Flavours of Heritage
This installation of edible art is inspired by my home and birthplace Singapore. Since gaining our independence in 1965, Singapore has grown to become one of the world's leading commercial hubs and a renowned food capital in her own right. A vibrant multi-racial society, Singapore is home to a collage of communities, cultures and religions, each with a rich heritage and history. In celebration of this fact, I drew on a popular nostalgic childhood favourite potong ice cream.
Using marshmallow and Cacao Barry white, milk and dark chocolate as mediums, I created 3,283 potong-inspired pieces in their iconic shape and carefully arranged them to create this edible art piece. The way the different colours meld together represents the melting pot of our diverse population, presenting a beautiful painting from far while a look close up reveals each individual potong stick.
Each ethnic group is symbolized by different colours and flavours: yellow for Indian (tandoori-flavoured), grey for Malay (curry-flavoured), pink and blue for Chinese (5-spice and ginger-flavoured), black and white for Eurasian (chocolate-flavoured) and white for Peranakan (coconut-flavoured).

I received news that I was selected out of 960 applicants to attend the inaugural MIT Beyond Food Bootcamp in Hsinchu, Taiwan from September 10-15, 2017. This is a crazy intensive entrepreneurial bootcamp by the world-class faculty at Massachusetts Institute of Technology and I was chosen after going through 3 rounds of the tough application process. The challenges surrounding food innovation are complex and I’ve been invited to be part of the solution. The main focus will be on key areas of sustainability, transparency and health. I was initially planning to decline but EVERYONE has been urging me to go for it, so I made the decision to accept the invitation. It’s an amazing opportunity that I feel extremely blessed to receive.
However, it’s also a huge financial investment. The tuition fee is USD6000, and I’ll also have to foot the travel and accommodation costs. Who am I?
I'm a Raw Vegan Chef & Educator in Malaysia. I've conducted sold-out raw food workshops in Singapore, Hong Kong, Thailand and Malaysia. I spread the word on raw vegan food through corporate demonstrations, corporate training, private consultation sessions, talks and collaborations.
I've written and contributed raw vegan recipes to publications such as PurelyB, Fireflyz, Calibre and Triple-M. I've also appeared on national radio including BFM: The Business Radio Station and Matic.FM. I have a regularly column in PurelyB.com called Raw With Chef Yin.
I'm also the host of Malaysia’s first raw vegan uncooking show: VELICIOUS with Raw Chef Yin.
I received my culinary education from the Matthew Kenney Culinary Academy, the world's first classically structured raw and plant-based culinary school, and am now on a quest to inspire and encourage everyone to make delicious, healthy and energising plant-based meals.

Kerala () is a state on the southwestern, Malabar Coast of India. It was formed on 1 November 1956, following passage of the States Reorganisation Act, by combining Malayalam-speaking regions. Spread over 38,863 km2 (15,005 sq mi), Kerala is the twenty second largest Indian state by area. It is bordered by Karnataka to the north and northeast, Tamil Nadu to the east and south, and the Lakshadweep Sea and Arabian Sea to the west. With 33,387,677 inhabitants as per the 2011 Census, Kerala is the thirteenth-largest Indian state by population. It is divided into 14 districts with the capital and largest city being Thiruvananthapuram. Malayalam is the most widely spoken language and is also the official language of the state.
The Chera Dynasty was the first prominent kingdom based in Kerala. The Ay kingdom in the deep south and the Ezhimala kingdom in the north formed the other kingdoms in the early years of the Common Era (CE or AD). The region had been a prominent spice exporter since 3000 BCE. The region's prominence in trade was noted in the works of Pliny as well as the Periplus around 100 CE. In the 15th century, the spice trade attracted Portuguese traders to Kerala, and paved the way for European colonisation of India. At the time of Indian independence movement in the early 20th century, there were two major princely states in Kerala-Travancore State and the Kingdom of Cochin. They united to form the state of Thiru-Kochi in 1949. The Malabar region, in the northern part of Kerala had been a part of the Madras province of British India, which later became a part of the Madras State post-independence. After the States Reorganisation Act, 1956, the modern-day state of Kerala was formed by merging the Malabar district of Madras State (excluding Gudalur taluk of Nilgiris district, Topslip, the Attappadi Forest east of Anakatti), the state of Thiru-Kochi (excluding four southern taluks of Kanyakumari district, Shenkottai and Tenkasi taluks), and the taluk of Kasaragod (now Kasaragod District) in South Canara (Tulunad) which was a part of Madras State.
The economy of Kerala is the 12th-largest state economy in India with ₹7.73 lakh crore (US$110 billion) in gross domestic product and a per capita GDP of ₹163,000 (US$2,300). Kerala has the lowest positive population growth rate in India, 3.44%; the highest Human Development Index (HDI), 0.712 in 2015; the highest literacy rate, 93.91% in the 2011 census; the highest life expectancy, 77 years; and the highest sex ratio, 1,084 women per 1,000 men. The state has witnessed significant emigration, especially to Arab states of the Persian Gulf during the Gulf Boom of the 1970s and early 1980s, and its economy depends significantly on remittances from a large Malayali expatriate community. Hinduism is practised by more than half of the population, followed by Islam and Christianity. The culture is a synthesis of Aryan, Dravidian, Arab, and European cultures, developed over millennia, under influences from other parts of India and abroad.
The production of pepper and natural rubber contributes significantly to the total national output. In the agricultural sector, coconut, tea, coffee, cashew and spices are important. The state's coastline extends for 595 kilometres (370 mi), and around 1.1 million people in the state are dependent on the fishery industry which contributes 3% to the state's income. The state has the highest media exposure in India with newspapers publishing in nine languages, mainly English and Malayalam. Kerala is one of the prominent tourist destinations of India, with backwaters, hill stations, beaches, Ayurvedic tourism and tropical greenery as its major attractions.

The Malayali people or Keralite people (also spelt Malayalee, Malayalam script: മലയാളി and കേരളീയർ) are a Dravidian ethnic group originating from the present-day state of Kerala, India. They are identified as native speakers of the Malayalam language, which is classified as part of the Dravidian family of languages. As they primarily live in Kerala, the word Keralite is used as an alternative to Malayali.
According to the Indian census of 2011, there are approximately 33 million Malayalis in Kerala, making up 96.7% of the total population of the state. Malayali minorities are also found in the neighboring state of Tamil Nadu, mainly in Kanyakumari district and also in other metropolitan areas of India. Over the course of the later half of the 20th century, significant Malayali communities have emerged in Persian Gulf countries, including the United Arab Emirates, Saudi Arabia, Oman, Qatar and Kuwait, and to a lesser extent, other developed nations with a primarily immigrant background such as the United States, United Kingdom, Australia, and Canada. As of 2013, there were an estimated 1.6 million ethnic Malayali expatriates worldwide. According to A. R. Raja Raja Varma, Malayalam was the name of the place, before it became the name of the language spoken by the people.

Kathmandu (; Nepali: काठमाडौं, Nepal Bhasa: य़े: Yei, Nepali pronunciation: [kaʈʰmaɳɖu]) is the capital and largest city of Nepal, with a population of around one million. Kathmandu is also the second largest metropolis in term of area after Pokhara in hilly region. Nepali and Nepal bhasha are the most spoken languages in the city.
Kathmandu, also known as City Of Temples with one of the oldest Pagoda known as Pashupatinath Temple, stands at an elevation of approximately 1,400 metres (4,600 feet) above sea level in the bowl-shaped Kathmandu Valley in central Nepal. The valley is historically termed as Nepal Mandala and has been the home of Nepali people, a cosmopolitan urban civilization in the Himalayas foothills. The city was the royal capital of the Kingdom of Nepal and hosts palaces, mansions and gardens of the Nepalese aristocracy. It has been home to the headquarters of the South Asian Association for Regional Cooperation (SAARC) since 1985. Today, it is the seat of government of the Nepalese republic established in 2008; and is part of the Province No. 3 in Nepalese administrative geography.
Kathmandu is and has been for many years the centre of Nepal's history, art, culture, and economy. It has a multiethnic population within a Hindu and Buddhist majority. It is also the home of the Newars. Religious and cultural festivities form a major part of the lives of people residing in Kathmandu.
Tourism is an important part of the economy; in 2013, Kathmandu was ranked third among the top ten upcoming travel destinations in the world by TripAdvisor, and ranked first in Asia. The city is the gateway to the Nepalese Himalayas, and home to seven world heritage sites: the Durbar Squares of Hanuman Dhoka, Patan and Bhaktapur; the Stupas of Swayambhunath and Baudhanath; and the temples of Pashupati and Changu Narayan. There are also seven casinos in the city.
Historic areas of Kathmandu were severely damaged by a 7.8 magnitude earthquake on 25 April 2015. Some of the buildings have been restored and some are in the process of reconstruction.
