In this video I visit the fantastic saturday farmers food market along the Saone river in central Lyon. Thi smarket has a great selection of meats, cheeses, vegetables, mushrooms and streetfood from a wide range of cuisines. I eat the omelette Norvegienne flambee at Brasserie Georges and have poulet de Bresse with morel mushroms at Daniel et Denise.

Lyon style frog legs recipe step by step | Cooking tutorial
If you've ever held a curiosity about how the French actually cook and eat frog legs, this is the video for you. This one of a kind cooking tutorial includes step by step instructions on how to prepare, cook and eat French style frog legs.
Ingredients:
10 fresh frog legs
A handful of chopped parsley
3 garlic cloves (finely chopped)
Salt and black pepper (for the seasoning)
50 grams of plain butter
3 tablespoons of sunflower or rapeseed oil
In Lyon (the gastronomic capital of France) frog legs are not a gimmick to pique the interest of tourists. They are actually an expensive delicacy and it's important to know how to prepare them properly to avoid disappointment.
In this recipe we cook frog legs Lyonnaise style; a simple but efficient recipe where the frog legs are seasoned, pan fried in butter and then tossed in a persillade (a mix of finely chopped garlic and parsley.). They are generally served on plate with a side of fresh lemon.

Artichokes with foie gas
For the artichokes
6 big artichokes
300 g of duck foie gas
100 g salad
100 g flour
2 lemon juice
1 tablespoon of sunflower oil
For the vinaigrette
5 cl sunflower oil
3 cl walnut oil
5 cl sherry vinegar
1 teaspoon grain mustard
Salt, Pepper
Half-mourning poultry supremes
For the poultry
6 supremes or breasts (with the skin)
60 g back truffles
2 carrots
2 leeks
12 small onions
1 bouquet garni
2 stalks celery
Coarse salt and pepper corns
For the vinaigrette
2 dl classical vinaigrette
18 gherkins
18 cherries in vinegar
For the sauce
50 g butter
50 g flour
1 dl cream
5 cl truffles’ juice
2 dl poultry stock
Oven baked apples
For the brioche
500 g flour
70 g sugar
25 g yeast
12 g salt
6 eggs
250 g butter
For the apples
6 Reinette apples
300 g sugar
1 l water
2 vanilla pods
5 star anise
3 cloves
Cinnamon powder
Butter
For the caramel sauce
125 g caster sugar
125 g cream
25 g nuts
20 g pine nuts
30 g almonds
8 dried apricots
25 g pistachios

In Lyon one still finds the simple restaurants - Bouchons - which once served the silk weavers their hearty breakfast. Olivier Robert belongs to the Francs-Māchons fraternity. The members support the upkeep of the silk weaver breakfast tradition by ensuring the Bouchons are still serving the meals in traditional style with dishes like Tablier de Sapeur - deep fried cow’s stomach.
