Elle fait partie du patrimoine marseillais. La bouillabaisse est un emblème de la cuisine provençale. Historiquement, elle était considérée comme le plat du pêcheur ou du pauvre. Aujourd'hui, le chef cuisinier Christian Buffa du restaurant Miramar, sur le Vieux-Port de Marseille, a proposé à des touristes un cours de bouillabaisse. Soupe de poisson
Ingrédients pour 4 personnes:
400 g plies
250 g langue
350g brème
330g amande de mer
800g moules Bouchot
12 scampis nettoyés
3 carottes
3 branches de céleri
tige 1 poireau
1 oignon
1 fenouil (le feuillage)
2 gousses d'ail
1 bouquet garni
10g de persil
140 g de purée de tomates
2,5 dl de vin blanc sec
1 dl Pastis
2 cuillères à soupe d'huile d'olive
sel et poivre
Préparation:
Nettoyez le poisson. Filetez si nécessaire, enlevez la peau et coupez les filets en morceaux. Gardez les arrêtes et autres restes séparément en tant que base pour le bouillon. Mettez les filets à part dans le réfrigérateur.
Pelez les carottes et épluchez l'oignon et l'ail. Nettoyez le céleri et le poireau et coupez-les en morceaux. Coupez les carottes, le feuillage du fenouil, l'oignon et l'ail grossièrement.
Mettez une grande casserole à feu doux avec 2 cuillères à soupe d'huile d'olive, les légumes et les arrêtes de poisson. Laissez les légumes mijoter jusqu'à ce qu'ils blanchissent légèrement, versez la purée de tomate et laisser mijoter. Arrosez les légumes avec le pastis et laissez l'alcool évaporer. Ajoutez le bouquet garni, le vin versez et ajoutez 1,5 litres d'eau. Portez à ébullition et laissez mijoter environ 30 minutes à feu doux.
Mélangez la soupe (avec os) au mixeur et passez la ensuite au tamis afin d'obtenir une belle soupe de poisson lisse et brillante.
Remettez la soupe sur le feu et portez à ébullition. Assaisonnez selon le goût avec le sel et le poivre.
Rincez les coquilles des amandes de mer et les moules plusieurs fois très soigneusement afin d'enlever tous les résidus de sable.
Coupez les crevettes en deux et ajoutez-les à la soupe avec les morceaux de poisson, amande de mer et moules. Laissez mijoter pendant 5 minutes à feu doux pour que les morceaux de poisson et de crustacés puissent filer suffisamment.
Hachez finement le persil et garnissez en la soupe.
Une délicieuse soupe de repas sain est encore mieux avec un morceau de pain grillé avec du fromage fondu avec elle!
