Harvesting Rijk's Chenin Blanc Grapes
We mainly harvest at night or early mornings, before sunrise, as daytime temperatures in Tulbagh normally soar to about 35 - 40 degrees Celsius.
It is firstly much better conditions for our harvesters to work under at night, when it is cooler. Once the workers get used to it, they actually prefer picking at night. Because they do such heavy physical work, the cooler temperatures also allow them to work for longer periods at a time and pick more tons.
Secondly night harvests bring in grapes with better sugar levels, acid and aromatics the scents that linger after the grapes go into the bottle.
Thirdly grapes picked in the cool of night also stay firmer and don't start to macerate and ferment before the winemaker can choreograph the process. When cooler grapes arrive at the winery in the early morning hours, they can immediately be crushed and the first fermentation started. When harvesting during the heat of the day, grape temperatures can get up to 43 degrees. To crush and ferment they should be in the 12-degree range, which means they must be chilled quite a lot. Picking at night brings in grapes at about 18 degrees. Night harvesting therefore also translates into energy savings for us and also decreases our carbon footprint, as grapes do not have to be cooled down so much before fermenting.
When the grapes arrive at the cellar, they are weighed and then tipped into a crusher and de-stemmer. This machine removes the berries from the stems. The berries are lightly crushed and then pumped into the cellar, where it is cooled to about 12 degrees Celsius by a mash cooler. After it has reached the correct temperature, it is pressed.
White grapes are not fermented on the skins, like red grapes, but pressed the same day after it has been cooled down. The grape juice is then pumped back into a stainless steel tank, where first fermentation takes place.

Add a family of 6 daughters, that are SO entertaining, old-school love, emotions that are real AND beautiful people, and you have yourself a set of endearing memories captured.

Stunning Tulbagh Wedding with Leigh + Steve
Shooting weddings in South Africa is one of the great joys and adventures of my life. I love this country so much and can not help, but be blown away every time by it's beauty. The landscape and people are so unique!
Leah and I had a great time documenting Leigh and Stephen's wedding at Rijk's Country House in Tulbagh. This little charming town nestled in an ancient volcanic crater was the perfect place for all their family and friends to celebrate with them - and have a little adventurous getaway.
We stayed at the Tulbagh Hotel and enjoyed the little get together they had organized on the Friday night. We caught up with old friends and made some new ones. Even met a Canadian girl that gave up the snow for the warm African sun and a very handsome African man. Imagine that...
I told Leigh the day would fly by, and so it did. One moment we were busy with getting ready shots and the next, people were giving it on the dance floor, under the African stars. Wine was flowing, 90's rock tunes even inspired this guy to have a little dance with his wife.
My beautiful Leah celebrated her birthday that day as well and I can't thank her enough for offering to work on the day she turned 29 again...

Crushing, de-stemming & pressing Rijk's Chenin Blanc
After harvesting, the grapes are transported from the vineyard to the cellar, where the grapes are crushed and de-stemmed.
The reason for crushing is to split the grape's skin and allow the sugars of the juice to flow and get in contact with the natural occurring yeast found on the grape's skin. Alcohol and carbon dioxide are produced when yeast and sugar get in contact with each other.
We crush our grapes mechanically by means of a heavy spiraled steel roller. At this point the grape stems are separated from the juice, or 'must' (as it is referred to at this phase in the game). The must is pumped into the cellar and cooled down by a mash cooler to about 12°C -- the optimum temperature for controlled first fermentation to start.
This is also the juncture where red wine grapes and white wine grapes take different paths. If a wine is destined to be white wine, then the grape skins are removed at this stage of the process by pressing the grapes prior to fermentation. By pressing the grapes, the juices are gently extracted and pumped into a stainless steel tank where the first fermentation process starts.
If the goal is to make red wine, then the must is allowed to ferment on the skins first (to provide the wine with colour and tannin components), where after pressing takes place.
