Mejillones con su jugo emulsionado y variedad de patatas chips. Le Cordon Bleu Madrid
¡Estudia Cocina Española en Le Cordon Bleu Madrid!
Ingredientes:
Mejillones a la marinera:
1 kg de mejillones
100 g de mirepoix blanca (cebolla, apio y puerro)
2 ajos en camisa
1 rodaja de limón
100 ml de vino blanco
1 rama de tomillo
1 rama de laurel
Emulsión de mejillones:
750 ml de fumet
Jugo de la cocción de los mejillones
C.S. de AOVE
C.S. de vinagre de Jerez
C.S. de cebollino picado
Variedad de patatas chips:
2 patatas vitelotte
2 patatas de freír
Progresión de la receta
Mejillones a la marinera:
- Limpiar los mejillones y desbarbarlos.
- Poner a calentar el AOVE y añadir la mirepoix blanca, el laurel, el tomillo y el limón.
- Rehogar ligeramente. Añadir el vino y dejar que reduzca a la mitad.
- Añadir los mejillones y tapar hasta que se abran (3-4 minutos aproximadamente).
- Preparar un bol con un escurridor.
- Colar los mejillones y reservar el líquido de la cocción.
- Mientras, desconchar los mejillones.
Emulsión de mejillones:
- Colar el líquido de la cocción de los mejillones, poner en un sautoir y añadir el fumet. Reducir.
- Añadir el jugo reducido (líquido de cocción de los mejillones y fumet) a una batidora de vaso americano. Agregar vinagre de Jerez y emulsionar con AOVE.
- Mezclar los mejillones con el cebollino y la emulsión, y reservar.
Variedad de patatas chips:
- Pelar las patatas y cortar en láminas finas con una mandolina.
- Poner las láminas a remojo en agua templada. Pasados en unos minutos, pasar a un bol de agua con hielo.
- Secar en papel absorbente y freír las patatas a 140C en abundante aceite de oliva. Quitar el exceso de aceite con más papel absorbente.

Last Day at OrigoMare Fuerteventura, we squeeze everything back in to the rental car and take the scenic route to the airport. Andrew leaves his budget wine for the cleaners, Tabitha gets her game of pool finally! and we find a fantastic patisserie - Panaderia Pulido Alonso in the town of Antigua.
Welcome to our family Easter holiday to Fuerteventura in April, 2015. We flew with Ryanair from East Midlands Airport, UK to Fuerteventura in the Canary Islands. We are staying at the Origo Mare Holiday Village near Lajares at the top of Fuerteventura about 15 mins drive from El cotillo and Corralejo. It is owned by the French holiday company Pierre et Vacanes. We are staying part self catering and hiring a car so we can explore the island. We are going to do lots of surfing and kitesurfing and have fun! We will upload lots of videos internet willing!
