From vine to wine - 2012 Rymill Coonawarra Cabernet Sauvignon #2
In our second video from the vineyard Micko updates us on vintage 2012 whilst Patch watches from under the canopy.
It's an early vintage, starting two weeks earlier than the norm, and the whites are all picked. We check on the Cabernet Sauvignon featured in video #1 and find that the grapes are now only 3-4 weeks away from harvest and that Rymill Coonawarra are now Entwine/Freshcare accredited.
Things are looking good for a great vintage.

Why are Australian wines so good?
: I believe Australian wines are excellent because, initially, our climate is so diverse. We've got wines grown in West Australia, South Australia Victoria, even Tasmania, and, of course, in New South Wales. We've got the range of climates, lovely rain fall in certain areas, dry at certain times of the year. The terra rosa in South Australia and the rich aluvials of the Hunter and again in Victoria all bring quality. Another reason Australia is so good with their wine making is, of course, we're not high bound by special rules, such as the French. The Appalachian principle that the French use restricts wine makers of a particular region to produce wine in that very special way that every other wine maker in that region produces wine. It's very restrictive. Our young wine makers experimented in different ways of producing quality product. Our cold storage methods, our cold maturation methods are quite unique. They've now been adopted by the French and, of course, America very closely follows too. This is why too with Australian wines, you can get a very very good wine and the price is most modest. And, really, did you know that Australia produces not quite 10% of the world's wine; we're pretty good at what we do. And, did you know, by the way, the Kiwis do a beautiful white wine, a lovely sauvignon blanc and, of course, we've got one in the stable. I want you to try it, it's very very tasty.

This beautiful Coonawarra Cabernet comes from the 2009 vintage. What we're trying to do with our Cabernet Sauvignon is we're not trying to make Aussie Dry Red from Cabernet Sauvignon. We're trying to make varietal cabernet. As a result, we're all about fruit on the nose, and this wine shows beautiful cassis, rhubarb, and some cherry characters on the nose, just with a hint of oak as well, so it's in the varietal style of Cabernet Sauvignon.
The palette with this one is all about structure. The palette with good cabernets is all about structure. It's got length, it's got refinement, it's got beautiful tannin on the inside of the gums, but not aggressive. It has beautiful warmth, obviously coming from the Australian sun, and it's a wine that has great texture. Also, the wine, by the structure of the wine, you can feel that it's quite firm on the middle of the palette, which means that it's going to age gracefully. It's a wine that you could consume now or in the next 4 to 5 years, and it would be fantastic with roast beef on the rarer side rather than on the well-done side.
