Shaoxing
Shaoxing is a prefecture-level city on the southern shore of Hangzhou Bay in northeastern Zhejiang province, China. It was formerly known as Kuaiji and Shanyin and abbreviated in Chinese as 越 from the area's former inhabitants. Located on the south bank of the Qiantang River estuary, it borders Ningbo to the east, Taizhou to the southeast, Jinhua to the southwest, and Hangzhou to the west. The city itself is lined with numerous canals and waterways, giving it a classic Jiangnan style scenery though more mountainous than is typical for Jiangnan. At the 2010 census, its population was 4,912,339 inhabitants whom 1,914,683 lived in the built-up area of Hangzhou-Shaoxing, with 8,156,154 inhabitants.
Shaoxing has long been a hotbed of Chinese cultural activity, producing such luminary figures as Wang Xizhi, Zhou Enlai, Lu Xun, and Cai Yuanpei. It is widely known throughout China for Shaoxing wine, meigan cai, and stinky tofu, and was recently featured on A Bite of China. Its local variety of Chinese opera sung in the local dialect and known as Yue or Shaoxing opera is second in popularity only to Peking opera. In 2010, Shaoxing celebrated the 2500th anniversary of the founding of the city.

RICE COOKER HACKS – Chinese Braised Pork Belly dong po rou Recipe [东坡肉]
Dong po pork (simplified Chinese: 东坡肉; pinyin: dōngpōròu) is a classic Hangzhou dish.The pork belly is cut thick, about 1.8 inches square, and consist equally of fat and lean meat. After a long time simmering, it is so tender that you can literally scoop it with a spoon.

**HISTORY**
Back to Song Dynasty, famed poet Su dong Po was working in Hangzhou, he finds out that Hangzhou people don't like to eat pork because it is too fat that they don’t know how to cook it. Su dong po likes to drink, so he decided to use wine instead of water to braise the pork. It was curious trying but turns out amazing. The wine balance out the fat of the pork belly, so no matter how fat the pork is, it doesn’t taste greasy. Then he shared it with local people which is the reason it becomes so famous now.
**INGREDIENTS**
- 1 pound [453grams] of pork belly
- 4 tbsp of light soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce:
- 2 cups of shao xing wine [Amazon Link:
- 2 tbsp of sugar
- 2 tbsp of red yeast rice (color option) [Amazon Link:
- some spring onion
- 10 slices of ginger
- 8 cloves of garlic
- some water
**HOW TO MAKE DONG PO ROU**
- Blanch the pork belly to remove the bad smell. Put it in cold water and bring it to a boil. Boil it for 2 or 3 minutes.
- Put it under running water to cool down the temperature.
- Cut it into 1.8 inches squares. Use a rope to tie it. This is totally optional. I do this just to keep the square shape and so it's easy to take out later. After simmering for a long time, the pork usually turns into a weird shape and it is so tender that you can barely pick up.
- You can use rice cooker/pressure cooker/regular pot/slow cooker to make this.
- Add a lot of spring onion. Just place it in, try to cover the whole bottom!
- Then put 8-10 slices of ginger and 8 cloves of garlic on top of it.
- Place your pork in, skin down. Then add the sugar and the soy sauce
- And 2 cups of shao xing wine. Don’t freak out with that amount of wine. This is like the soul of dong po rou. It gives the dish its signature aroma and rich taste. By the time it finishes, all the alcohol will evaporate, and you will be left with juicy and tender meat.
- Red yeast rice is the last ingredient. I like to use it as food coloring because it is natural. Soak it with 1/3 cup of water for 10 minutes. Press it down with a spoon you can feel that the rice is soft and you are able to crush it to get more color out of the rice. We use the liquid to add color. If you don’t have it, don’t worry, you can skip it or substitute with 1 tsp of dark soy sauce. It doesn’t affect the taste no matter what you use- just the color will be different. If you use dark soy sauce then the color will be dark brown, if you use Red yeast rice then it will be dark red which i think it looks better.
- Pour the color in and also add some water. We already added 2 cups of shao xing wine, so you don’t need a lot, just a little bit like that. You are free to add more water while it's simmering though. If you use a stovetop or another tool, the water will evaporate differently. You don’t want to burn it, so keep an eye on the liquid level.
- The whole technique behind this dish is to bring it to a boil and let it simmer for hours. As I said before, my rice cooker is really bad. It only has 2 settings - rice and congee. But even this one works. I just put it on the rice setting and let it cook for 2 hours. If you got a nice rice cooker which has fancy options like braising the pork. Pick that one. You can also do this in a regular pot, bring it to a boil and stew it on low heat for 2-3 hours. If you have a pressure cooker, you will only need 30 minutes... I am sure a slow cooker will also be good but I don’t have one so I can’t tell you how long it takes. You gotta figure that out. What ever you use please understand that the goal is to let it simmer until the meat is tender. Different tools require different cooking times. Use my video to help you know what it should look like.
- when it is done, there should be about a half cup of sauce left. Spoon out all the fat. Pour the sauce over the pork. You are done.

Fujian (福建; alternately romanized as Fukien) is a province on the southeast coast of mainland China. Fujian is bordered by Zhejiang to the north, Jiangxi to the west, Guangdong to the south, and the Taiwan Strait to the east. Its capital is Fuzhou, while its largest city by population is Xiamen, both located near the coast of the Taiwan Strait in the east of the province. The name Fujian came from the combination of Fuzhou and Jianzhou (present Nanping), a city in Fujian, during the Tang dynasty.
While its population is chiefly of Han origin, it is one of the most culturally and linguistically diverse provinces in China. Historically the dialects of the language group Min Chinese were most commonly spoken within the province, including the Hokkien dialects of southeastern Fujian. This is reflected in the abbreviation of the province's name (閩). Hakka Chinese is also spoken, by the Hakka people in Fujian. Min and Hakka Chinese are unintelligible with Mandarin Chinese. Due to emigration, a sizable amount of the ethnic Chinese populations of Taiwan, Singapore, Malaysia, Indonesia and Philippines speak Hokkien.
As a result of the Chinese Civil War, Historical Fujian is now divided between the People's Republic of China (PRC) and the Republic of China (ROC) based in Taiwan, and both territories are named the Fujian province in their respective administration divisions. The majority of the territory of historical Fujian (the mainland territory and a few islands) currently make up the Fujian province of the PRC. The Fujian province of the ROC is made up of the Matsu Islands, the Wuqiu Islands and the Kinmen Islands, the two latter archipelagos constituting Kinmen County.
With a population of 39 million, Fujian ranks 17th in population among Chinese provinces. Its GDP is CN¥ 3.58 trillion, ranking 10th in GDP. Along with its coastal neighbours Zhejiang and Guangdong, Fujian's GDP per capita is above the national average, at CN¥ 92,830. It has benefited from its geographical proximity with Taiwan.

Hangzhou (Mandarin: [xǎŋ.ʈʂóu] (listen); local dialect: /ɦɑŋ tseɪ/) formerly romanized as Hangchow, is the capital and most populous city of Zhejiang Province in East China. Hangzhou (Mandarin: [xǎŋ.ʈʂóu] (listen); local dialect: /ɦɑ̃.tse/), formerly romanized as Hangchow, is the capital and most populous city of Zhejiang Province in East China. It sits at the head of Hangzhou Bay, which separates Shanghai and Ningbo. Hangzhou grew to prominence as the southern terminus of the Grand Canal and has been one of the most renowned and prosperous cities in China for much of the last millennium. The city's West Lake, a UNESCO World Heritage site immediately west of the city, is among its best-known attractions. A study conducted by PwC and China Development Research Foundation saw Hangzhou ranked first among Chinese Cities of Opportunity. Hangzhou is also considered a World City with a Beta+ classification according to GaWC.Hangzhou is classified as a sub-provincial city and forms the core of the Hangzhou metropolitan area, the fourth-largest in China. During the 2010 Chinese census, the metropolitan area held 21.102 million people over an area of 34,585 km2 (13,353 sq mi). Hangzhou prefecture had a registered population of 9,018,000 in 2015.Hangzhou was repeatedly rated as the best commercial city in the mainland of China by Forbes. As the headquarters of Internet industry enterprises such as Alibaba, Hangzhou has strongly attracted people those work in Internet industry. Therefore, in the new growing cities that became popular in the 2010's, Hangzhou is one of the main representative cities. Since 2014, the rapid growth of population has caused the rapid growth of local housing prices.
In September 2015, Hangzhou was awarded the 2022 Asian Games. It will be the third city in China to host the Asian Games after Beijing 1990 and Guangzhou 2010. Hangzhou, an emerging technology hub and home to the e-commerce giant Alibaba, also hosted the eleventh G20 summit in 2016.

Fujian (福建; formerly romanised as Fukien or Hokkien), is a province on the southeast coast of mainland China. Fujian is bordered by Zhejiang to the north, Jiangxi to the west, Guangdong to the south, and the Taiwan Strait to the east. The name Fujian came from the combination of Fuzhou and Jianzhou (present Nanping), two cities in Fujian, during the Tang dynasty.
