Spirit of the West was founded in 2004 by Paul & Chelsea Rivers. Though the company was only formed at that time, it was born decades earlier, in the mind of Paul who is an avid horseman.
The name of the company has many meanings for Paul & Chelsea. While many agree that horses have a mostly unbreakable Spirit, Paul & Chelsea are devoted Christians who, likewise, have an unbreakable faith. Then there is the notion that horses have long been associated with the Old West but coincidentally, Paul was born and raised in West Bay, Grand Cayman where they reside and operate the business with their twin sons and little girl.

Cayman rum keeps with islands’ seafaring spirit
Like any great Caribbean tale, the story of Cayman Spirits Co. and its signature Seven Fathoms rum starts at sea.
While the company itself got its start in 2007, the origins of its rum can be traced back to Cayman’s seafaring days and the concept of “agitation” – in other words, rocking the rum barrel to hasten the aging process and stir up a sweet, earthy balance of flavors.
“It goes back to a time when they would make rum and send it across the ocean and people would actually pay more for rum that had crossed the ocean because they knew the barrel on the ship was rocking. So that was called ‘ocean-aged’ rum,” explains cofounder Walker Romanica during one of the daily tours of the operation’s George Town distillery.
Here landlubbers can taste Cayman’s own version of ocean-aged rum – along with Caymanian vodka, H.H. Hutchings’ liqueurs and on a lucky day, Distiller’s Special gin. (And at US$15 a head for a full tour and tasting, an afternoon at the distillery qualifies as quite a deal in Cayman.)
Cayman Spirits keeps with the “ocean-aged” tradition – without the headache of traversing the high seas – by keeping its rum and its barrels in Cayman waters – literally.

We started the day by taking a horseback ride on the beach with Spirit of the West. They picked us up at our hotel and drove us to a beautiful stretch of the coast that allowed horses. We then took an hour plus ride along the beach.
Our next activity was with Red Sail Sports on a catamaran that took us to Stingray City. Stingray City is a sandbar where many stingrays come daily to interact with people. It is truly amazing. They were not afraid of us at all and loved getting close to us.
We also had some time to do some snorkeling at a nearby reef. The catamaran sailed the majority of the way back to the dock which made for such a peaceful ride.
Not to be left out was dinner at Catch in Morgan's Harbor. The setting here was great. We were seated on the deck overlooking the harbor as the sun was setting. The food was incredible too!

I had a GoPro camera mounted to a GoPro chest strap mount and also another GoPro mounted to a GoPro head strap mount. Four top open water swim races in the beautiful Caribbean Sea have formed the West Indies Bluewater Swim Series for 2011. This new series will prove to be a great catalyst for both local and international athletes to come together in the beautifully warm and colorful oceans waters throughout the Caribbean region. These races span and reflect the diversity of the West Indian islands.
The series spans from the north with the Turks & Caicos (just below the Bahamas) to the west with the Cayman Islands to the south with Trinidad (just above Venezuela) and Nevis in the middle. The diversity and beauty of this new island series is unparalleled - and a welcomed precursor to the future.
As the popularity and participation in open water swim racing continues to grow worldwide, the West Indies Swim Series aims to grow with it. The series will undoubtedly foster the excitement, inclusiveness, and goodwill that are indigenous in the sport. Building upon this spirit, the West Indies Swim Series expects swimmers of all ages, abilities and backgrounds to take part - whether they swim to win or simply swim for fitness and their own personal goals. The four initial races in this series have attracted some of the best swimmers in the world, including several Olympians, as well as recreational, youth and adult swimmers who enjoy the special challenge and camaraderie of open water swimming.
Each race will continue to be run independently with its own unique character and distinctive attractions, but the West Indies Swim Series will jointly elevate and promote the region as a world class destination for competition and training.
On March 27th, the series kicks off with the StarMile2.5 Nevis-St. Kitts Cross Channel Swim, a rare and exciting inter-island channel swim. Nevis offers old-style Caribbean tranquility in tandem with one of the most dynamic environments in the region, a place where international elite athletes come to train and compete with outstanding, fun-loving local talent.
The next stop on the series is the June 18th Flowers Sea Swim, a very popular one-mile swim that takes swimmers through crystal-clear water and past tropical fish along majestic Seven-Mile Beach in the Cayman Islands. On this beautifully fast flat course, swimmers range from 8 to 80.
Novices going for their first big swim mix with Olympic medalists for a spirited, friendly race. This race offers what is easily the biggest random prize drawing anywhere.
On July 9th, the Turks & Caicos hosts the Race for the Conch Eco-SeaSwim in the spectacularly clear, calm, turquoise waters of Grace Bay on the island of Providenciales. World champions swim alongside visiting and local swimmers through beautiful marine life with plenty of camaraderie. This environmentally tuned event features 1 mile and 2.4 mile race, and a 100-meter children's swim.
The series culminates on September 25th with the Maracas Bay Open Water Classic in Trinidad. The race takes place at the base of a breathtaking rainforest sloping down from Trinidad's northern mountains for a most exotic setting. This long-running, welcoming race, where top ranked international swimmers compete against active and talented local swim clubs, features 2.5K and 5K distances and a 700-meter children's swim.
In the future, a West Indies Bluewater Championship Race is being created for 2012 that will draw qualifiers from the top swimmers from the West Indies Swim Series as well as provide an open race venue for all swimmers.
The four founding race organizations of the West Indies Swim Series recognize that great open water swim racing also have additional three goals.
(1) The West Indies Swim Series will support and encourage more West Indians to learn to swim while identifying and developing local talent for international competition. (2) The West Indies Swim Series will spotlight the need to protect the oceans and reefs that are critical to our sport and an essential part of our common heritage. (3) The West Indies Swim Series will be an advocate for helping those in greatest need in this special part of the world through the positive influence of sport.
The series website gives a hint of the beauty, camaraderie and excitement that the series will undoubtedly offer.
A great start in a great part of the world for absolutely gorgeous open water swimming - for top-level swimmers and swimmers of all ages and abilities.

Community comes out for 2019 Miss Cayman Islands Universe motorcade
The Miss Cayman Islands Universe 2019 contestants hit the road Saturday (10 August) for the pageant's annual motorcade around Grand Cayman.
All six contestants traversed from West Bay to East End making stops at various points.
Miss Cayman Islands Committee chairperson Derri Dacres-Lee said the motorcade was a way for the community to interact with the contestants.
I think it just builds the whole spirit of the pageant, it builds the hype just before. It’s a week off from the pageant, so it gets everyone involved, and everyone gets really excited along with the contestants. So it’s basically to build the spirit of the pageant and that community spirit in general, said Ms. Dacres-Lee.
The pageant will be held this Saturday (17 August) at the Ritz Carlton.
