Kumparička Farm, originally built in the 14th century, is located on the east coast of the Istrian peninsula in Croatia, between Mutvoran and Krnica. Ales and his family completely renovated it when they moved from Ljubljana 10 years ago, turning their lives upside down and learning cheese production from scratch. All year round their 250+ goats graze on 200 hectares of Istrian macchia, covered with over 180 different plants and aromatic herbs, the reason for the incredible flavour combinations of their goat cheeses. Kumparička is an ode to Istria, seamlessly blending traditional craftsmanship with innovation and a profound respect for nature.
