Behind magnificent Zagros mountain ranges, somewhere surrounded by fields of Oak trees, lives a group of indigenous people of Iran; Bakhtiari Nomads. Twice a year, these indigenous people do ‘Transhumance’ to move to summer & winter pastures in order to feed their herds. We accompany these people in our ‘Kuch Tour’ in Mt. Zagros.

I decided to take a little break from my project and go on a short adventure!
I heard many times about Iran, in a good way. I heard about its beautiful landscapes, its really nice people and its food! But I also heard about the nomads.
Once upon a time Iran was hosting more than one million nomads. What is left of them today? That's the question I wanted to answer.
As nomads are living a different life from our society they are often rejected and considered as thief. In many countries around the world they have been persecuted and only a few remain. Iran is not an exception.

TRADITIONAL NOMAD WEDDING OF THE QASHQA'I PEOPLE
Our next stop on our Iran Food Tour brought us to a temporary settlement of the Qashqai People. The Qashqai people in Iran practice pastoral nomadism and are descendants of Turks, Lurs, Kurds, Arabs, Persians and Gypsies who settled in Iran during the 11th and 12th century. It is said that the group amounts to 400,000 people that have traveled the deserts of Southwest Iran for hundreds of years.
SEMIROM, ISFAHAN, IRAN: Sheep + Sheep Stew + Chicken
???? SHEEP: Clean and cut the sheep into small parts. Make kebabs from the offals and enjoy!
???? SHEEP STEW: In a pot, add sheep fat, butter, chunked pieces of mutton, water, garlic seeds, cumin, turmeric and salt. Simmer for a couple hours. Serve when ready.
???? CHICKEN: Defeather and clean the chicken. Stuff the chicken with onion cooked in fat, pomegranate and walnuts. Sew the chicken shut. Put in a hot pot with fat. In a separate pot, fry onions. Add turmeric, cumin, garlic seeds, water, salt and stuffed chicken.

EXOTIC FOOD IN IRAN
1. TABAKHI KAJ: Kaleh Pacheh + Abgoosht
ADDRESS: Tehran, Iran
???? KALEH PACHEH: Clean the sheep heads and place into a large cooking vessel filled with water. Add the sheep hooves and allow it to boil for one hour. After, take the broth and place in a shallow pot. Leave the sheep heads resting in the broth to soak up moisture. Place the sheep brain in broth. In a separate bowl, add the rendered sheep fat. On a platter, add cheek meat (break off the cheek meat), tongue (remove the tongue from the jaw and peel the outer layer), eyeball socket (remove eyeball socket from sheep head), full hoof, brain (broken into two pieces). Pour broth over all of the meat on the platter, keeping the meat hot and fresh. Drain the broth and add rendered sheep fat on top with cinnamon.
????ABGOOSHT (Meat Water): Mince cooked sheep brain meat and place in a small bowl with sheep broth, pure fat and cinnamon. Add lime to mixture and Iranian bread.

????FALOODEH: Frozen wheat starch noodles in a rose water liquid/syrup. Add sour cherry syrup on top.

ADDRESS: Isfahan, Iran

????YOGURT STEW: Saffron Liquid Mixture: Blend 60 grams of saffron and sugar to a powder and then mix with water. Stew Assembly: Mash stewed mutton neck and six buckets of unsweetened yogurt. Add saffron liquid mixture and sugar.

ADDRESS: Sar Pelleh, Qadr St., Mohtasham St., Imam Khomeini Sq., Kashan

KACHI (Stewed lamb an porridge): Boil porridge and water for 2 hours. Stew lamb for two hours, with carrots, green bell pepper and onion - spices include red pepper, salt, pepper, garlic, celery. Boil split wheat porridge. Place meat in the center and porridge around the outside. Top with fried onions, then reintroduce the stew broth, turmeric and pepper.

2. BARZOK HOUSE: Gusht-o-Lubia with Polo Shevid + Tas Kebab

???????? GUSHT-O-LUBIA WITH POLO SHEVID (Meat and Beans with Rice and Dill): First sauté onion in seed oil. Add lamb meat, turmeric and a lot of cinnamon. Add white beans, water and cinnamon water. Plate it and top with more cinnamon
???????? TAS KEBAB: Skin and slice eggplant in half. Sauté onion in seed oil. Cook lamb with onion to reduce gaminess. Add turmeric and cinnamon and water. Fry eggplant on both sides. Combine meat, eggplant, tomato and add pomegranate paste. Cook until ready.
???????? SHEFTE ANAR (Pomegranate Meatballs): Mix grated onion with minced lamb meat. Add turmeric, cinnamon, pepper and chili powder. Add chickpea flour and then add an egg. By hand, roll out balls using the entire mixture. Sauté in seed oil. Mix sauté onion, meatballs and pomegranate paste.
