We're in Palermo, Sicily! In this 3 part series we're exploring Palermo to hunt down the best Sicilian food. Palermo has a thriving street food culture that's big on offal and punchy, bold flavours.
This is our first video from Palermo and it's all about Sicilian street food and traditional Sicilian food! We start the day at one of Palermo's most popular local markets- Ballaro Market. Ballaro Market is packed with fresh produce, meat and seafood and has an abundance of ready to eat street foods to sample. Some of Palermo's most beloved street foods are here so we start with frittula. Frittula is a snack you won't find elsewhere in Italy it's made up of leftover scraps from a calf carcass that are boiled and then fried in lard. Next up it's time for some seafood- pulpo or octopus simply boiled and served with a squeeze of lemon and sardine rolled and stuffed with breadcrumbs, pine nuts, parsley and raisins. Before leaving the market we eat some snails- babalucci which are cooked in garlic and parsley. They're mouthwatering! We head for more food at one of our favourite trattoria's which is close to the market for some seafood pastas- swordfish and eggplant spaghetti for Thomas and cuttlefish and cuttlefish ink spaghetti for Sheena. Finally, we head to a famous local bakery to sample some Sicilian sweets for which the island is well known. #streetfooditaly #sicilianfood #sicilyfood

Sicily Street Food, Italy. Panelle and Crocchè Tasted in Palermo
Panelle are Sicilian fritters made from chickpea flour and other ingredients. They are a popular street food in Palermo and are often eaten between slices of bread or on a roll, like a sandwich. Panelle are believed to be of Arab origin.
Crocchè (French croquettes) are a dish of Napolitan and Sicilian origin, made from mashed potato and egg, which is covered in bread crumbs and fried.
Both are typically a Southern Italian street food, ubiquitous at friggitorie, the Italian equivalent of fish and chips.
La Panella è una frittella di farina di ceci, tipico cibo da strada della cucina palermitana. Si possono acquistare in moltissimi luoghi della città, in particolare nelle “friggitorie, anche ambulanti, presenti nelle strade di Palermo.
Le panelle vengono preparate con farina di ceci, acqua e prezzemolo. La farina viene sciolta in acqua salata e viene girata con un mestolo fino a farla diventare una pasta cremosa, poi viene stesa su un piano, tagliata e poi fritta. Vengono poi servite soprattutto in mezzo alle Mafalde - forme di pane di circa 200 grammi con la crosta ricoperta di semi di sesamo.
Sono spesso consumate assieme alle crocchè (dal francese croquette, crocchette di patate) o con altre specialità fritte in pastella, e condite a piacere con sale e limone.
Le Crocchè (dal francese croquette) sono un piatto tipico della cucina napoletana diffusi anche in Sicilia, in particolare a Palermo, dove è presente una loro variante. La ricetta napoletana si compone di un impasto di patate, uova, formaggio e pepe. Il passaggio finale prevede un bagno nell'albume e successivamente nel pan grattato, infine la frittura. La versione palermitana prevede l'utilizzo del latte al posto delle uova nell'impasto.

The crocchè (from the French croquette), often also called panzarotti, is a typical dish of Neapolitan cuisine also found in Puglia and Sicily, particularly in Palermo, where there is one of their variations. The Neapolitan recipe consists of a mixture of potatoes, eggs, cheese and pepper and, for the domestic version, also a filling of fior di latte and salami. The final step involves a bath in the egg white and then in the breadcrumbs, then the frying. In Campania, as well as a homemade preparation, they are also a typical street food that, in this case offers a less rich version, not contemplating the presence of dairy products and cured meats. Still today, they can be bought in one of the city's many chip shops, where they are served in special paper containers called cuoppi, accompanied by pastacresciute, sciurilli, scagliozzi, or fried aubergines (pullastiello) and balls of rice (small arancini).
The Palermo version includes the use of milk instead of eggs and mint in the dough. Another variant is typical of Piedmont, where they are however called Subric.

These peppers are called Sweet Palermo Peppers as their origins bring us back to Palermo region in Sicily In Italy but surprisingly this is a Malaysian breed sweet Peppers. This chili peppers looks huge and intimidating but its just a sweet pointed pepper.
