Shibuya in Tokyo is a famed district of fashion and culture. We visit the star attraction, the Shibuya Crossing, grab some sushi at Genki Sushi Tokyo, stroll the shopping streets and take a breather in Meiji Jingu Shrine, the most famous Shinto shrine in Japan.

INGREDIENTS
(serves 2-3)
-Tofu-
300g soybean
2800ml soft water*
15 -20ml nigari (or lemon juice) + 50ml water**
* If you're not sure if your tap water is hard or soft, you can just use distilled water. It might be a bit overkill but it's probably easier than searching specifically for soft water.
** Add more nigari or lemon juice if necessary
-Sukiyaki Sauce-
100ml sake
100ml mirin
100ml soy sauce
30g granulated sugar
-Vegetables-
You can use any vegetables you like. Here'are the ones I used this time
green onion
Chinese cabbage
shiitake mushroom
carrot
thread konjac
very thin, marbled beef slices
INSTRUCTIONS
-Tofu-
1. Soak the soybeans in water(1200ml). The soaking time depends on the water temperature.
Summer: 25°C/77°F 10 hours
Spring, Autumn: 15°C/59°F 20 hours
Winter: 5°C/41°F 30 hours
2. Blend the soybeans and water in a mixer to make namago. (Namago is the Japanese word for that specific blended mixture of soybeans and water).
3. Boil 1600ml water in a large pan or pot and add the namago and stir for about 10 minutes. Make sure not to burn the namago at the bottom of the pan.
4. Turn off the heat and strain the namago with a filter cloth to get soy milk. The leftover is called okara and it's very healthy. I normally use it for making cookies.
5. Mix 20ml nigari (or lemon juice) and 50ml water together to make the coagulant for the soy milk.
(Your coagulant is a substance that will curdle the soy milk. You can use acid, like lemon juice or vinegar, or salt. Nigari, which is magnesium chloride, is popular in Japan, and calcium chloride is popular in North America.

6. Heat up the soy milk and keep the temperature at 75°C. Add the nigari-water and stir gently. Do NOT mix too much. Turn off the heat and leave it for about 10 minutes.
7. While resting the soy milk, prepare a container for shaping the tofu. You can make holes in the bottom of a paper drink carton or tupperware, or you can just use your filter cloth and tie it up tighly to shapen the tofu as well.
-Sukiyaki Sauce-
1. Add 100ml sake and 100ml mirin in a pot and boil it.
2. Add the sugar and soy sauce, and let the sugar melt.
-Sukiyaki-
1. Melt the beef fat* (or just some slices of fatty beef) and cook the green onion (if you have it) in the sukiyaki pot to add flavor to the sauce. Green onion tastes so much sweeter and more flavorful when you fry it first.
2. Add the sauce and heat it up. Then add tofu, konjac, mushrooms, and anything that takes longer to cook than your other vegetables.
3. Finally, place everything else.
Sukiyaki is a shared Japanese dish where everyone ladles out some of the broth and food into their own bowls. Traditionally, sukiyaki is eaten with a raw beaten egg added to your own bowl, but that might be difficult for you depending on how safe raw eggs are considered where you live. I normally don't eat it with egg so I can enjoy the flavor of beef and vegetables, but if you get a chance to eat sukiyaki, please give it a try!
*In Japan when you buy beef there is usually a bucket nearby where you can also take a cube of beef fat free of charge. If you want you can buy this separately, or you can use beef that has fat on it as well.

Food in Japan goes way beyond sushi. We continue the day in Yokohama, Japan (横浜) where we left in the last vlog: Chinatown. Yokohama Chinatown is the biggest Chinatown in Japan and among the biggest in the world. The main attraction here is the food, for all tastes and budgets. Then, we head to Noge to enjoy Yokohama at night and end up eating some of the best dishes in the entire trip. And guess what? We don't even know exactly what they were!

I passed 100'000 subscribers like 12 days ago. As I need to do some research and order some stuff for my current restoration, I decided to make a „silver“ play button without any power tools.

The tasty Japanese teppanyaki is a good food from the Japanese cuisine. A flat steel grill is needed for cooking this Japanese food. The name of the teppanyaki is transmitted from the Japanese word of teppan = grill. Yaki = roasting. So, grill roasting.
In Japan, the tasty Japanese teppanyaki may refer to one of the many dishes that are cooked on the teppan grill. Some of the dishes are okonomiyaki, yakisoba and monjayaki. The most popular form of the tasty Japanese teppanyaki is meat or fish with rice and vegetables. In the United States it is also known by the name of the Japanese BBQ grill.

At this time these restaurants became a popular place for tourists. The Japanese grill was invented at this time.
In 1964, the first Japanese grill restaurant opened in New York. The Japanese food became more popular. The Japanese culture began to spread around the world. The tasty Japanese teppanyaki became popular in Taiwan, Thailand, Korea, Hong Kong and Singapore.
New food was invented. The Japanese Takoyaki were invented. Today they are called the grilled octopus balls. The secret ingredients are: wheat flour, egg, water, octopus, ginger, pickle, salty seaweed and vegetable oil. The Japanese Takoyaki can be cooked on an iron plate or in a frying pot.
The Japanese food is not always from Japane. Sometimes, the Japanese people like to create new food, from the ideas of other cultures. The Japanese grill is one example of this. The Japanese people take something from other cultures, and they make it better.
The Japanese grill is an interesting tool for cooking. The frill is made from a steel plate that is between 0.3 cm to 1.5 cm thick. Under the plate, there is burning stove, fire or an induction heater. Different food can be cooked on the Japanese grill. For example: Japanese steak, Japanese okonomiyaki, Japanese monjayaki, Japanese yakisoba, and Japanese seafood.
Before the World War II. The iron stoves were rare in Japan. After the war, the street vendors started to use the iron plates, because they were available. A lot of Japanese food was invented in this time. New tools for cooking did help to invent new food. We can only hope that the Japanese people can find new and interesting food. So, that the rest of the world can eat more tasty Japanese food.

Osaka's Dotonbori area is known for its amazing street food but after trying it all last time, we headed for a wacky canned food themed restaurant nearby. That's right -- it's ALL CANS! Japanese cuisine in a can? You got it -- Only in Japan!
In a country famous for it's beautifully prepared, Michelin starred cuisine, how far off course does MR KANSO go? How good (or how bad) can it be? Kevin Riley and I try 5 canned foods that interest us then rank them. In the restaurant, there are over 300 different canned food choices!

Ginza, Tokyo, JAPAN! Ginza is Tokyo's most exclusive district and a must-visit place in Japan. When you visit Ginza, it's worth combining with a trip to Tsukiji Fish Market, a short walk from the metro station. Tsukiji Market is still a great place to visit if you want to start your day with some of the freshest sushi for breakfast. The famous early morning tuna auction is not at Tsukiji anymore, but that should not be a reason to skip it. With your tummy full, you're now ready to burn some calories walking in Ginza. Go on a weekend afternoon to see Chuo Dori closed. That's where you find all the designer stores, the new Ginza Six mall and the famed Japanese clothing line Uniqlo. Uniqlo's flagship store is located in Ginza.

JAPAN: OSAKA things to do - Shopping in Shinsaibashi & Dotonbori | Vlog 1
Trip to Japan | Osaka (or 大阪市) is so full of things to do! We spend the day shopping in Osaka. Japanese also love it! In Minami, we start at Orange Street (Horie), then visit America Mura, Shinsaibashi-Suji, Dotonbori (where you see the famous Glico man), Ebisubashi-Suji and Namba Walk. We return to Dotonbori to enjoy Osaka at night and try delicious street food. My favorite? Takoyaki, by far! ????
