[Wikipedia] Smithfield (Rosedale, Virginia)
Smithfield is a historic home and farm and national historic district located near Rosedale in Russell County, Virginia, United States. The district encompasses 13 contributing buildings and 5 contributing sites. The main house dates to the 1850s, and is a two-story, five-bay, central passage plan, brick Greek Revival style dwelling. Among the other buildings in the district are a brick spring house, a brick acetylene house, frame meat house, a former school house, frame horse barn, frame sheep barn, cow barn, a milking parlor, and a shop. The contributing sites include an earlier house seat, three cemeteries, and the site of a slave house.
It was listed on the National Register of Historic Places in 1994.

Smithfield Foods, Inc., is a meat-processing company and wholly owned subsidiary of WH Group of China. Founded in 1936 as the Smithfield Packing Company in Smithfield, Virginia, by Joseph W. Luter and his son, the company is the largest pig and pork producer in the world. In addition to owning over 500 farms in the United States, Smithfield contracts with another 2,000 independent farms around the country to grow Smithfield's pigs. Outside the U.S., the company has facilities in Mexico, Poland, Romania, Germany and the UK. Globally the company employed 50,200 in 2016 and reported an annual revenue of $14 billion. Its 973,000-square-foot meat-processing plant in Tar Heel, North Carolina, was reported in 2000 to be the world's largest, processing 32,000 pigs a day.Then known as Shuanghui Group, WH Group purchased Smithfield Foods in 2013 for $4.72 billion, more than its market value. It was the largest Chinese acquisition of an American company to date. The acquisition of Smithfield's 146,000 acres of land made WH Group, headquartered in Luohe, Henan province, one of the largest overseas leasers of American farmland.Smithfield Foods began its growth in 1981 with the purchase of Gwaltney of Smithfield, followed by the acquisition of nearly 40 companies between then and 2008, including Eckrich; Farmland Foods of Kansas; John Morrell; Murphy Family Farms of North Carolina; Circle Four Farms of Utah; and Premium Standard Farms. DO YOU REMEMBER that good old southern cooking? When I was growing up, my granny was my favorite cook. My mama was an amazing cook as well, but there was just something about being in granny’s kitchen. We all gathered around the table when we went to her house. She had a kitchen that was about 12x12 . She had a round table in the center. There was never a time when there wasn't something on that round table that we could eat. She made a pan of biscuits every day and a pawn of cornbread. She grew almost everything she made in the garden and canned many of her foods. She had a smoke house and that is where she stored her sweet potatoes and her russet potatoes. Granddaddy took the corn (field corn) that they grew to the feed mill every year so she had her own homemade cornmeal. If you want to learn how to cook like this woman, all you have to do is watch my southern cooking tutorials and you will become one of the best Southern cooks around. Your family and friends will love everything you make, and you will have more company and more company means more love in your home and heart! Thank you so much for being a part of this dream of mine. I want everyone to enjoy the same flavors and types of food that we (our family) grew up eating.

Hey yall!, it’s Tammy with Collard Valley Cooks! I am a southern girl born in raised in Collard Valley in Polk County Georgia. My entire (Benefield) family had around 150 acres and we mostly raised cattle. We raised our own corn for feed so it was field corn. We also raised our own hogs for sausage and bacon, and of course our own beef. We fed our bulls feed before sending them to the butcher so the meat would be delicious. Not sure why everyone wants grass fed beef and free-range chickens. They really do not taste as good as those fed with feed. We had a large family and when I was young all of daddy’s brothers and sisters lived in the valley around his parents. It was a great place to grow up with lots of things to see and do all around. Country people like us love the smell, beauty and fruit of the land. Daddy coon hunted for fun, and we watched our tv together in the living room at night while mama watched her soap operas during the day. We went to church on Sunday, school during the week, the grocery store on Friday’s and that was our life. No vacations, no camping, just plain old southern country people

Pork “Ham” Processed
I TYPICALL BUY A BUTT PORTION INSTEAD OF SHANK FOR MORE MEAT.
UNWRAP HAM
DISCARD SEASONING PACKET
DISCARD GLAZING PACKET (IF AVAILABLE)
½ TSP. LIQUID SMOKE (OPTIONAL)
Spray roasting pan with cooking spray for easy clean up. Use heavy and wide grade aluminum foil. Cut pieces long enough to extend 3’ past roasting pan on each side. Place ham in center of roasting pan on top of foil. Pull foil up and around ham and fold top over. A GOOD HAM NEEDS NO SEASONING! NO SALT OR NOTHING! CURED HAMS ARE SEASONED DURING PROCESSING.
Bake covered 30 minutes per pound at 300 degrees. Take out of oven. After it cools carve. Save drippings and pour over sliced ham for extra moisture and flavor.
