Corporate Chef - Melt & blue
Here is a short biography of our internationally acclaimed chef.
Inspired by his Filipino mother and Bostonian grandmother, Christopher Heath developed a flair for international cuisine early on in life. He began his career in Washington, D.C. where he attended L'Academie de Cuisine and worked for Café Bethesda North and Galileo, making his way through the ranks to Junior Sous Chef.
Christopher's drive carried him to New York City, the culinary mecca of America, where he collaborated with Chef Daniel Orr at La Grenouille, one of the city's most prestigious 3-star restaurants. The duo proceeded to open Guastavino's, where Heath worked as Head Chef.
Heath and Orr continued their culinary partnership at CuisinArt Resort & Spa in Anguilla, a British territory in the Caribbean, which was rated number #1 resort in Anguilla by tripadvisor.com. This experience was crucial in Heath's transformation into an international food savant, having also trained throughout Europe and Asia.
In 2006, Heath came to the Lehigh Valley to join forces with restaurateur George Paxos. Melt opened its doors in late fall of 2006 and established itself as a premier restaurant in Center Valley PA. In June 2011, Heath was appointed Corporate Chef of Paxos Group, which includes Melt, Level 3, blue and blue event center.
Caribbean Hiking: Top 3 Islands For Exotic Wandering
The islands of the Caribbean are well known for their beaches, their relaxing retreats, and tropical cocktails. While less known, Caribbean hiking is also amazing on the islands – and just as noteworthy as any other exotic activity you should consider during your vacation.
In case you want to incorporate some physical activity and great views into your Caribbean holiday, consider the best Caribbean hiking islands we will recommend below. Our tourists loved wandering on the exotic paths and trails here, and we’re confident you will too!
1. Caribbean Hiking In St. Barths
Because the rocky, hilly land has made construction of large buildings and structures nearly impossible, large spans of undeveloped land still exist on St. Barths. Definitely the best Caribbean hiking location, the island’s rough and rock-filled terrain is calling to be explored. The island tourist bureau has brochures indicating hiking itineraries, so stop by and ask!
Colombier Beach
The most famous Caribbean hike on the island, Colombier Beach, is only accessible by boat (or a steep hike as well, for the adventurous). Taking between 15 and 30 minutes, there is a path that will take you from Petite Anse to the stunning bay. It is an extremely romantic, secluded place ideal for having a beach picnic – just one of the many reasons why celebrities love it here.Washing Machine & Natural Pools
Reach these two locations by driving to Toiny Point, an interesting spot where vegetation on the windy point grows like bonsai trees. It is a dry forest shelter for orchids, rare cacti, and lilies, with beautiful views waiting for excited explorers.
Where the road starts to curve, you will see a four-car parking area, and the path to the beach and the trail are on the left. While walking down the path, you will arrive to a rocky beach, after which you should turn right to reach the narrow goat path leading to the attraction.
“Washing Machine” (pictured below) is a spectacular beach that lies where the rocks meet the sea, named so because the water crashing over the beach and swirling around mimics the movement of a washing machine.
Let us fly you to St. Barths from Antigua quickly and safely! Click here for the easiest way to get to the small island.2. Anguilla
The island’s small size (only 17 miles in length) and several abandoned coast-side projects (leaving paved paths behind) make it a prime hiking location.
Pelican Trail
A local businessman built a 400-step staircase from Roche’s Hill Road to sea level. The views are amazing and allow the formerly inaccessible Pelican Bay to be explored. At the bottom of the stairs kayaks, snorkel equipment, a water trampoline, and gazebos are available to rent.
Don’t forget to look for the namesake pelicans that hang about!Anguilla Heritage Trail
Created in 2010 through the cooperation between the Anguilla Archaeological and Historical Society, Anguilla Hotel and Tourism Association, Anguilla National Trust, and the Anguilla Tourist Board, there are ten sites along this well-signposted trail.
All sites are culturally and historically significant, and include Crocus Hill, the Factory, Heritage Collection, Katouche Bay, Old Valley Well, Pumphouse, the secluded beach of Rendezvous Bay, Sandy Ground, Wallblake House, and Wardens Place.
The easiest way to get to Anguilla is by means of a charter flight from either Barbados or St. Lucia.3. Mustique
Because Mustique is a private island the number of homes is limited, thus much space is left to nature – and hikers! While there are fewer big name trails, Mustique is the perfect island for setting off on your own path of exploration through the island’s lavish landscape. Oh, and did we mention the amazing sunsets?
Salt Pond Trail
Starting from Brittania Bay, head south along the shore towards a coastal pathway fringed with palm trees.
There are several side trails, of which one trail leads to an observation blind for viewing bird. Mangroves are throughout, and many birds are easy to spot. Salt Pond Trail splits into many trails, giving excited Caribbean hikers the opportunity to explore the beautiful island for days on this path.
The easiest way to get to the island and start your Caribbean hiking adventure is with a charter flight from Barbados to Mustique.Get Caribbean Hiking!

One of the most beloved spices in the world, Cinnamon is actually the dried and curled up inner bark of one of several varietals of trees in the genus Cinnamomum.
Cassia Cinnamon is one of those varietals and the majority of it grows in the lush Kerenci Valley on the island of Sumatra in Indonesia. It’s a sustainable crop that has been harvested in more or less the same way for centuries.
Come along as we show you how the inner bark of the tree is harvested and dried to form this incomparable spice loved around the world.

The green iguana (Iguana iguana), also known as the American iguana, is a large, arboreal, mostly herbivorous species of lizard of the genus Iguana. It is native to Central America, South America, and the Caribbean. Usually, this animal is simply called the iguana. The green iguana ranges over a large geographic area, from southern Brazil and Paraguay as far north as Mexico and the Caribbean islands. They have been introduced from South America to Puerto Rico and are very common throughout the island, where they are colloquially known as gallina de palo and considered an invasive species; in the United States feral populations also exist in South Florida (including the Florida Keys), Hawaii, the U.S. Virgin Islands and the Rio Grande Valley of Texas.
Commonly found in captivity as a pet due to its calm disposition and bright colors, it can be very demanding to care for properly. Space requirements and the need for special lighting and heat can prove challenging to an amateur hobbyist.
Taxonomy and etymology: The species was first officially described by Swedish botanist Carl Linnaeus in 1758. In the two centuries since then, numerous subspecies have been identified, but later classified as merely regional variants of the same species.
Distribution and habitat: The native range of the green iguana extends from southern Mexico to central Brazil, Dominican Republic, Paraguay, and Bolivia and the Caribbean; specifically Grenada, Aruba, Curaçao, Trinidad and Tobago, St. Lucia, St. Vincent, and Útila. They have been introduced to Grand Cayman, Puerto Rico, Texas, Florida, Hawaii, and the United States Virgin Islands. Furthermore, green iguanas colonised the island of Anguilla in 1995 after being washed ashore following a hurricane . Though the species is not native to Martinique, a small wild colony of released or escaped green iguanas endures at historic Fort Saint Louis.
Green iguanas are diurnal, arboreal, and are often found near water. Agile climbers, Iguana iguana can fall up to 50 feet (15 m) and land unhurt (iguanas use their hind leg claws to clasp leaves and branches to break a fall). During cold, wet weather, green iguanas prefer to stay on the ground for greater warmth. When swimming, an iguana remains submerged, letting its four legs hang limply against its side. They propel through the water with powerful tail strokes.
In South and Central America, where the green iguana is native, it is an endangered species in some countries because people have been hunting and eating this “chicken of the trees” for a long time.
Diet: Green Iguanas are primarily herbivores, with captives feeding on leaves such as turnip greens, mustard greens, dandelion greens, flowers, fruit, and growing shoots of upwards of 100 different species of plant. In Panama one of the green iguana's favorite foods is wild plum, Spondias mombin.
Although they will consume a wide variety of foods if offered, green iguanas are naturally herbivorous and require a precise ratio of minerals (2 to 1 calcium to phosphorus) in their diet. It is important for captive iguanas to have a variety of leafy greens along with fruits and vegetables such as turnip greens, collards, butternut squash, acorn squash, mango, and parsnip. Juvenile iguanas often eat feces from adults in order to acquire the essential microflora to digest their low-quality and hard-to-process vegetarian-only diet.
There is some debate as to whether captive green iguanas should be fed animal protein. There is evidence of wild iguanas eating grasshoppers and tree snails, usually as a byproduct of eating plant material. Wild adult green iguanas have been observed eating birds' eggs. Zoologists, such as Adam Britton, believe that such a diet containing protein is unhealthy for the animal's digestive system resulting in severe long-term health damage including kidney failure and leading to premature death. On the other side of the argument is that green iguanas at the Miami Seaquarium in Key Biscayne, Florida, have been observed eating dead fish and individuals kept in captivity have been known to eat mice without any ill effects. De Vosjoli writes that captive animals have been known to survive and thrive on eating nothing but whole rodent block, or monkey chow, and one instance of romaine lettuce with vitamin and calcium supplements. However, it is only recommended that captive iguanas not be fed lettuce or meat, and instead receive the vitamins and minerals they need via a purely herbivore diet.
Happy Birthday

Jimmy Buffett - Margaritaville (1978)
James William Jimmy Buffett (born December 25, 1946) is a singer, songwriter, author, businessman, and movie producer best known for his island escapism lifestyle and music including hits such as Margaritaville (No. 234 on RIAA's list of Songs of the Century), and Come Monday. He has a devoted base of fans known as Parrotheads. His band is called the Coral Reefer Band.
Buffett began his musical career in Nashville, Tennessee during the late 1960s as a country artist and recorded his first album, the folk rock Down to Earth, in 1970. During this time Buffett could be frequently found busking for tourists in New Orleans. Country music singer Jerry Jeff Walker took him to Key West on a busking expedition. Buffett then moved to Key West and began establishing the easy-going beach bum persona for which he is known. Following this move, Buffett combined country, folk, and pop music with coastal as well as tropical lyrical themes for a sound sometimes called gulf and western. Today, he is a regular visitor to the Caribbean island of Saint Barts and other islands where he gets inspiration for many of his songs and some of the characters in his books.
Buffett's third album was the 1973 A White Sport Coat and a Pink Crustacean. A1A followed in 1974, Havana Daydreamin' appeared in 1976, followed by 1977's Changes in Latitudes, Changes in Attitudes, which featured the breakthrough hit song Margaritaville. Many fans believe Buffett's best work was represented by these earlier albums ( COBO-Church of Buffett, Orthodox re the canon)
With the untimely death of friend and mentor Jim Croce in September 1973, ABC Dunhill tapped Buffett to fill his space. Earlier, Buffett had visited Croce's farm in Pennsylvania and met with Croce in Florida (see Jimmy Buffett The Man from Margaritaville Revealed - Steve Eng page 144 and Jimmy Buffett Scrap Book by Mark Humphrey page 120)
During the 1980s, Buffett made far more money off his tours than albums and became known as a popular concert draw. He released a series of albums during the following twenty years, primarily to his devoted audience, and also branched into writing and merchandising. In 1985, Buffett opened the first of the Margaritaville restaurants in Key West, bringing new visibility and life to the Margaritaville name. During the 1980s Buffett played at the Houston Livestock Show and Rodeo. He briefly changed the name of the band from Coral Reefers to the Coral Reef Band to suit the HLS&R's request as they thought Reefers was a drug related reference. HLS&R is a charity event that provides student grants to children and young adults that compete in agriculture contests (FFA).
Buffett's album, License to Chill, released on July 13, 2004, sold 238,600 copies in its first week of release according to Nielsen SoundScan. With this, Buffett topped the U.S. pop albums chart for the first time in his three-decade career.
In August 2006, he released the album Take The Weather With You. The song Breathe In, Breathe Out, Move On on this album refers to 2005's Hurricane Katrina. Also on the album he pays tribute to Merle Haggard with his rendition of Silver Wings and covers, with Mark Knopfler playing on the track, Whoop De Doo.
Of the over 30 albums Jimmy Buffett has released, as of October 2007, he has 8 Gold Albums and 9 Platinum or Multi Platinum Albums.[2] In 2003 Buffett won his first ever Country Music Award (CMA) for his song It's 5 O'clock Somewhere with Alan Jackson, and was nominated again in 2007 for the CMA Event of the Year Award for his song Hey Good Lookin which featured Alan Jackson and George Strait.
On December 8, 2009, Jimmy Buffett released his 28th studio album entitled Buffet Hotel. ~SOURCE: Wikipedia
