Master Bakers making 100's of bagels at World Famous 24 hour bakery: Beigel Bake Brick Lane London
✓ It's very much long overdue and about time that we visited our all time favourite bakery to get a special look at the process of beigel making from start to finish.
This (not so secret place for Londoners) is a bakery which we've been visiting now for around 25 years. You can come here safe in the knowledge that it will be always be open 24-7, 365..........this shop is one of London's most special places.
Why is this our favourite place? simply because the prices here are very much affordable, so much so that anyone can come here in the knowledge that they can eat something filling without it costing a fortune - where else can you buy a beigel for 0.30 pence!!!
Spend 10 to 15 minutes standing in the shop (and eating) and you'll see all walks of life come into the shop rich or poor: low, middle & upper classes can allbe seen as customers in the shop, At 4:00am you would get a slice of London in that Bagel shop, night clubbers leaving the clubs, hookers, police, night shift workers, taxi & minicab drivers etc all eating a salt beef bagel with a cup of tea.
The best place to stand when eating in the shop, we reckon its right by the window on a Sunday afternoon (on market day).
They can get extraordinarily busy with queues very often snaking out of the door, especially on Sundays or in the night time when nightclubbers come in droves, well past midnight & into the early hours - the speed of service is second to none; so if you're in a rush you'll never be waiting for too long.
Our favourite munch here is:
* A beigel with cream cheese.
* Onion platzel with butter & cheese with their soup.......it's been our first choice when I come here.
The menu is focused on beigels, which are baked in the traditional Jewish style with fillings such as hot salt beef with mustard, chopped herring, and cream cheese and salmon. They also produce pastries and sweets treats such as Danish rolls, apple strudel, Eccles cakes and cheesecake, as well as white, rye and black bread. Beigel Bake produce well 2000 to 3000 beigels daily.
Sammy the part owner has been running the shop for nearly since 1974 and there's no secret to the beigel recipe; he says that the ingredients include: flour, warm water, sugar, malt flour, salt and yeast.
This is the shop that never closes, (it stays open 24 hours a day, 7 days, 365 days a year) so anyone can come here anytime of the day or night.
A very special thank you to Sami & his team who welcomed us and graciously allowed us a privileged glimpse into their kitchen to do the videoing.
Having spent a day in this bakery, I now have major respect for bakers! damn they work so hard! Harder then I ever thought!.

East Guldeford Level Crossing
Two Class 171s in Southern livery pass at this rural crossing heading to Rye and Appledore respectively. This crossing is one of three on the A259, and one of two in a mile. The road crosses over the railway and immediately crosses back, after passing some farms. There is a proposal to cut off these crossings and create a new route for the A259 from Guldeford Corner (right next to the Kent/East Sussex border) to the Junction with the road to Camber, but this is out of the question for some years. The crossing itself was really hard to get to. Me and my dad parked in Salts Farm Shop's car park and walked down to the crossing. It was quite dangerous as the road was raised so there was no verge, and there was crash barriers. Not to mention the road narrows here, despite being the main road from the South of England to the Channel Crossings. The yellow box is swarmed in brambles and blackberries. One of the barriers has the same problem as Mountfield but quite a bit of a smaller problem. It also raises slower than the other barrier. The electrical boxes can be heard clicking in one of the clips when the amber light extinguishes. The train can be heard sounding its horn variously on approach. Bloody noise.

The River Rother flows for 35 miles (56 km) through the English counties of East Sussex and Kent. Its source is near Rotherfield in East Sussex, and its mouth is on Rye Bay, part of the English Channel. Prior to 1287, its mouth was further to the east at New Romney, but it changed its course after a great storm blocked its exit to the sea. It was known as the Limen until the sixteenth century. For the final 14 miles (23 km), the river bed is below the high tide level, and Scots Float sluice is used to control levels. It prevents salt water entering the river system at high tides, and retains water in the river during the summer months to ensure the health of the surrounding marsh habitat. Below the sluice, the river is tidal for 3.7 miles (6.0 km).
The river has been used for navigation since Roman times, and is still navigable by small boats as far as Bodiam Castle. It flowed in a loop around the northern edge of the Isle of Oxney until 1635, when it was diverted along the southern edge. Scots Float Sluice was built before 1723, when the engineer John Reynolds made repairs to it, and later extended it, to try to keep the channel clear of silting, but it was criticised by John Rennie in 1804, as it was inconvenient to shipping. The river became part of a defensive line to protect England from the threat of invasion by the French in the early 1800s, when its lower section and part of the River Brede formed a link between the two halves of the Royal Military Canal. Scots Float Sluice was again rebuilt in 1844. Some 31 square miles (80 km2) of the valley were inundated by floodwater in 1960, which resulted in the Rother Area Drainage Improvement Scheme being implemented between 1966 and 1980. The river banks were raised, and 20 pumping stations were installed.
The river has been managed by a number of bodies, including the Rother Levels Commissioners of Sewers, the Rye Harbour Commissioners, and the Board of Conservators for the River Rother. After the passing of the Land Drainage Act 1930, it was managed by the Rother and Jury's Gut Catchment Board, the Kent River Board, the Kent and Sussex River Authorities, the National Rivers Authority and finally the Environment Agency. It is unusual, in that while it is under the jurisdiction of the Environment Agency, it has been a free river since 1826, and so no licence is required to use it. Management of the levels adjacent to the river is undertaken by the Romney Marshes Area Internal Drainage Board. The Rother passes by or near the villages of Etchingham, Robertsbridge, Bodiam, Northiam, and Wittersham.

Beavertown was set up in December 2011 by Logan Plant in the kitchen of Duke's Brew and Que, in De Beauvoir, Hackney, London. The brew house, situated opposite the two Smokers of the BBQ restaurant, runs at 4BBL per brew (650 litres - 1150 pints).
In March of 2013 we moved out of our home at Duke's Brew & Que and into our new brew site at Unit 4 Stour Road, Fish Island, London E3 2NT. Now with a little bit more space we can push the boundaries of brewing and get more beer out to the thirsty masses. In May 2014 we moved to our new 11,000sqft space in Tottenham Hale. We upgraded to a 30BBL (50HL) brew house. We also sat our 'heartbeat' 4BBL kit next to Big Beaver to constantly push our core range, experiments and minds!

What's Ireland Eating?
RTE One: 9:30pm - 10:30pm Sunday 8th May 2011
This programme is part of the Heart|Land season. In this documentary, Journalist and consumer champion Philip Boucher Hayes casts a cold eye on Irish eating and shopping habits. To get to the heart of what Ireland's eating in 2011, Hayes takes a look inside Ireland's shopping basket. Armed with information from a national nutrition survey and data from 3,000 households' food shopping receipts, Boucher Hayes argues that we are damaging our health, our economy and our society by what we eat and the way we shop.
He believes that a lot of the food we eat is far removed from its origins. It is highly processed and globally produced - and this is neither healthy nor economic good sense. He delves into a number of Ireland's most popular foodstuffs, from chicken to processed pork, and reveals some unsavoury truths about where they come from and what they're doing to our health.
Boucher Hayes discusses how we have been weaned on to a diet of cheap food and the competition between retailers to hold market share is putting serious pressure on many of those that supply our food. He argues that greater regulation is needed to ensure that the food sector doesn't go the way of the banking sector.
Although the health issues with regard to the latest research findings on the effect of processed meats and it's links to bowel cancer were discussed, the remainder of the 50 minute programme focused on the power of the supermarkets to squeeze the food growers and producers out of business.
Below are some of the main points of the show, mapped out, some of these are pretty staggering statistics
■43% of Irish shopping budget is spent on highly processed foods, typically in the form of a half dozen sausages, 10 slices of ham.
■The Irish eat more ready to eat breakfast cereal than any other nation on earth, with 7 of the top 10 in the high sugar category.
■Almost half of the fish that we buy comes in the form of frozen, breaded and pre-packed.
■Each week we buy 1.7 litres of carbonated drinks.
■We are eating only a third of the types of food we were eating 10 years ago, including potatoes.
■Our consumption of fruit and veg is half of what it ought to be, and for every euro spent on fruit and veg we spend 1.50euro on treats.
■Process foods generally follow a trend of being higher in fat, salt and/or sugar.
■The average person takes in 2 and a half times the required volume of salt, the results are higher rates of blood pressure, heart disease, diabetes and stroke bringing us on the brink of a health crisis.
■More than 6 out of 10 people living in this country are overweight or obese.
■Despite leaps forward in modern medical care this generation of children are likely to have a lower life expentancy than us.
■Treating obesity related diseases costs Ireland 4bn euro per year.
■Processed Pork...ham/sausages/rashers etc contribute to our high salt intake. Pumped full of water/brine, nitrates, ascorbate and dextrose these meats are far from their original state. The processing of these meats makes them 20%+ heavier.
■World Cancer research fund in London have found a correlation between bowel cancer and the amount of processed meats consumed. Labelling them a food to be avoided.
■Ham sandwiches make up the vast majority of childrens lunchboxes.
■Time to give a little more consideration to the journey our food makes to our plate. We are eating more imported food from countries with lower food regulation standards, foods we are quite capable of producing ourselves. Food imports have more than doubled in the last decade.
■Fast foods, sandwich bars, restaurants etc. use up to 90% imported chicken. Chicken producers here can't compete with imported prices which can be up to 1/5th cheaper. This importing can mean the meat is up to 7 days in transit, compared with just 48 hours for Irish chicken.
■Supermarkets are squeezing the local farmers and food producers out of the market, namely the 3 big players, Tesco, Dunnes and Supervalu.
■Food producers costs are on the rise, but the price supermarkets pay for this produce has dropped by 7%. Suppliers were reluctant to go on the record for fear of being de-listed by the supermarkets.
■95% of suppliers in an anonymous survey found that it was the suppliers/growers/producers that have to fund the supermarket discounts e.g. 2 for 1 etc., squeezing the producer even further. Funnily enough these supermarkets don't disclose their operating profits in Ireland. Despite this the two senior directors of Dunnes Stores Margaret Heffernan and Frank Dunne paid themselves dividends of 14million euros in late 2010 and also reported that their profits and turnover were up.
■Staggeringly, a company of top financial analysts called shore capital, using Tescos own figures, they reached the conclusion that Tesco is more profitable in Ireland than pretty much anywhere else in the World, 2nd only to South Korea.

Ham on Rye by Charles Bukowski
[CHECK OUT CHANNEL: AUDIOBOOK FOR PULP & SOUTH OF NO NORTH]
Written By: Charles Bukowski
Narrated By: Christian Baskous
Publisher: HarperCollins
PublishersDate: August 2013
Summary:
In what is widely hailed as the best of his many novels, Charles Bukowski details the long, lonely years of his own hardscrabble youth in the raw voice of alter ego Henry Chinaski. From a harrowingly cheerless childhood in Germany through acne-riddled high school years and his adolescent discoveries of alcohol, women, and the Los Angeles Public Library's collection of D. H. Lawrence, Ham on Rye offers a crude, brutal, and savagely funny portrait of an outcast's coming-of-age during the desperate days of the Great Depression.
Charles Bukowski is one of America's best-known contemporary writers of poetry and prose, and, many would claim, its most influential and imitated poet. He was born in Andernach, Germany, and raised in Los Angeles, where he lived for fifty years. He published his first story in 1944, when he was twenty-four, and began writing poetry at the age of thirty-five. He died in San Pedro, California, on March 9, 1994, at the age of seventy-three, shortly after completing his last novel, Pulp.

Ruskin's view and St Mary's Church from Devil's Bridge, Kirkby Lonsdale
Click here: for the full 15 minute walk video (including OS map and printable walk directions) - This easy stroll is a wonderful way to see Kirkby Lonsdale and its many delights, the only climb being the '86' radical steps just before you reach Ruskin's view. This short circular walk can be started from any part of the walk, and if you want to break off to enjoy Kirkby Lonsdale's many shops, narrow lanes, pubs, restaurants and tea rooms, you can. Kirkby Lonsdale is a historic market town, known by many for Devil's Bridge, dating back to around 1370 and Ruskin's view, which he described as the loveliest view in England and therefore the world. The scene has also been painted by Turner. Both these are visited on this short walk. The centre of Kirkby Lonsdale is a mix of elegant well preserved 18th-century buildings and stone cottages built around cobbled courtyards and narrow alleyways with names such as Salt Pie Lane, Horse Market and Jingling Lane.
