: [ɡʁənɔbl]; Arpitan: Grenoblo) is a city in southeastern France, at the foot of the French Alps where the river Drac joins the Isère. Located in the Auvergne-Rhône-Alpes region, Grenoble is the capital of the department of Isère and is an important European scientific centre. The city advertises itself as the Capital of the Alps, due to its size and its proximity to the mountains.
Grenoble's history goes back over 2,000 years, to a time when it was a small Gallic village. It gained somewhat in stature by becoming the capital of the Dauphiné in the 11th century, but Grenoble remained for most of its history a modest parliamentary and garrison city on the borders of the kingdom of France.
Industrial development increased the prominence of Grenoble through several periods of economic expansion over the last three centuries. This started with a booming glove industry in the 18th and 19th centuries, continued with the development of a strong hydropower industry in the late 19th to early 20th centuries, and ended with a post-World War II economic boom symbolized by the holding of the X Olympic Winter Games in 1968. The city has grown to be one of Europe's most important research, technology, and innovation centers, with each fifth inhabitant working directly in these domains.The population of the city (commune) of Grenoble was 158,180 at the 2016 census, while the population of the Grenoble metropolitan area (French: aire urbaine de Grenoble or agglomération grenobloise) was 687,985. The residents of the city are called Grenoblois.
The many suburb communes that make up the rest of the metropolitan area include three with populations exceeding 20,000: Saint-Martin-d'Hères, Échirolles, and Fontaine.

San Juan (; Spanish pronunciation: [saŋ ˈxwan]; Saint John) is the capital and most populous municipality in the Commonwealth of Puerto Rico, an unincorporated territory of the United States. As of the 2010 census, it is the 46th-largest city under the jurisdiction of the United States, with a population of 395,326. San Juan was founded by Spanish colonists in 1521, who called it Ciudad de Puerto Rico (Rich Port City). Puerto Rico's capital is the second oldest European-established capital city in the Americas, after Santo Domingo, in the Dominican Republic. Several historical buildings are located in San Juan; among the most notable are the city's former defensive forts, Fort San Felipe del Morro and Fort San Cristóbal, and La Fortaleza, the oldest executive mansion in continuous use in the Americas.
Today, San Juan is Puerto Rico's most important seaport and is the island's manufacturing, financial, cultural, and tourism center.
