This Peruvian restaurant, which overlooks an archaeological site, was designed by Lima-based Estudio Rafael Freyre as a laboratory and hub for experiments in local gastronomy.
To create Mil Centro, Estudio Rafael Freyre overhauled a building in the Sacred Valley of the Incas, located in Peru's Andean highlands.
Twenty-three miles from the city of Cuzco, this area once formed the heart of the Inca Empire – a pre-Columbian culture tribe established in the 1400s – and is home to archaeological sites including Machu Picchu.
Estudio Rafael Freyre's restaurant is set on the edge of one of these historic Inca developments: the Moray Archaeological Complex. Featuring huge circular, stepped paths, the site is believed to have been used for agricultural research.
This history is apt for Mil Centro – a gastronomic project led by Peruvian chef and restaurateur Virgilio Martínez, which serves diners a tasting menu made with indigenous Peruvian ingredients.
Martínez – whose Central Restaurante in Lima is celebrated as one of the world's best – will grow many of these ingredients on site, following a farm-to-table ethos also used by Copenhagen's Michelin-starred Noma.
The building has a square-shaped plan arranged around a central courtyard, where an endangered Andean queñua tree grows. The layout creates four separate wings, hosting the restaurant and three research projects led by Martínez.
Among these are Mater Iniciativa, which investigates the natural food resources in the Andes, and Flavour Lab Cacao, which experiments with cacao chuncho.
In the micro laboratory, the team ferments, distillates and macerated liquors based on local species.
Following the Peruvian theme, Estudio Rafael Freyre's restaurant design takes cues from the traditional material and cultures used in the Andes. The aim was for the renovation to celebrate the history of the site, while remaining sustainable and environmentally friendly.
This architectural project ties into the local communities and brings continuity to the historical legacy of their traditions, Estudio Rafael Freyr said in a project description.
The restaurant merges into Moray's natural, cultural and social setting organically and respectfully.

Pachamanca is an underground hot stone oven style of cooking from the Andes mountain regions of South America. There is evidence that humans in the region have been cooking pachamanca for over 8,000 years, and it was a common way Inca’s prepared food as well! It was a huge honor to have this opportunity to have a traditional, no shortcuts, pachamanca when I was visiting Cusco, Peru.
From Cusco, Peru, it was about an hour drive. We met with Julio, the leader of the small Quechua community, and he brought us to the village, high in the mountains, and an incredibly beautiful place. We were immediately met by the amazing community, beautiful people, who welcomed us in and showed us their immense hospitality.
The first step in prepared in a pachamanca is heating hot stones, but they have to set up the stones in an absolutely genius stone structure in order to build a fire and heat the rocks. They showed us the entire process as I watched in awe. The rocks must be heated for 4 - 5 hours before they are ready to cook.
When the pachamanca was heated and ready, they first tossed on the variety of potatoes, then the meat (including alpaca) which was marinated in spices and wakatay (Peruvian black mint), then layers of rocks, fava beans, and then covered the entire pachamanca with an herb to seal it in. Finally they covered it with earth to seal in all the smoke and steam. It was astounding and beautiful to see them as they prepared the entire pachamanca, an ancient Peruvian cooking tradition.
Moraya - Ancient Inca technique of freeze drying potatoes - In addition to the pachamanca, they also made a soup made with moraya, an Inca technique of free drying potatoes to preserve them. The soup was delicious, and so warming.
The pachamanca was absolutely delicious, all the ingredients sort of steamed and roasted at the same time. Some of the ingredients were charred from the hot stones, which added to the incredible flavor. And along with the delicious food, the experience of being able to watch them load and unload the pachamanca, was something I’ll never forget.

Things That SHOCKED US About Cusco, Peru
We traveled to Cusco, Peru for the first time and this charming mountain city surprised us in SO many ways!

No matter what new city we visit in the world, we try to keep our minds open to new and unexpected experiences. We actually really enjoy being shocked and surprised each time we visit a new place. There are aspects of the culture, food, landscape, people, language, etc. that we just can't foresee, despite all the research we might do. That's the beauty of travel and we embrace it wholeheartedly!
So what exactly shocked us about CUSCO, PERU? For starters, we’re currently living at sea level in Puerto Morelos, Mexico, so traveling to the high-altitude city of Cusco was a real shock to our bodies. We got out of our taxi, took just a few steps up the stairs, and were completely out of breath. It was crazy! 11,200 ft. of altitude does wild things to the body as we quickly learned.

What else shocked or surprised us about Cusco? To name a few: the adorable Alpacas wandering around Cusco; the endless scenic photo ops; and how common it is to consume the coca plant. (We mention the rest in this video!)

Amantani's mission is to help the children of Peru through three educational homes. It's a mission we love and are passionate about. Since 2008, they have been working to bridge the gap between home and school for children living in Ccorca; a small Quechua district nestled high up in the Andes. Amantani provide boarding houses to help over sixty children get to school each day where before they faced a walk of up to four hours. They also provide nutritious meals, love, care and a safe roof over their heads

Over the course of 18 months, Amantani & Andina partnered to work with a group of indigenous children and gave them the communications tools they needed to teach their ancestral knowledge to people all over the world. The children created a series of short films to share positive aspects of community life which make them proud to be indigenous.
MEET MY WORLD LAUNCH EVENT:
We launched Meet My World earlier this year with two edible cinema events in London hosting a total of over 600 guests and then again in Lima, Peru. We screened the children's films for the first time with two evenings of edible cinema, and each dish represented one of the children’s films. Check out what happened on the night:

Ceviche Soho kick started the Peruvian food revolution in London and was recently voted #6 Best 2016 Restaurant in London out of 17,000 restaurants. Andina is our Michelin Guide listed all-day restaurant which champions the unique world of the Andes and its nutritious ingredients. Ceviche Old St won the award for Best New UK Venue 2016 and is a restaurant and art gallery in the beautifully restored Alexandra Trust Dinning Rooms. Casita Andina opened in August 2016 and has received 4 stars by The Sunday Times, Metro and Tatler, and is inspired by the traditional, family-run picanterias of Peru.
