와인에 잘 어울리는 슬로베니아 전통 음식을 준비했다. 송아지 고기가 주재료다. 와인으로 만든 육수를 넉넉히 붓는다. 특유의 잡내를 잡고 풍미를 더해준다. 숯불을 솥 아래 가득 깔았다. 푹 익혀야 제 맛이 나는 포드페카 요리다. “다 익는데 두 시간 걸려요” 특이한 것은 솥뚜껑이다. 벨 모양을 닮아 이 음식의 영어식 이름이 언더 더 벨로 불린다. 솥뚜껑 위에도 숯불을 올린다. 숯에 붙어있던 불이 완전히 꺼지면 고기가 다 익었다는 신호다. 입안에서 살살 녹을 정도로 부드럽다는 포드페카. 슬로베니아식 한 상이 차려졌다. 과연 그 맛은 어떨지 와인과 함께 먹어보기로 했다.

Santa Cruz de Tenerife aka Santa Cruz is the capital (jointly with Las Palmas), second-most populous city of the Autonomous Community of the Canary Islands.
The city is home to the Parliament of the Canary Islands, the Canarian Ministry of Presidency (shared in a 4-year term with Las Palmas de Gran Canaria), one half of the ministries and boards of the Canarian Government, (the other half being located in Gran Canaria), the Tenerife Provincial Courts and two courts of the Superior Court of Justice of the Canary Islands. There are also several facilities of the La Laguna University in Santa Cruz, including the Fine Arts School and the Naval Sciences Faculty. Its harbour is one of Spain's busiest; it comprises three different sectors. It is important for commercial and passenger traffic, as well as for being a major stopover for cruisers en route from Europe to the Caribbean.
The main landmarks of the city include the Auditorio de Tenerife (Auditorium of Tenerife), the Santa Cruz Towers and Church Counterfoil of the Concepcion. Santa Cruz de Tenerife hosts the first headquarters of the Center UNESCO in the Canaries. The city is a melting pot of diverse cultures that give it a cosmopolitan character. London is an exciting and pulsating metropolis of the new millennium, a melting pot of both people and culture and a fascinating city of diverse contrasts.
The City Of London contains the Tower, an historic landmark with a remarkable history. A mighty medieval fortress with 13 towers that throughout its 900 years, has served many functions and from the Middle Ages, it was a heavily fortified prison.
After the medieval St. Paul's Cathedral was destroyed by a devastating fire in 1666, Christopher Wren was ordered to re-build it with a dome. During the 36 years of its construction, its design was frequently altered until finally a wonderful masterpiece of church architecture was created.
The Monument is the city's tallest freestanding stone column and a reminder of the Great Fire of London that destroyed 80 percent of the city. In four days, more than 13,000 buildings were destroyed and the Monument was built on the site of the bakery in which the fire began.
Since the reign of Queen Victoria, Buckingham Palace has served as London's royal residence. A garden of mulberry trees once grew on the site of today's palace and the Duke of Buckingham subsequently added a simple brick built residence. Around 60 years later, George II purchased the site for his wife and George IV eventually began to design an extensive palace complex.
The highlight of any holiday in London must be the largest Ferris wheel in the world, the London Eye. Situated on the banks of the Thames, it rises high into the sky, opposite the Houses of Parliament and Big Ben.
The former centre of the largest empire in the world, London is still a city of superlatives that attracts millions of visitors each year. Exciting both day and night, London is a modern city with age old traditions and a long and colorful history.
Primitive Technology: Charcoal
I made a batch of charcoal using the mound method then stored it in baskets for later use. Charcoal is a fuel that burns hotter than the wood it's made from. This is because the initial energy consuming steps of combustion have taken place while making the charcoal driving off the volatile components of the wood (such as water and sap). The result is a nearly pure carbon fuel that burns hotter than wood without smoke and with less flame. Charcoal was primarily a metallurgical fuel in ancient times but was sometimes used for cooking too.
To make the charcoal the wood was broken up and stacked in to a mound with the largest pieces in the center and smaller sticks and leaves on the out side. The mound was coated in mud and a hole was left in the top while 8 smaller air holes were made around the base of the mound. A fire was kindled in the top of the mound using hot coals from the fire and the burning process began (the hot coals are being poured in the top using a small pot at 2:38).
The fire burned down the inside of the mound against the updraft. I reason that this is a better way to make charcoal as the rising flames have used up the oxygen and prevent the charcoal already made above them from burning while driving out even more volatiles .
I watched the air holes at the base of the mound and when the fire had burned right up to each opening I plugged them with mud. Once all 8 holes had be sealed the hole in the top of the mound was sealed with mud and the mound left to cool. From lighting the mound to closing up the holes the whole process took about 4 hours.
The next day when the mound was cool to the touch (this can take about 2 days sometimes) I opened the mound. The resulting charcoal was good quality. Some wood near the air entries had burned to ash though these were only small twigs and leaves. This is the reason small brush is put on the out side of the mound, to be burned preferentially to the larger wood on the inside thus protecting the large pieces of charcoal.
The charcoal that was made was hard and shiny. When broken open it had the ray structure of the wood preserved. When moving the hand through it the charcoal sounded tinny, like coral on a beach being moved by waves. These are signs of good quality. Bad charcoal is soft, breaks easily and has a muffled sound.
I intend to use the charcoal to produce hotter fires than I'm able to with wood alone. From my research, a natural draft furnace using wood (a kiln) can reach a maximum of 1400 c degrees whereas a natural draft furnace using charcoal can reach 1600 c degrees. Achieving high temperatures is necessary for changing material to obtain better technology (e.g. smelting ore into metal).

An eclectic crew for a journey in Italian folkloric traditions with the nomadic spirit of a
vagabond: a wind section that intertweaves with gypsy sounds made of darbuka and
accordion, all of it set to electronic rhythms based somewhere between folkstep and
echoes of dub.
It was 2011 when musician and radio DJ Mondo Cane, a.k.a. Mondokan, brought together an ensemble of daredevil musicians for an experiment that soon revealed itself to be a powerhouse of experimental sounds. Electronic beats fnd themselves arm-in-arm with traditional Italian melodies that themselves are fltered through the mesh of Eastern European contamination.
A return to the future going between the Balkans, Arab countries and Italian traditions.
This Pan-European bent is also found in lyrics sung in a mixture of French, English,
Spanish, German, Greek and Italian. An authentic linguistic melting-pot that speaks of
modernity and new frontiers.
In August 2012 they released online the impressive 'Kaligola EP' under Creative Commons license, which has been downloaded hundreds of times by music lovers from all over the five continents.
