What is Shaoxing Wine, and why's it in almost every Chinese recipe?
Liaojiu, a.k.a. Shaoxing wine. I know I say that quite a bit in these recipes, so here, I wanted to explain myself a bit. We'll go over the varieties of Shaoxing wine (plus, the Shaoxing wine-like objects labeled such in English), a bit about the historical background, and why/how it's used when cooking.
Now note that neither of us are brewers or anything, so our knowledge of how to make this rice wine's rather... elementary. We'd be happy to answer any questions, but we probably won't make rice wine on this channel anytime soon. Maybe one day though?
The discussion'll be over on Reddit at the standard time, ~8am EST. In hindsight, I'm not sure how much more ground I'd be able to reasonably cover there, but I know that I was pretty fast and loose with Chinese-language terms here so I know that something written can often be helpful on that front.

Lu Xun Native Place | Shaoxing | China(绍兴 - 鲁镇)
Lu Xun Native Place is the name given to a large scenic area in his hometown, Shaoxing of Zhejiang Province, where he was born and grew up. Here, visitors can learn about his early life and trace the scenes he wrote about by visiting his ancestral house, former residence, pleasure ground in Baicao Garden, and his school Sanwei Study Room, etc.
Shaoxing
Shaoxing is a prefecture-level city on the southern shore of Hangzhou Bay in northeastern Zhejiang province, China. It was formerly known as Kuaiji and Shanyin and abbreviated in Chinese as 越 from the area's former inhabitants. Located on the south bank of the Qiantang River estuary, it borders Ningbo to the east, Taizhou to the southeast, Jinhua to the southwest, and Hangzhou to the west. The city itself is lined with numerous canals and waterways, giving it a classic Jiangnan style scenery though more mountainous than is typical for Jiangnan. At the 2010 census, its population was 4,912,339 inhabitants whom 1,914,683 lived in the built-up area of Hangzhou-Shaoxing, with 8,156,154 inhabitants.
Shaoxing has long been a hotbed of Chinese cultural activity, producing such luminary figures as Wang Xizhi, Zhou Enlai, Lu Xun, and Cai Yuanpei. It is widely known throughout China for Shaoxing wine, meigan cai, and stinky tofu, and was recently featured on A Bite of China. Its local variety of Chinese opera sung in the local dialect and known as Yue or Shaoxing opera is second in popularity only to Peking opera. In 2010, Shaoxing celebrated the 2500th anniversary of the founding of the city.

On the second day in Yongkang, we were given a tour around the school so that we knew where everything was. Later in the day, after the kids were finished with their classes, we were introduced to them as their foreign English teachers. We were to teach 5 classes containing 50-60 students each 6 days a week. Afterwards, we continued to explore the city.

Lenz M. Moser V represents the fifteenth generation of the famous Austrian Moser winemaker family. He is chief winemaker of the château and frequently travels to China to exchange know-how – focussing on vineyard management and winemaking. By spending the entire harvest period in Ningxia, the vintages since 2015 have been closely supervised by him in terms of growing, aging and blending. Following two intensive years of construction, Chateau Changyu Moser XV was officially opened on August 18th,
2013 near Yinchuan, the capital city of the province of Ningxia. Changyu has invested the equivalent of 70 millioneuros in the château’s construction, which houses an
impressive 1,500 barrique cellar as well as high-tech winemaking equipment including the bottling line. Every stage of wine production takes place at the château: viticulture, pressing, fermentation, maturation in the barrique cellar and bottling. There is also a museum in the château.

Watch: Triplets really don't want their dad to go to work
A heartwarming video has emerged from China of toddler triplets running after their dad's car as he leaves for work.
The footage, filmed in Shaoxing, Zhejiang Province on April 25, shows the three toddlers following their dad's white car as he winds them up by slowly driving away.
After teasing the triplets, he eventually stops and picks them all up.

Shanghai Braised Pork Belly | Chinese Braised Pork Belly Recipe
Hi guys! This is Lawrence and today I am going to share one of my favourite dish called Shanghai Braised Pork Belly!
Here's what you need:
1.5 kgs pork belly
150ml olive oil or vegetable oil
65g brown sugar
125ml Shaoxing wine
75ml regular soy sauce
45ml dark soy sauce
4pcsbay leaves
ginger
3 cloves garlic
4-5pcs star anise
10cups of water

Hainanese Chicken Rice is easily my all time favorite thing to cook. I went on a food tour to Singapore and Hainan (China) to taste the real original - now here is my updated recipe! 19 steps to tasty Hainan Chicken Rice perfection.

1 free range chicken ????
coarse salt for scrubbing
4 chunks of ginger, smashed
2 stalks green onions
per liter of water:
20g salt
1/2 tsp msg
2 cups thai jasmine long grain rice
2 Tbsp rendered chicken fat (add oil if not enough)
3 chunks of ginger, crushed
3 cloves of garlic, crushed
3 pandan leaves
2 cups + 4 Tbsp chicken stock
1 Tbsp chopped cilantro
1 Tbsp chopped scallions
1 tsp chopped garlic
1/2 cup chicken stock
1 tsp soy sauce
1 tsp sugar
5 red chilies, deseeded
1 clove garlic, minced
1 knob of ginger, minced
2 Tbsp chicken stock
1 tsp sugar
1 tsp vinegar
3 Tbsp tangerine juice
1 Tbsp sambal oelek
1 Tbsp grated ginger
1 Tbsp finely chopped scallions
1 tsp salt
1 tsp sugar
3-4 Tbsp sizzling hot oil
a few drops of sesame oil
