This is a shot of the volcano close to Tequila in Jalisco, Mexico. It's also called the Volcan de Tequila, or volcan de Tequila. In the middle of the volcano, you can see the hood, or the mount, the peak of what's left of this old volcano.

While the youth was enjoying the fermented and distilled blue agave, Jasmine and I took a drive up to the top of the Tequila Volcano crater to look at the source of the soil so suited for growing blue agave.
The rock spire in the video was the cap on the lava tube. Over time this long dormant volcano's lava cap has been pushed up. The last eruption is estimated to have been approximately 200,000 years ago.

Tequila is a town in Mexico’s western state of Jalisco. It’s known for its production of the famous spirit. Near the foot of the Tequila Volcano, the outskirts of town are dotted with fields of blue agave, the liquor’s main ingredient. The production process can be observed at several distilleries and haciendas. The Museo Nacional del Tequila and the Museo Los Abuelos feature exhibits on the history of the drink.

¡Viva Mexico! (Pt. 45) - Road Trip to Tequila (the City), Jalisco, Mexico!
April 20, 2019 - It's time for a Mexican road trip! Today, Sophie and I are heading one hour west of the metropolis and capital of Jalisco, Guadalajara to the sleepy little town of Tequila, also in Jalisco.
I bet you can't guess what they do in Tequila.
Of course, the journey there is half the fun. It was great getting out into the arid Mexican countryside; the blue agave plants that naturally grow in the volcanic soil here are everywhere. Now I can see why the city of Tequila is located here!
There are two ways to get to Tequila - the Libre (free) route, Highway 15, which we took; another option is to pay 127 Pesos and take the Cuota (toll) Highway 15D, provided you don't miss the turn off!
Be sure to leave extra time for the road-side and road-centred markets that spring up on the edge of town!

Tequila Fortaleza
The estate and distillery are located in the heartland of the appellation zone, on the slopes of the 9,560 feet tall extinct Volcán de Tequila, in the small town of Tequila. This is where Guillermo Sauza's family has made tequila for Five Generations, Cinco Generaciones. He produces authentic, artisan, handcrafted tequila in his family's 100 plus year old distillery, named La Fortaleza or Fortitude. The tequila is only made one way; and that is the way of his Tatarabuelo, or Great-Great-Great Grandfather, who started making Tequila in 1860.

Harvesting Agave with Mules, Tequila Tepozan, Don Cencho, Padilla
The Tequila Tepozan S.A. de C.V. distillery is located in the municipal of San Julian, in the Los Altos region of Jalisco. The agave is cultivated, harvested and distilled into tequila in what is truly a family operation.
The agave begins its life in the rich volcanic soil of Los Altos, where it will flourish for 7 or 8 years in to maturity, the point at which the sugar content is at its highest possible concentration. The mature agave is then harvested by a jimador (agave harvester).
Using a coa, a flat blade spade, the jimador removes all of the leaves exposing the heart or piña (pineapple) of the agave. The piñas are then loaded on to mules to be transported from the agave fields. No motor vehicle or internal combustion engines are used on the fields, this prevents from contaminating the soil and crop.
Once at the distillery the piñas are loaded into a brick oven where they are steam cooked under pressure to release the sweet sap or miel (honey). The piñas then pass through a grinder to extract the sap which is then mixed with water to form aguamiel (honey water).
The water used in the entire process is from a mineral hot spring 400 meters below the ground on premise at the distillery, this is particularly important in fermentation and final dilution.

Tequila is a distilled beverage made from the blue agave plant, primarily in the area surrounding
the city of Tequila 65 km (40 mi) northwest of Guadalajara, and in the Jaliscan Highlands (Los Altos de Jalisco) of the central western Mexican state of Jalisco. Like mezcal, tequila is also made from the agave plant and originates from the same regions of Mexico. The distinction is that tequila is made only from blue agave and they are prepared in different ways. Tequila is commonly served neat in Mexico and as a shot with salt and lime around the world.
The red volcanic soils in the region of Tequila is well suited to growing the blue agave, and more than 300 million of the plants are harvested there each year.[1] Agave grows differently depending on the region. Blue agaves grown in the highlands Los Altos region are larger and sweeter in aroma and taste. Agaves harvested in the lowlands have a more herbaceous fragrance and flavor.[2]
Mexican laws state that tequila can only be produced in the state of Jalisco and limited municipalities in the states of Guanajuato, Michoacán, Nayarit, and Tamaulipas.[3] Tequila is recognized as a Mexican designation of origin product in more than 40 countries.[4] It is protected through NAFTA in Canada and the United States,[5] through bilateral agreements with individual countries such as Japan and Israel,[5] and has been a protected designation of origin product in the European Union since 1997.[5] In 2018, the Mexican government approved a proposal to celebrate the third Saturday of March as National Tequila Day.[6]
Tequila can be between 35- and 55-percent alcohol content (70 and 110 U.S. proof).[7] It must contain at least 40-percent alcohol (80 U.S. proof) to be sold in the United States.[8]
