Mark Anderson is the Culinary Director for Ireland at Gather & Gather and has long career in the food industry. Not content with just accepting the status quo, Mark has been looking at ways to incorporate a coaching mindset into food creation and working hard to develop a better always improving culture to his work and life. It was a pleasure to chat with him for this week’s episode.

•Where the passion for coaching and culture comes from?
•Starting out washing dishes at the age of 18 and working this way up from there
•Training as a Chef in DIT in Dublin thanks to his parent’s encouragement

•Picking up a lot of learnings from Gather & Gather’s customers in the business sector and applying these to the work in the kitchen
•The media portrayal of what it’s like working in a kitchen is very different to the reality – only ever experiencing a toxic environment in 2 kitchens over the years
•If the culture isn’t there, it’s very obvious – the restaurant isn’t busy!
•The positive impact reality TV shows focused on Cooking has had on the industry
•Always wanting to better himself
•The skillset that’s needed to run a kitchen is very broad – the cooking is the easy piece!
•How to create a better culture in the kitchen – tools and techniques
•Building a team dynamic in the kitchen are very similar to that on the football field
•Brining Innovation to work
•Dealing with Feedback to the Team – feedback is instant in the restaurant or kitchen
•Measuring success using food groups and having conversations that are real!
•Using visualization and key words on how you want a kitchen to look, sound, feel!
•Dealing with some of the big challenges & threats in the food industry
•Offering chefs the opportunity to carry on learning and growing. It’s one of the things I love best about this industry.
•Being inspired through his involvement in Arklow football club and learning so much through coaching that lead Mark to want to grow more
•Using the imaginary backpack with your skills and tools that can be useful in life
•Outside of the Day job running a speaking event!
•Stepping outside the comfortzone running with a full day Speaking event in Dublin with sport psychologists and fitness experts to share tips and approaches.

Fabulous Open Farm in Gorey, Co. Wexford in the South East of Ireland, great family day out and fun for all. Lots of different animals, fire engine ride, milking cow, maze, coffee shed - etc etc etc.

Kia Ora Mini Farm, Wexford
Kia Ora Mini farm is a family run open farm in Gorey, Co. Wexford which has now been in business since 1991.
We are a hands on open farm where children get to interact with, hold and feed animals of the usual farmyard variety and some more exotic such as llamas, emus, alpacas, pot bellied pigs, chinchillas. parrots, Scottish highland, Kerry cows etc.
Perhaps you saw us on Ear to the Ground a few years ago on RTE!
Our farm is a safe place for children to roam and learn about the animals and for adults to relax. We have an onsite coffee shop with mouth watering home-baking but picnics are also welcome and we have ample outdoor seating for those fine summer days.
Our farm is fully wheelchair accessible, has cement paths, toilets, baby changing facilities and we offer free car parking in our large car park. Some of our facilities include sandpits, a football pitch, a rough rider track and we have a convoy of ride on tractors.
The Easter Bunny pays a visit every Easter and we have had Santa Claus at Kia Ora Mini Farm every year since opening and his house is a magical place for children and adults to visit.
In 2008 we managed to buy 2 genuine fire engines from the local Co. Council and have had one of these customised to take our visitors on drives along a private road on the farm. The Fire Engine is fun for all the family with sing along tunes and one of the top things to do in Wexford.
We are currently growing a new forest around the farm and hope to continue to improve and grow for the future.
In 2013 we added our go-cart tracks and new genuine diggers.
We are between Gorey and Courtown and are pleased to announce that Gorey Cinema will be opening next year just up the road from us.
We also offer many animals and pets for sale which have been born on the farm such as rabbits, guinea pigs, chincillas, ducks, hens, lambs etc… Just give us a call to see what we have on offer. We also take in and rehome unwanted animals, providing we have the proper space of course.
Don’t forget your camera! Picnics are always welcome at Kia Ora Mini Farm even in our coffee shop.

Junk Kouture interview with Katie O’Brien
Bank of Ireland Junk Kouture in association with Repak, Ireland’s premier recycled fashion competition, returns for a fifth year bringing new faces to the judging panel who have plenty of experience in the fashion industry. Previous Junk Kouture prize winner Katie O’Brien will make her judging debut at the western regional final in Castlebar in March. Katie is a past pupil of Colaiste Iosaef, Limerick and is currently a second year student of English and Media in the Mary Immaculate College, Limerick.
