breeders are hoping to cash in on it. The South Africans are promoting the ostrich as the meat of the future--i.e., disease free and attractive to both farmers and consumers.

Prego Roll - Chef Melissa Mayo
Portuguese Prego Steak Rolls
Prego
• 6 x 1/2 inch thick fillet steaks
• 4 bay leaves
• 6 cloves of garlic finely chopped
• ½ bottle white wine
• 6 whole peppercorns
• 2 TBS peri-peri /sambal chili paste
• 1 tspn cumin
• Coarse salt
• ½ stick/ 4 TBS butter (can substitute with ½ cup olive oil)
• 6 Portuguese bread rolls
Salad
• 8 vine ripe tomatoes cut into wedges
• ½ red onion cut into slivers
• Handful of Italian Parsley chopped
• 1/3 cup olive oil
• 1/3 cup white vinegar
• Coarse salt and black pepper to taste
Place the steaks on a board and top with the chopped garlic cloves. Cover with some plastic wrap and hammer them with a mallet until they are about a ½ inch thick. Season with coarse salt.
In a bowl combine the white wine, bay leaves, peppercorns, peri-peri and cumin. Whisk together to combine. Add the steaks and marinade steaks for a few hours or overnight.
Remove the steaks from the refrigerator 2 hours before cooking to bring them to room temp.
Slice the tomato into wedges and the red onion into thin slivers. Place in a bowl and top with the olive oil, vinegar, salt, pepper and fresh Italian parsley. Toss to coat.
Heat a grill pan on high heat. Add ½ a stick of butter. Remove steaks from the marinade and pat them dry. Cook for 2-3 minutes a side depending on desired level of doneness. Set aside to rest
Add the remaining marinade to the grill pan and reduce by half so it forms a thick sauce. Add the steak back to the pan.
Dip one half of the roll in the sauce. Top with a steak and the bun and slice the sandwich in half. Serve alongside the salad

Relish EP 5: Nanhua’s canteen offers vegetarian Chinese dishes in South Africa
Nanhua Temple was built 50 kilometres from Pretoria in 1992. Together with religious beliefs, Buddhist meals were also introduced to South Africa. Nanhua's canteen with about 200 seats has since attracted South Africans who have an interest in vegetarian food. The food here includes both traditional Chinese noodles and soups, and some others generated by South African snacks like PAP. The temple has recruited many local students from poor regions, who learn the Chinese language, computer skills or, most obviously, Kung Fu.

South Africa's military, once seen as the iron fist of the apartheid regime, has had to march quickly to integrate black and white soldiers since the country's turn to democracy five years ago.
And now the South African National Defence Force is for the first time training men and women soldiers together.
The Army Gymnasium at Heidelberg.
It is one of two units that have integrated the training of male and female soldiers to supply the country's 16 army corps.
The other is Number Three Infantry Batallion which is the training depot of the South African army.
But there men and women are only trained to the level of rifleman for the Rapid Deployment Forces and part-time forces.

The 46-week course at Army Gymnasium includes ten weeks of basic training; a 13-week leadership development process; 12-weeks learning how to instruct new recruits; 13-weeks in which an individual soldier works towards becoming either a Non-Commissioned Officer or an Officer; and a final two weeks in which one is taught the basics of being a physical training instructor.

The Army Gymnasium's aim and function is to train leaders for the 16 official corps of the South African army and this is the first time that men and women will undergo this training at the same training institution, doing exactly the same training curriculum and
reaching the same objectives.

During the Leadership Development Programme a soldier is assessed as to whether they make the grade to become a cadet or a Non-Commissioned Officer.
This decision is made on the individual's profile as well as the needs of the army.
It is in this phase that the soldiers are expected to walk 80 kilometres in three days in full kit.
Women soldiers carry a slightly lighter kit.
But it is in this phase that the leadership and military skills of the soldiers are put to the test.
