Radisson Grenada, Banana Bread Recipe & Dinner at Secret Harbour | Weekend In The Life VLOG!
This week's video is a weekend in the life vlog. I had a pretty packed weekend and decided to share it with you. I attended a session on Mediation at the Radisson Grenada Beach Resort, made my banana bread recipe for you guys, went to dinner at Secret Harbour Boutique Hotel and Marina and MORE! It was a weekend filled with fun, church, food, friends and of course, as always, a bit of Cashew.

Banana Bread Recipe (Makes 2 loaves of banana bread)
Ingredients:
* 6 medium bananas, mashed
* 2 1/2 cups pre-sifted, all-purpose flour
* 1 1/2 cup vegetable oil
* 1 teaspoon salt
* 1/2 cup raisins
* 1/4 cup sliced almonds
* 1 cup brown sugar
* 2 teaspoons (approx.) of vanilla essence
* 4 eggs
* 2 teaspoons baking soda
* 1 teaspoon (approx.) nutmeg
* 1 teaspoon (approx.) allspice
* 1 teaspoon (approx.) pumpkin pie spice
* rolled oats (to sprinkle on top) - optional
NB: Add spices based on your preference for spices. I love spices so I tend to be extra liberal with them.
Instructions
* Preheat oven to 180C (340F)
* Beat/whisk eggs in a bowl.
* Peel and mash bananas in a separate bowl.
* Add vegetable oil to mashed bananas.
* Mix until the oil and bananas are well blended then add eggs and mix some more. Set aside.
* In a separate bowl, combine flour, sugar, baking soda, salt, raisins, sliced almonds, and dry spices. Mix well.
* Gradually add the flour mixture to the banana mixture. Fold until all the ingredients are well incorporated. Try not to over mix.
* Add the vanilla essence and mix a bit more.
* Grease two loaf/bread pans and pour the mixture evenly into the two pans.
* Sprinkle oats on top of mixture - optional
* Bake for 50 minutes or until it passes the toothpick test
* Remove from the oven, let cool a bit then remove from pan and place on wire rack.
* When completely cooled, slice banana bread and enjoy!

Millions are about to be pumped into a mega hotel project in the northern parish of St. Patrick.
Its called the Levera Beach Resort Grenada, a high end, top notch development that will see the creation of jobs and a huge boost in the economy of not just the historic parish but the country on a whole.
Annette Moore was among many who witnessed the ground breaking ceremony recently where she got the scoop on this project and the views of many who are eagerly awaiting the start of construction.
JD's SkyShots Levera Beach Grenada
Situated at the north eastern corner of beautiful Grenada, Levera beach is well know as a local camping spot as well as a nesting ground for leatherback turtles. There was poor weather conditions during this flight, but seeing as it was taken on my last day there, I had to make due with the overcast clouds.
During the flight you'll see three islands off the shoreline: Sugar loaf, Green island and Sandy island. The first featured island is home to a beach house owned by a very fortunate businessman.

St. George Nightlife from the Sugarloaf
So I didn't realize how much traffic St. George, UT actually had at night until after lacing this together. Shot with Canon EOS t3i - 18-135mm lens (set at 28mm) - ISO 200 - f8.0 - 5 bulb exposure with a 2 second time interval. It took about an hour to shoot the entire video.
