Long Island is a densely populated island off the East Coast of the United States, beginning at New York Harbor approximately 0.35 miles (0.56 km) from Manhattan Island and extending eastward into the Atlantic Ocean. The island comprises four counties in the U.S. state of New York. The Butcher Shop Breaking Down Its Own Meat
By Aaron Nilsson/KTVL.comEAGLE POINT, Ore. -- The Butcher Shop in Eagle Point ready to start a new chapter and waited ten years to get up to federal standards.
It has new coolers and will start breaking down its own meat.
The butcher shop said this is one of the last full-service butcher shops in the state of Oregon.
One cooler will be specifically beef and the next cooler will be shared by swine and lamb.
Owner at The Butcher Shop in Eagle Point, Cameron Callahan, said breaking down meat on hanging rails is a lost art in the United States.
He said most meats now are cut by machines, pre-packaged and shipped across the country to be sold.
Some of the shop's employees are excited to start breaking down carcasses in house.
Especially our young guys. They really want to know how to do this. Once they can do this, they can go anywhere in the U.S. and work, Callahan said.
Callahan said the new system allows everyone to support local farmers who may not have enough animals to fill a truck to ship out of the state.
Callahan said it will keep local animals local, feeding people here at home.
It also could save two thousand dollars in shipping costs for a farmer with 20 animals.
We pay the farmer above what he would normally get if he shipped out of state from Oregon to California and so we're paying the farmer more money and getting the same profit, Callahan said.
Callahan said shipping costs and the impact on the environment will go down with the shop processing their own meat, from beginning to end.
That saves the consumer money because there isn't a middle man. It goes directly from farmer to processing facility where it's slaughtered and the carcass is broken down and goes into the counter for sale. It's minimal handling from the farmer to consumer, Callahan said.
The Butcher Shop tries to reduce its carbon footprint by using leftover meat scraps and bones from carcasses for their dog food program they've had for five years.
That means 100% of animals coming through The Butcher Shop are used.
The Butcher Shop said Crystal Creek Meats in Roseburg will begin slaughtering its first animals for The Butcher Shop starting June first.
