EP13 Seeing Taiwan: Shing Hwa Tea Shop, Chiang Kai-shek Memorial, Thermal Valley, Lungshan Temple
When I take out the eating clips I can't believe I manage to fit 5 days of sightseeing into a 9 minute video!
Taipei is definitely more fast paced than Kaohsiung and Tainan in the south. Maybe it's because we were going to tourist places but most of the people we encountered were not from Taiwan and many of the people were not as friendly. The cost of things in Taipei is also slightly higher than the south and everywhere we went was much busier.
The highlight was definitely the 興華名茶 Shing Hwa Tea Shop. The owner took so much time to explain how their teas are grown and the difference between high elevation and low elevation teas.
He explained what is used to grow the tea to make it organic and the differences between a small tea garden and a commercial business tea garden. We learnt so much about how to brew tea and the difference slow grown plants make to the flavour, method and effect of the resulting tea. He made us several teas so we could try tea from different elevations and different plants e.g. oolong, tie guan yin and showed us the traditional tea ceremony. There was no pressure to make a purchase and he was so passionate about his product.

HUI LIU TEA EXPERIENCE IN TAIPEI
Mrs.Sunny took me to the most amazing tea shop in Taipei, Hui Liu.
We tried the famous tea, Da Yu Ling:
This is the premier Taiwan high mountain wulong grown at a height of nearly 3000 meters picked this spring. There is not much that can be said about this incomparable tea except that the production is too little!
While there are some teas actually harvested from trees growing in remote isolated places, most of teas are grown under deliberately determined wild conditions: with abundant space ( unlike cramped commercial tea gardens where maximum harvest output is the aim), abundant sunshine and moisture, far from traveled roads, undomesticated ( unfertilized and allowed to grow without pruning or other manipulation); leaves are harvested once or at most, twice a year and at regular intervals, trees are allowed to go unpicked and rest for years at a time. Obviously, the emphasis is on producing unique, superior quality teas whose taste can hardly be compared with teas from trees grown by what have become “conventional” methods. Not only do these teas excel in taste and fragrance but also in qi and beneficial effects on health. It should be recalled after all, that tea was first recognized in ancient China as a medicine that remarkably improved vitality and mood. Of course, those ancient teas were from wild trees.
Processing
The leaves of these wild trees are harvested and processed by hand in traditional methods to produce teas that are appropriate to the inherent qualities of the leaves; particular taste styles in tea do have a relation to the place where they are grown. Experienced tea masters have been sought out for this work and to pass along their skills to a new generation. In some cases, old treatises have been researched to help make teas that have not been produced for many years. Some of the teas are quite traditional, the stuff of tea drinkers’ fond memories and tea lore, while others are innovative and contemporary. Still others are notable for their medicinal properties. The right leaves processed with the right skill make the right teas.
Notes on Tasting
Many people judge a tea by the taste, fragrance etc. from the first infusion. To really know the qualities of a tea takes more time than that. Wild tea reveals itself differently, too. If you have tried wild fruit or vegetables, you know they are different from their domesticated cousins; wild foods have a much broader range of flavors. It’s a different experience. In tasting any tea one must be attentive to the sensations but especially so with wild tea as the range of flavor is different. Each time the tea is brewed, you will notice different flavors and changes, and these teas can be steeped many times (by gong fu method).There are many teas that can be brewed with boiling water but if one uses 90 degree water ( except for green teas which are best with 80-90 degree) and allow the leaves time to open one will get a broader range of tastes with each brew. And you can experience the depth and purity of wild tea in a way that might surprise some: after you think the tea is finished and has no more taste, steep it once more and leave it a few hours, half a day or more and then drink it. You’ll be impressed by its sweet flavor. If stored carefully, these teas’ qualities will mature and deepen with time.

Bak kut teh, which literally translates to meat bone tea, is a common dish in Singapore and Malaysia that includes pork bones which are boiled in a herbal medley of spices. Although one may think that tea is somehow used for the cooking of the meat, from what I read, the recipe actually doesn’t include any tea, but it got its name because you’re supposed to drink strong tea along with eating the meat to clean the grease. There are quite a few restaurants to eat bak kut teh in Singapore, but due to my location I decided to go to a place called Outram Park Yahua Rou Gu Cha, located near the harbor, but facing the road. It’s a pretty nice environment, lots of space and easy to get to. The service was friendly, and although some have told me the prices are pretty high even for Singapore, we decided to go for it.
Along with the pork ribs soup, we also got some pickled cured vegetables, some braised tofu, and another bowl of soup that was pork kidney soup. The pork kidney soup was quite good, very smooth and the pieces of kidney were nice and tender, with a bit of chewiness to them, but not overly so. What I really liked was the braised tofu, which was so juicy and filled with the braised Chinese sauce and spices.
Moving onto the actual bak kut teh, the broth was wonderfully flavorful with white pepper. It was a strong pepper flavor, but it was smooth and soothing at the same time. The pork meat was also very nice and tender. I really enjoyed the bak kut teh at Outram Park Yahua Rou Gu Cha in Singapore.

Yujacha (유자차) is also sometimes called Korean honey citron tea or yuzu tea. Yuja-cha is a great hot drink to enjoy in the wintertime. It is high in vitamin C and is often used in fighting a cold. It is also a popular hangover remedy.

줄거리 : 여느 날처럼 다방을 전전하던 박 노인은 폐달을 손보지 않은 자전거를 끌고 나갔다가 길바닥에서 사고로 사망한다. 박씨가 죽자 영화감독인 큰아들 찬우, 카페를 경영하는 골칫덩어리 딸 미선은 서둘러 고향으로 돌아오고 미국에 사는 셋째아들 찬세도 귀국한다. 적막한 시골엔 장례식 준비하느라 갑자기 분주해지면서, 초상집은 동네 사람들이 모여들며 소식을 묻고 옛 사람을 만나는 만남의 장이 된다. 자식들은 부친의 죽음을 애석해 하며 대성통곡하는데, 그 중에서도 부모 속을 썩이던 미선이 제일 가슴 아파하며 울음을 그치지 않는다. 상주인 찬우는 자기의 직업대로 부친의 죽음을 한편의 파노라마로 인식하고, 찬세는 신앙에 따라 유교식 장례절차가 진행되는 가운데 찬송가를 소리 높여 부른다. 게다가 박노인의 여동생은 보험 세일을 하며 장례식은 점차 죽인 자보다 산자의 몫으로 남는다.

Park's wife keeps silent while other people make noise - talking or crying loudly. All the relatives are busy seeking their own interest. The younger son sings Christian songs while Buddhist prayers are held. Park's sister tries to sell as many insurance packages as possible to the relatives and friends who have come to mourn. Park's half-brother and young wife's behavior shocks everyone. The people who gather for the funeral of the dead seem to be too occupied to pay the least attention to the deceased.
