Tony Roma's Baby Back Ribs Glorietta Ayala Center Makati Metro Manila Philippines. Tony Roma's is an American casual dining chain restaurant specializing in baby back ribs. The first location was established in January 1972 by Tony Roma in North Miami, Florida and today there are more than 200 branches in over 32 countries on six continents. Before opening his restaurant Tony Roma was the food and beverage specialist of the Playboy Club. The original concept was a burger and steak restaurant but one weekend his Chef David Smith grilled baby back ribs and was an instant hit and became the signature dish. Tony Roma's menu has further expanded to include seafood, pasta, chicken, and sandwiches.
In 1976, Clint Murchison, Jr., the owner of the Dallas Cowboys, was in Miami for Super Bowl X. Murchison purchased the majority stake in the restaurant, going on to become the driving force behind Tony Roma's international expansion. In 1979, the first international location opened in Tokyo, Japan and by 1983; there were 30 Tony Roma's restaurants around the world. The first Tony Roma’s in the Philippines opened in 1996 and we came to celebrate their 20th year anniversary and have some of the best ribs on the planet.
