X-Plated S01E01 Brushfire Smoke BBQ / Oast House Brewery
Sichuan Hot Chicken is all the rage in this southern barbecue style smoke house brought to you by Oast House Brewery. After a few years in the making, local chef John Vetere and Brushfire Smoke BBQ is bringing its unique style of backcountry cooking to Niagara-on-the-lake.
Get the Recipe:
SICHUAN HOT CHICKEN (Makes 6 Servings)
Ingredients:
- 6 Chicken thighs, boneless, skinless, large size.
- 100ml Chinese Black vineyard
- 4 tbsp Chinese chilli paste (doubanjiang)
- 4 tbsp Sambal
- 2 L Canola oil for frying
- 500 ml AP flour
- ChIcken spice blend:
- 2/3 tsp kosher salt
- 3 tsp white pepper
- 1 tsp black pepper
- 1/2 tsp dried thyme
- 1/2 tsp dried basil
- 1/3 dried oregano
- 1 tsp celery salt
- 1 tsp mustard powder
- 4 tsp paprika
- 2 tsp garlic powder
- 1 tsp ground ginger
- 4 pc Eggs
- 2” pc Ginger
- 1 bunch Green Onion
- 12 pc Garlic cloves
- 6 pc Star Anise
- 1 pc Cinnamon/Cassia Bark
- 4 tbsp Green Sichuan Peppercorns
- 4 tbsp Red Sichuan Peppercorns
- 10 pc Chinese red dried chili
- 100 ml Soy sauce
- 50 ml Sherry vinegar
- 250 ml Mayonnaise
- 1 tbsp Sesame oil
- 3 tbsp Sesame seeds, white
- 6-8 pc Radish, cello red
- 3 pc Shallots
- 250 ml Rice wine vinegar
- 150 ml Sugar
- To season, Kosher salt
- 100 ml White or Blond miso paste
Utensils:
- 1 x Dutch oven for frying - approx 7-8L capacity
- 1 x Vita mix
- 3 x sauce pots - approx 3-4L capacity
- 4 x mixing bowls - medium to large size
- 1 x whisk
- 2 x wooden spoons
- 1 x spatula
- 1 x slotted spoon
- 2 x metal tongs
- 1 x set of measuring cups
- 1 x set of measuring spoons
- 1 x mandolin
- 2 x sheet tray/baking tray
- 1 x wire resting rack
- 1 x squeeze bottle, 12 oz
Directions:
1) Take chicken thighs and marinate in Chinese black vinegar, doubanjiang and sambal. Set aside.
2) Make pickling liquid using rice wine vinegar, sugar, salt and water. Bring to boil and set aside.
3) Meanwhile, slice radish and shallots thin on a mandolin. Pour boiling pickling liquid overtop and drizzle with sesame oil. Allow to cool to room temp before refrigerating. Next, slice scallions very thin into a container, grate ginger using a micro plane and mix with canola oil, soy sauce, sherry vinegar and sesame oil. Set aside to marinate.
Put mayo into a bowl, add in miso paste and whisk vigorously until incorporated. Drizzle in
black vinegar to adjust acidity. Transfer to squeeze bottle. Set up a breading station with the seasoned flour and the eggs. Dip marinated chicken thigh into the flour, then egg, then flour again. Set aside.
4) In a dry frying pan, toast sesame seeds until fragrant, set aside to cool.
5) In a sauce pot, fill half way up with canola oil, turn on medium heat. Add in garlic, green
onions and ginger. Cook until tender. Add in spices - Sichuan peppercorns, cassia bark, star anise. After fragrant whisk in doubanjiang and turn off heat to infuse.
6) After 25 minutes, remove the star anise and cassia bark, blend mixture in vita mix until
smooth. Keep warm in pot.
7) Preheat fryer oil to 350F. Working in batches, fry chicken thigh in the hot oil until very crispy and cooked through or internal temp reaches 160F. Transfer to rack and dunk fried chicken in warm Sichuan oil, be sure to coat it well. Transfer to resting rack and season well.
8) Assemble the dish with the fried chicken on the bottom, squeeze dots of aioli onto the
chicken, followed by ginger scallion sauce, radish and shallot pickle and then top with toasted sesame seeds.

Taking Province Brands of Canada Public
Province Brands of Canada CEO Dooma Wendschuh discusses the company's acquisition of a capital pool corporation in Colson Capital Corp and fund raising efforts with the goal of becoming a publicly traded entity in the near future. Province Brands also recently signed a strategic alliance with LP applicant Element GP to provide them with premium cannabis oils. This agreement allows Province Brands to not only produce alcoholic beers brewed from the cannabis plant but also non-alcoholic beers infused with marijuana oil. The company's going public strategy is likely to unfold before the end of this calendar year with their marijuana beverages becoming available less than one year after the first sale of recreational marijuana.

So we decided to travel to Nosy Manga Be and Masoala National Park, for a total of 5 days. Long story short, we dined with a wild lemur, saw fantastic nature and experienced lemurs in their natural habitat!

A Visit to Lock Street Brewing Co. in Port Dalhousie, Ontario

In this video we visit a new craft brewery in the small town of Port Dalhousie, just outside of St. Catharines, Ontario. Lock Street is gearing up for an October 2016 opening. They are currently brewing their beer offsite, but by the time they open, will be making them on the premises.
Their story once again demonstrates the diversity of background, and business models that these small businesses are using.
The site of Lock Street is where myself, and all my friends, including Paul Wing, the camera man used to drink in our youth. At that time it was the Lions Hotel. Before that it was the Wellington Hotel, one of the oldest establishments in Upper Canada. Wolfgang and his partner are lovingly restoring the building to it's original look. They are forming the base for a real renaissance in the Port Dalhousie business section, and really deserve to be supported,....Port needs it!

Oliver Hazard Perry
Oliver Hazard Perry was an American naval commander, born in South Kingstown, Rhode Island. He was the son of USN Captain Christopher Raymond Perry and Sarah Wallace Alexander, and the older brother of Commodore Matthew Calbraith Perry.
Perry served in the West Indies during the Quasi War with France, the Mediterranean during the Barbary Wars, in the Caribbean fighting piracy and the slave trade, but is most noted for his heroic role in the War of 1812 during the Battle of Lake Erie. During the War of 1812 against Britain, Perry supervised the building of a fleet at Erie, Pennsylvania, at the age of 27. He earned the title Hero of Lake Erie for leading American forces in a decisive naval victory at the Battle of Lake Erie, receiving a Congressional Gold Medal and the Thanks of Congress. His leadership materially aided the successful outcomes of all nine Lake Erie military campaign victories, and the fleet victory was a turning point in the battle for the west in the War of 1812. He is remembered for the words on his battle flag, Don't Give Up the Ship and his message to General William Henry Harrison which reads in part, We have met the enemy and they are ours; ...

Historian John Gurda explores how the Milwaukee River and Lake Michigan spurred Milwaukee's growth. The settlers used rivers and Lake Michigan to transport grain, lumber, leather and beer, but water was just as important for play as it was for work. Gurda explains how the Milwaukee River became a destination for fun. Learn how the lower Milwaukee River was eventually reduced to an open sewer by 1900, with Lake Michigan suffering similar indignities. Only in recent decades have the currents turned for the better. From the Milwaukee River Greenway to the reborn Menomonee Valley to the cultural theme park on our downtown lakefront, the patterns of the past are being reversed, providing cause for celebration as well as concern.
