After traveling through India, we took a flight from Delhi to Kathmandu. I was excited to explore a bit of Nepal, and we first began our explorations in the largest city of Kathmandu. Kathmandu is a beautiful city and there are quite a few things to do. But as a foodie traveler, I was of course most interested in sampling Nepali food and also Nepali street food, which I knew very little about before visiting Nepal.
In Kathmandu, there's not a lot of street food when you compare the city to a place like Bangkok. There are some stalls, but many of the street food is housed in small tiny little restaurants where you pull back a curtain and sit on small tables and benches to enjoy home cooked noodles and momo dumplings. Around the Boudha stupa (also known as Boudhanath stupa) in Kathmandu, there are some good Nepali street food carts, many of them serving a mixture of both Tibetan and Nepali street food snacks.
When I saw this cart that was cooking something extremely delicious smelling along with a pair of very friendly vendors, I knew I'd have to give it a sample. The vendors were very happy to be featured and I quickly ordered two items from their menu. All their street food were stacked within the glass encased cart and as soon as someone would order something, they would quickly dunk it into the hot oil until hot through and through. The vendors would then put them on top of a piece of newspaper, and slice them into pieces. Depending on your personal preference, the vendor would then scoop on a spoon of hot sauce to add extra flavor and complete the Nepali street food snack.
I started by street food sampling with a buffalo shapale, which is a Tibetan Nepali meat pie. It was filled with minced buffalo and possibly some onions. The flavor was great from the meat and it was improved by the hot and salty chili sauce. Next up was something known as an aloo chop, which is basically a deep fried potato cutlet. It was incredibly good, a ball of spicy mashed potatoes that were crispy on the outside and flavored so wonderfully. For my final Nepali street food snack this round, I couldn't resist a small piece of Nepal style fried chicken. The meat on the little drumstick was pushed all the way to the end so it provided a chicken handle with which is hold while enjoying the chicken. The chicken was pretty delicious, a proper street food snack. Thanks for watching this Nepali street food video and hope you can enjoy these snacks when you visit Kathmandu!

Nepali Newari Food - Extremely Unique Samay Baji in Kathmandu, Nepal!
Newari food is one of the most unique Nepali foods to try in Nepal!

Before flying into Kathmandu, I can honestly say that I had never even heard of Newari food. I didn't even know what it was when I first arrived, but I began to see signs for Newari restaurants and after doing a bit of research and exploration around Kathmandu, I was able to have my very first plate of a Newari dish known as Samay Baji.
First of all, Newars are the group of Nepali people that are originally from the Kathmandu valley area, they are the local ethnic Kathmandu population. So in reality, Newari food is originally from Kathmandu. Located just a very short distance from the touristy district of Thamel street, is a restaurant that's tucked into a semi abandoned strip mall known as Shree Trishakti Newari Restaurant. I was actually eating at the Chinese Sichuan restaurant upstairs when I noticed this Newari food restaurant, so the next day I decided to drop by for a meal. And what a meal it was!
It was one of those meals that I had no idea what to order, but I wanted to order and eat everything. The vendor suggested that I try the mixed plate, a plate of something called samay baji. And so, it was my very initial time in Nepal to eat a plate of samay baji, a dish so good and so unique that I hope it becomes popular worldwide!
Newari culture, like much of Asia, very much revolves around food and festivals. Rather than breakfast, lunch, and dinner, in Newar culture there are snacks, meals, and feasts - and I think you just eat when you're hungry, choose your type of food - but of course feasts are not an everyday occasion. Newari food utilizes a lot of local spices like turmeric and cumin, combined with fresh vegetables and lots of buffalo meat. The main difference between any other cuisines that I've ever had is the significant use of something known as beaten rice, or in Nepali, baji or chiura.
So what is a samay baji in Newari food? Well she first grabbed a metal plate and then assembled a small pile of beaten rice on the side. From there she added some roasted nuts, chickpeas curry, potato curry, some kind of vegetable curry, and finally a spoonful of buffalo curry. I was so excited to dig in as soon as she delivered my samay baji to the table. It looked and smelled wonderful! How did it taste? The flavors were remarkable, quite spicy, and very heavy on the spices as well. At first I though the beaten rice, which sort of reminded me of uncooked oatmeal, would be hard and dry. But somehow as soon as I would mix it with sauce and other food in my mouth it would quickly become dehydrated and easy to eat. The texture was still a little crunchy, but it was really good. The curries were all brilliant. I highly enjoyed my plate of samay baji and I would eat Newari cuisine again in a heartbeat. If you ever visit Nepal or if you ever have a chance to eat Newari food, you better not miss it, it's an awesome cuisine!

Ingredients:
Buckwheat flour 300 g
Water 600 ml
Salt to taste
Directions:
1. Heat water
2. Add buck wheat flour slowly into the water by stirring it continuously. Once the flour absorbs all the water add salt and serve hot.

Ghundruk ko achar
Ingredients:
Ghundruk (fermented leafy green vegetable) - 60 g
Garlic flakes - 6 g
Cherry tomato - 5 whole
Mustard oil - 5 ml
Chilli powder - 5 g
Leek - 15 g
Lemon juice - 5 ml
Salt to taste
Direction:
1. Soak gundruk for one hour and stain.
2. Add roasted cherry tomato, garlic flakes, leek, chili powder, lemon juice, mustard oil and salt.
3. Mix all the ingredients together and serve.

Pork Ledo Bedo
Ingredients
Diced pork - 200 g
Mustard oil - 30 ml
Onion slices - 250 g
Ginger / Garlic paste - 15 g
Turmeric - 5 g
Whole garam masala
Chili chopped - 5 g
Tomato paste - 25 g
Wild peppercorn - 4 g
Cumin powder - 5 g
Coriander powder - 5 g
Chili powder - 5 g
Salt to taste
Coriander, chopped - 10 g
Directions:
1. Heat the pan, add oil, whole garam masala, onion, ginger / garlic paste
2. Add diced pork and let it cook for 15 minutes then sprinkle turmeric powder, chili powder, cumin powder, coriander powder and garam masala
3. Cook further for 15 minutes and add tomato paste
4. Now cover with a lid and cook for 15 more minutes.
5. Once well-cooked, add salt, wild peppercorn and coriander to finish.

Khasi Ko Masu
Ingredient
Diced Mutton 200 g
Mustard oil 30 ml
Onion slices 20 g
Ginger Garlic paste 15 g
Turmeric 5 g
Whole garam masala
Chilli chopped 5 g
Tomato paste 25 g
Cumin powder 5 g
Coriander powder 5 g
Chilli powder 5 g
Salt to taste
Coriander chopped 10 g
Directions
1. Heat the pan, add oil, whole garam masala, onion, ginger / garlic paste
2. Add diced mutton and let it cook for 15 minutes then sprinkle turmeric powder, chili powder, cumin powder , coriander powder and garam masala.
3. Cook further for 15 minutes and add tomato paste.
4. Now cover with a lid and cook for 15 more minutes.
5. Once well-cooked, add salt and coriander to finish.

Dal Bhat दालभात is said to be the national traditional dish of Nepal with lentils, rice. Dal Bhat means lentil and rice - so its easy for travelers to get confused- but in Nepal, it also means the entire dish or plate with at least four to seven other dishes!

Kathmandu Food Tour I HUGE Thakali Thali + BEST Noodle in Nepal + Sekuwa BBQ + Tibetan Street Food

As a part of our maiden international food exploration, we have arrived at Nepal, a small yet ravishingly beautiful country with a rich cultural heritage, incredibly friendly and fun loving populace and fascinating food traditions. The country combines magnificent views of the Himalayas, temples, quaint hill villages and flourishing wildlife watching to offer one of the world's great travel destinations. Our first culinary destination here is the capital city Kathmandu. We are on a gastronomic tour of this endearing city with our gracious host Kamal Bhatta. Kamal is a filmmaker and a food enthusiast. He shares a deep bond-which reflects in his suggestions of places for food and the stories that he shared- with this quaint city. We are immensely grateful for his inputs and guidance.
Our first food stop was a roadside stall in the marketplace at Kathmandu Durbar Square serving a basic breakfast fare comprising of dry potato sabzi, fried eggs and dry black chana preparation. This wholesome combination is the preferred food of the working class masses.
From their we went to have the famous Thakali Thali at Thakali Bhanchha Ghar. It is a set menu from the Thak Khola region of Mustang, Nepal. This quintessential platter consists of 7-8 items like rice, black daal, dhedo(cooked buckwheat dough), lightly spiced meat, aloo bhujuri, saag (spinach), chicken gravy, gundruk and an assortment of pickles.
Next Kamal took us to the Boudha area where there is this huge Boudhanath Stupa. Being a Tibetan establishment, the dominant food here is the Tibetan food. So we went to Khawa Karpo Tasty Noodles factory for plate of hot and delicious in house noodles. Here we first saw the preparation of the noodles from scratch and then tried a plate of freshly made noodles with shredded omelette was simply one of the best noodles.
Next was the turn of Zomsa restaurant for this popular breakfast dish called Ponche which is a well made, soft bao filled with cooked minced meat.
From there we arrived at CD Laphing center which reportedly serves the best Laphing in the city. This Tibetan delicacy is loved for its warm, spicy and comforting taste. The yellow coloured Ala were more delicious than the plain Laphing. Both were served with soya sauce, chilli oil etc.
We then headed on to have another Tibetan delicacy Ashabhaley. It was a variation of the Shabaley which is mostly fried. But this pan roasted dough parcel stuffed with a mildly flavoured minced meat mixture was quite yummy. The fun part was the juices from the meat that had drenched the mince.
Our final destination of the day was a very popular place named the Yangtaru Sekuwa corner. The kitchen was hub of barbecue where marinated pieces of chicken and pork were being grilled on trays kept inside closed ovens. The indigenous grilling technique results in the most toothsome barbecue meat. It is a must try if you are here for food. We thoroughly enjoyed the soft, succulent and meaty chicken sekuwa and chicken wings.
The day was super gratifying. Watch out for other parts in this series.

Nepali Food and Bhutanese Food - DELICIOUS FEAST and Traveling to Haa Valley, Bhutan (Day 7)
On Day 7 of our trip to Bhutan, we first started off by eating an amazing Bhutanese food breakfast. For lunch we enjoyed one of the best Nepali meals I’ve had. And finally in the late afternoon, we drove to Haa, Bhutan, and checked into a homestay.
Yangkhil Restaurant and Bar - For breakfast, Yinga and I went to Yangkhil Restaurant and Bar to eat a local Bhutanese food breakfast. When we arrived, they hadn’t yet finished cooking all the dishes, but they did have a few dishes ready. The dish of the meat was the shukam shakam datshi, dry white chilies with dry beef in cheese. Additionally, the chili sauce here was on point!
Nepali food at Cypress Hotel - For one of the best Nepali food restaurants in Thimphu, Bhutan, you hafe to go to Cypress Hotel. It’s a small friendly family run Nepali restaurant and they serve outstanding food. We had a Nepali feast, we couldn’t stop eating because it was so good.
In the afternoon we then continued on to Haa Valley, Bhutan, where we’d spend the next couple days. It’s a beautiful place in Bhutan to visit. We checked into Haa Valley Farm Stay (Ugyen & Doley) and then had a delicious Bhutanese home-cooked meal including turnip leaves, dry pork and beef, and cheese.

Dal Bhat (दालभात) - Delicious Nepali Food Meal (Motherly Cooked)
Dal Bhat (दालभात) is one of the most typical Nepali food meals available in Nepal. For more information check out my website:
No matter what area of Nepal you are in, when you're looking for delicious home cooked Nepali food, you'll find dal bhat. The great thing about dal bhat is that it's a delicious meal. Dal means soup, which is usually a lentil soup similar to the Indian version of dal, but a little soupier. Bhat on the other hand is a main staple starch, which normally indicated rice, but if rice is not available, it can mean another form of starch to go with the sides.
A meal of Nepali dal bhat (दालभात) all begins on a big metal plate which is piled high with rice. The dal soup is normally place in a small metal bowl and served on the side. While this is the barebones Nepali food combination, usually more sides are added to make the meal more complete. Dal bhat tarkari (दाल भात तरकारी) for instance, is the rice and dal combination along with a side of seasonal vegetables - often some kind of green vegetable fried up or curried cauliflower. Also, if you like to eat meat, there's often the option of ordering chicken, buffalo, or beef curry to accompany your meal. I personally loved chicken and buffalo curry and also a dish they call chicken chilly.
For this particular Nepali food meal I was just wandering around Kathmandu, actually getting my Thai visa, when I became extremely hungry. Nepali local restaurants are often hidden from the road by curtains which you have to pull back in order to see what's going on. This was why it was sometimes hard to find food in Nepal, because restaurants are often hidden by drapes. But nevertheless, peek your head into a curtain and there's usually something delicious. This small neighborhood restaurant was owned by a motherly lady who had a selection of delicious dishes all prepared when I arrived. I just ordered the dal bhat (दालभात) and when she asked me if I wanted chicken, I couldn't resist. A plate of rice, peas and potatoes curry, chicken curry, and dal was what came with my meal. After downing my first helping, she then brought more more and more food, a bowl of chickpeas that were slightly cold and still quite firm, and a soft boiled egg, which I was extremely excited about.
The egg was soft boiled so the yolk and even some of the white were still soft and perfect to go over my plate of rice. Along with some of the achar chili sauce, a sort of Nepali food salsa, the egg was incredible! Dal bhat makes a wonderful and fulfilling meal when you're in Nepal. It's served fresh, it's for the most part nutritious, and it really satisfies when you're hungry!

As a part of our ongoing Nepal Food Series, we are at Bhaktapur or the City of Devotees to explore it unique food traditions. It is named so as it has three major squares full of towering pagoda style temples that boasts of some of the finest religious architecture in the country. The remarkable structures- with exquisite wood carvings and metal craft- pervading the cityscape, transported us to ancient times. Moreover the car free city centre is a happening spot teeming with tourists and locals. As you stroll down the street, you discover how art and craft occupies a significant place in the culture of Bhaktapur.
In our gastronomic exploration at this sleepy city we are joined by our foodie host Kamal Bhatta who has deep knowledge about the culture and traditions of this place. The menu out here on the streets is mostly Newari food. Come let’s see what all did we try.
Before starting for Bhaktapur, we relished some popular street side breakfast items at the main marketplace in Kathmandu. We bought some Gwaramari(round, fried sweet bread), Malpua, Sel Roti(ring-shaped, sweet rice bread), Jerry(similar to Jalebi) and Swaari(thin, soft puri). These were accompanied by milky tea just like the locals prefer. The most delightful thing about the eating experience was witnessing them prepared fresh. The dishes were simple, familiar but yummy and filling.
On reaching Bhaktapur, we embarked on a pleasant stroll down the lanes of this heritage city in search of yummy food. Our first stop was a sweet shop where we tried Balbara and Gudpak. The first one is a sweet, crisp, deep fried, sugar glazed flatbread while the second one is a traditional fudge like sweet made with khoya, gond, ghee, nuts, etc.
Next we passed by another sleepy lane where people-kids, young and old-were relaxing on the raised verandah of the native buildings, to have fresh and hot aloo chop or potato fritters. We loved the mildly spiced fritters served with a spicy chutney.
Our next food destination was an eatery at Kamalvinayak, whose Choila, Thon and Aloo Tama are quite popular with the locals. Choila which is a meat based appetizer was lip smacking. No wonder it effortlessly complimented the traditional rice based alcoholic drink Thon or Chyang. Aloo Tama, a delicious curry made with potatoes, bamboo shoots, black eyed peas etc. was delicious too.
After that we went to Famous Juju Dhau for relishing the iconic ‘King Curd’ that is one of the must try delicacy in the region. We were bowled over by the thick, luscious, velvety and creamy texture of this buffalo milk curd.
Our last food destination was Bhetghat restaurant in Kathmandu which serves a very special meat dish called Taas. The crisp and tender shallow fried meat pieces is eaten with puffed rice and radish pickles.

Nepal Food - Eating Dal Bhat in Kathmandu (दालभात - Nepalese Thali Set)
When it comes to food in Nepal eating Dal Bhat (दालभात) is an absolute must for anybody wanting to sample authentic Nepalese cuisine in Kathmandu. Very similar to an Indian Thali, a Nepalese Thali or Dal Bhat consists of steamed rice and dal (cooked lentil soup). Bhat refers to boiled rice and the dal may feature ginger, onion, garlic, chili, tomatoes and/or tamarind in addition to lentils or beans. Often you'll find pickle (achar), seasoned vegetables and yoghurt or curd accompanying it. Join us as we try that along with some other local dishes and tea (chai and Tibetan milk tea).

Nepal Food - Eating Dal Bhat in Kathmandu (दालभात - Nepalese Thali Set) Travel Food Video Transcript:
Well good afternoon and welcome to another food video from Kathmandu (काठमाडौं). Today we are having Dal Bhat (दालभात). We've been eating Dal Bhat (ডাল ভাত) very very often. So much so Sam has declared it his favorite dish known to mankind. Is that correct?
Well it is definitely our favorite thing here in Nepal (नेपाल). It is what we've been having here.
Yeah, so to describe it it kind of like a Nepali Thali Set (थाली). Yeah. So you get your rice and some lentils and we're ordering vegetarian so we're having like a vegetarian curry and just different vegetables and sauces.
Sam is actually had too much Dal Bhat (दालभात) these last few days so he ordered different local specialty items.
I ordered some other side dishes to go along with it.
So my food is here and it is a proper platter. This is the dal bhat (દાળ ભાત). It sure is. And the dal is the lentil soup right here. Right. It looks more green today.
Um, and what I find surprising like here is that here it is more soupy. It is more watery whereas in the past I've had like a thicker dal. Kind of like a curry almost.
And then here you have your bhat which would be your rice. Yeah, big mountain of rice and then we have a tonne of different sides dishes. I know. So first up this is the curd. It is kind of like a yoghurt.
And I believe this is the vegetable Thakali (दाल भात तरकारी) which is kind of like a vegetable curry. Right. Then you've got your pickled vegetable.
Yeah, this trying this place for the 1st time it was a highly recommended for their Dal Bhat (दालभात).
The Nepali Thali (थाली).
This is called Papad. Papadon. They are like crackers. Like crispy wafers.
So yeah, you know what? Let's just dig in. Dig in. And if I was going to do this the proper way I'd be using my right hand but I'm not the most coordinated with food. So you're cheating and using cutlery. I'm using a spoon. I'm just going to pour it over the rice.
Soak up them lentils.
I guess you can just mix it all together really. So you really taste the lentils? Is it spicy. Yeah, it is like a lentil soup almost.
Let's try some of the veggie.
Actually I prefer to have it. I prefer eating this, the Dal Bhat (दालभात), with this than I do even with the rice. So I think it is a nice addition to the menu.
And that concludes another delicious meal. Yeah. So we got the bill. It was 745 Nepal Rupees which is just under$7 US dollars. So that was for all of the food and I ordered an extra Masala Chai. So yeah, pretty good value. I mean you get it cheaper. We are in sort of the touristy area of Thamel in Kathmandu (काठमाडौं) so prices are more expensive here. But even so for two people to eat for seven something dollars not too bad of value I'd say.

Kathmandu is a wonderful city with so much history and a number of tasty Nepalese street food ( snacks to sample. One of the popular snacks is known as chatamari (also known as chataamari). It's basically a cross between a crepe or pancake and a pizza, I prefer to compare it to the latter as it has so many different toppings.
The base of chatamari चतांमरि is created from a batter made from rice flour. The vendor first poured the batter onto a hot skillet and then flattened it out with the bottom of the scooper. She then immediate tossed on a mixture of egg beaten up with minced buffalo and a variety of spices. After spreading it all out evenly on top of the base, she then plopped another egg right into the middle of the Nepalese street food pizza. A few slivers of tomato and some cilantro and salt were then added to the top. The chatamari was then covered with a clay top and cooked for a few moments before being ready.
Once my piping hot pancake was fully cooked, the friendly vendor took it off the griddle, sliced it up into smaller bite sizes pieces and then place the entire pizza into a leaf bowl to eat. I was delighted and hungry to sample my first buffalo egg Nepalese pizza!
The Nepalese Chatamari चतांमरि was just about as delicious as you can imagine. The base of the pancake was soft and pillowy and the toppings were spicy and flavorful. Buffalo is a very common meat to eat in Nepal, and it's very fragrant with a stronger or more gamey flavor than beef.
Chatamari is originally a Newari food ( traditionally served in the Kathmandu valley area during feasts and gatherings. Nowadays the Nepalese pancake is served all over the streets of Kathmandu. It makes a great protein filled snack if you're looking for something salty when walking around!
